Monday 3/31/25 Ariel/Gus/Lauren

Manager Communication: Ariel, Gus and I discussed staffing going forward and a plan to find new talent behind the bar.-LB Minecraft Special is good to go, just need to figure out how much neon green dye to add per syrup batch, I ordered that from Amazon. -LB I think that having some time during the week of a normal happy hour promotion, in addition to the daily specials to generate new customers would be prudent. Even if it was just 3-5pm.  I will change the chalk board out front once I am sure of how to change the verbiage, currently I think it is vague enough to not really cause much kerfuffle. -LB The service ice well at Trees was draining super slow, assuming mold and detritus are clogging it up again. I plunged it and then poured Green Goblin enzymatic drain cleaner down. Should be okay but let's keep an eye. Manager Communication: Lobby bar has a pretty crowded mise en place now with the water spout, if MODs etc can retrieve packages ASAP, even projection so they have room for service.  Updated recipe for Unsweetened tea for our needs.  Lobby bar binder is up to date.  I brought ramekins and made squeeze bottles of ketchup and mayo for Trees lounge as requested by the bar team. I think this makes sense with Monday Burger Mayhem on the horizon. -LB I have put a sani bucket stashed under the sinks at Bar Prep as we would also be required to have one by the DOH. If it disappears from use, please remember to replace it. -LB There is a reasonable suggestion to move the creamsicle to one of the outside chambers of the frozen trios, so they are separate by color and also it might be over freezing from the placement between these two.  Maya noted she also likes to explain to people the two with booze as a set when customers ask. -LB Not sure what the plan is for sourcing ricott...

Manager Communication:   I noticed the Tang nor the pineapple molasses syrups on the theater spec sheet. I will try to get to that tomorrow. Had no time today outside of updating binders, (lobby bar needs to be checked) batching and running around. -LB Liquor lists in the POS is lacking a bunch of stuff. Ian is going to try and list them but it is an issue. I recommended we make a comprehensive price list to mitigate this so they can add open liquor if need be.  I didn't get a chance to start compiling the list but will make that top priority tomorrow. I got our cocktail kegs and lines all untangled and organized - will shoot to get the rest of the walk-in ship shape tomorrow as well. - IP Customer Comments:  Customers very unhappy that beer is not included on weekend happy hour line up. Manager Communication:  Decent dinner round, and the Marist event kept Trees decently busy with some stragglers hanging out until a little past eleven.  Trees had emptied out completely by the time midnight rolled around, which made for a smooth close. JH Customer Comments:  One customer was a little bummed that the happy hour changed. He was pretty adamant. Said he thinks we should have stated that the old happy hour was different and explained the price changes. I talked him down, gave him some passes & shots. Said we would work on it and it might come back. He seemed cool with it. GS BAR Staff Observations:  Bryan was kinda cranky today. He was pretty pissed the frozen machine wasn't totally ready to go, but when he saw that the fridges were 100% ready to go he changed his tune. Manager Communication: I spoke with Stewart when I got in about the Vitamix. He said that Esther can take it and use it when they need it but they should bring it back to us. Manager Communication: Lots of orders came in for new menu, so Jenn and I did our Tetris thing in the liquor room. Looks nice! I also unpacked the new wines in the walk-in so they're all ready to go. - IP BAR Staff Observations: It was a very sleepy Wednesday and we were able to run nice and lean. Got Patrick out of here around 6:45 and Matthew shortly thereafter. Manager Communication: Had a good bar meeting today and discussed our gameplan for the upcoming meeting. We're lookin' good! Got us ahead on some batch ingredients tonight when I had time, and will finish up whatever we still need between tomorrow and then Thursday after the meeting (I'm planning on sticking around to get some batching done after we wrap up).  I have heard some chatter about the Junglebird having a strange aftertaste - we added more molasses to the syrup, but I think it's the MSG water. Manager Communication: There was 3 empty kegs in the walk-in when I got in. Not a huge deal but can we take em out after changing them? Manager Communication:   I am ordering a flat dish rack to put in the dry storage at the end of Trees. This can be the storage for the roll-ups. I would also like to get us a small cabinet with draws or bookshelf  to put under the POS there. It is sort of unused space that we could store receipt paper, trivia stuff, garnish stuff. I am going to measure and with permission I can make this happen. Space behind that bar is precious and I am sick of finding random quart containers with stuff. -LB So apparently there are new door locks on the front doors. There are keys to lock the bottom things that prevent the door from opening. This information was not passed on to any bar managers and we open and close regularly. If anyone wants to keep us looped in on that protocol. Also the exit bank of doors are seemingly having difficulties when leaving. They feel magnetically locked and you can force yourself out but it feels awkward, if someone more attuned to those doors could investigat...

Manager Communication: Taking advantage of this slow morning and organized dry goods in liquor room. Filled out more docs for menu change.  I am having trouble moving things into folders on the drive, unsure if I need my permissions changed by an admin. -LB Customer Comments: A guest claimed that she was the only person who was asked to present her ticket in her row. It was LaShae's theater, so I know that is certainly not the case - regardless, the woman could not present her ticket, so LaShae asked her to check in with the box office to get it sorted. The woman claimed it caused her to miss some of the movie, and demanded "retribution" (I think she meant restitution, but I digress...). I let her know I would go ask the servers about the situation,  so I went to inquire and was informed that the guest was exceedingly rude and cursed out LaShae upon being asked to get her ticket printed out. I went back to let the woman know that kind of behavior will not be tolerated her...

Manager Communication: I grabbed a bottle of Blood OJ for NWB. - AB2 What do y'all think of putting hooks on the wall outside of bar prep? The wall where the fire hydrant is. I know I would probably put my stuff there with a heavier mod lineup and bartenders could also hang things there too. - AB2 Monica mentioned that she was learning to bartend at a different job and expressed wanting to bartend here if that can be done. Manager Communication: Great crew tonight. Kayla and Wyatt were on point. Jeremy held it down. James set the table. Customer Comments: One thing of note- there were two people who tried to see the new De Niro movie, but there were late (past our cutoff, but functionally, like it wasn't a huge deal) They asked Jeshua for tickets to Captain America, bought them, and then just walked into the movie anyway. The movie wasn't oversold and they weren't really ordering anything, they were just trying to watch the movie. Jeshua called me, told me what happened, the server was comfortable with them- I came in, showed them their tickets, just said, "hey we aren't going to kick you out this time, but this is breaking our policy, we have your CC, and if this happens again you won't be enjoying another movie, we will be asking you to leave" They didn't object. Manager Communication: We can use the lavender that is in the walk-in for garnish on the Snow White cocktails to get rid of it. I stuck around until 10 to make sure the bars were set before I got outta here. - IP Customer Comments: A bar regular (very nice guy, and apparently a chef -__-) wanted to pass along to the kitchen that he doesn't think the caramelized onions are caramelized enough. Manager Communication: Cleaned the frozen's/bubbler with the hose today I think I got it down to a science for those that want some advice read below... I get 2 12qt cambros and empty product in one then empty water in the other. After screwing in the hose, I put a c-fold around the nozzle of the sink so that nothing is gushing out and getting everywhere. It's a game changer. I put the pressure on high with the hose and everything comes right off. - AB2 I brought the bubbler from Tree's into the liquor room for now. Didn't look good behind the bar. - AB2 I updated the beer boards in Tree's and also added the stout and put "can" next to it. - AB2  There is a box of faucet/hose adapters in lobby bar, in case it needs to be found or stored somewhere.  I ordered dried rose buds since Mr. Kiwi did not  have single red roses, so in order to prepare for photoshoot I have this back up plan.-LB I am going to start holding bartenders longer despite its impact on the...

Manager Communication: Jenn got things up and running for a rocking St. Patrick's day brunch.  Jenn had the great idea of having Vlad do a deep clean while the walk-in is pretty empty. Markenson did a bang up job cleaning our walk-in/cold dance floor. -LB Italian-style tiki drinks is my new mission.-LB We need tall numbers for the Trees food orders. It is not reasonable to expect people to make them viewable. I am going to find a type I think work and with approval will purchase on our behalf. It is not the bartenders or runners faults when we are so busy. Also children running around does not help.  When bartenders list Mezz with the number on the ticket it gets cut off. So we can write M23.   I would like to invite everyone to an Irish funeral tomorrow for the bubbler at Trees Lounge tomorrow evening. I would like to put this guy out on the street, but I know that probably is not possible. It has to go. It needs to be replaced with larger tank for Trees. -LB  ...

Manager Communication: Made a memo sheet for the bartenders about the food runner notes. Will point this stuff out for the next few shifts everyone works. -LB A couple of times today the MOD office was propped open with no one around or in it. Manager Communication: Jenn did Inventory, I opened the building. Bubblers are back in Trees! GS Matthew mentioned something to me. Now that lead bartenders have no discount permissions, he was wondering if it makes sense for servers to come to the bar for discounts. He suggested that they should maybe go to a manager instead??? He also mentioned that we (the bar) tip out runners on all food right? Does it make sense for staff food when staff has to pick up their food in the kitchen? I don't know but I felt what he was saying on the tip out thing, especially when a lot of staff is ordering food. Lemme know what y'all think because this thought has never crossed my mind. - AB2 May I suggest, when putting away wine boxes from an order, can we put the reds (non-chilled (Pinot Noir/Sangiovese)) on the far right closest to the water bottles? Manager Communication: Gus I forwarded you the emailed invoice from To Rise last night, we received more oat milk from them that I did not order.-LB    Customer Comments: Theater 3: Last round. Jose was in the theater. The party at 105 got multiple noise complaints, one from Jose himself. The complaint was specific to noises they were making and inappropriate laughter. I disregarded it at first. Within five minutes Quetzie approached me and said there were major complaints from other guests that they were making "sex noises." Dwight was on his scheduled break, so I went into the theater to see what was going on. I heard someone making odd noises, but I noticed they were by themselves, so I quickly ruled out the complaint as being viable as they were solo. Then their partner came back. They immediately started talking. I asked them to be quiet. 10 minutes went by and I got yet another call on the walkie about them. So I walk in the theater, and the lady in the a pair comes at ...

Manager Communication: Come menu change I think we should have three margarita kegs in walk-in. -LB Had a great crowd at Trees before the T2 screening, with plenty of folks showing up early to grab a drink. JH BAR Staff Observations: Darius didn't know about Trees new functional system of putting a Grey Goose mat in front of the POS to keep customers from sitting there, so customers can get easier service. Manager Communication: I took a bottle of Worthy Park and a can of Coco Lopez for NWB. - AB2 Gus Gus swung by with Morlacco and Whiskey 17 is flying off the shelves again.-LB Monday Family meal on fire again. Thank you!!-LB I threw out two people drinking Nutcrackers on the mezzanine playing pool at 9:30pm. Still would love to have a more consistent solution to this liability. The camera feed somewhere would be helpful. I try to go up there as much as I can especially when I don't have security, but it is hard to have eyes all the time.  I know Gil threw around having the pool equipment behind the bar to be checked out, unsure if that is a viable solution or mitigation tactic for the drinking on mezz. -LB Steward and Jared confirmed we have the parts to two vitamix. Manager Communication: The soda gun at Trees Lounge is having issues with Diet Coke. It has moments of coming out with no syrup. There is syrup in the bag still so I think Coca cola should be contacted to have it checked out before it is a further issue. -LB Super busy Sunday chilled out for a chill evening. -LB Customer Comments: While helping out Josef in the lobby today I had an idea that might streamline his tendency to takeover the attention of the lobby bartender or floor manager (or anyone who stops to chat, haha). Since he usually calls in to get his tickets beforehand, we know when he's going to be coming in - since he ALWAYS asks what movies we have coming up, and if we will have x, y or z - maybe we can print out an easily readable piece of paper with the upcoming schedule (as we know it) that we can hand to him and tell him all the information is on the paper. Manager Communication: For a very busy day, everyone was super chill and on top of their games all around. - IP Customer Comments: A person seeing Cinema Paradiso did not get the email about it being DCP. They are understandably disappointed and want the credit, but they traveled over an hour to get here. I am giving them passes and they will stay for the film. -LB BAR Staff Observations: Bryan is a great brunch opener. He is highly organized and systematic.-LB  Matthew is one of the most personable Lobby bartenders, must be that Florida hospitality.-LB Chill vibes all day at Trees. Manager Communication:   Jenn & I arrived around the same time, she hit inventory, I opened the building. GS BAR Staff Observations: Had a couple busy theaters during dinner round but my crew crushed it. Bryan did his thing. Tevon killed batching then dipped. Gabrielle was great in Lobby. Manager Communication: I am having pretty severe arthritic flare ups at the moment and I was wondering if we could get a few anti-fatigue mats. One for the bar service well, this is really probably only necessary for weekends of major releases and events like the Oscars. And one for bar prep. Standing in one spot on these hard floors is a lot on top of the hard floors throughout the building.-LB  At our bar staff meeting we discussed the advantages of having a spot at Trees that had no stools so people can approach the bar and order easily. I think that we should put a black bar mat in front of the POS station and move stools to either side. Matthew suggests getting the chrome bars in addition to the mat.  If the mat is there it should deter people from pulling a stool there, but we all know skills of observation are limited.  I polled a lot of staff about moving the POS from the end of the bar to the cocktail station: the consensus is, it would be useful, but that cockta...

Manager Communication: We got the Collins glasses in and Ian broke out a case to restock Trees.-LB I fathom this is on the radar for menu change, but Trees Lounge needs more menus. Down to like 4.   The rain and wind definitely kept some folks at home tonight, but several of the smaller theaters sold fairly well in the second and third rounds.  Trees Lounge had a few groups hang out once their movies let out, but was pretty cleared out by 10:30pm. JH BAR Staff Observations:  Matthew and Maya were able to get out of here pretty early this evening, and Gabrielle and Jeshua closed each bar without issue.  Service was well paced throughout the night, and neither bar needed much support throughout the night. Manager Communication: If the porters could stack the glassware stacks lower and on more dollies, this would help some of the shorter members of bar team get glassware in the AM. It is just a precarious thing to be messing with a full rack of glass that's almost out of reach for some. Thank you. -LB Some post-Oscar ticket sale jumps, but mostly a fairly typical weeknight here at NPP. JH BAR Staff Observations:  Pretty mellow on the first floor, so Lydia got out of here partways through the second round.  Bryan, Darius, and Maya crushed Trivia at Trees, as expected, and Tevon was able to help them reset the floor so I could get Darius out of here. JH Sick Leave/ Call outs: Ian is sick today. -LB Special Events?  Trivia was back with a vengeance after its brief sabbatical, which brought a great crowd to Trees Lounge. Manager Communication: Jared got a bottle of Ten to One for the Monkey special. I do not have permissions here to do that transfer on Bevager. - AB2 I attempted to make this transfer on Bevager, transferring the bottle to foodager but I failed because I don't know how to do it.-LB Gus and Jenn, mind the cooling chai in the walk-in. It isn't covered because it needed to cool-LB Something to consider for nights we don't have security: have a sign that we put on the front doors alerting people that there is no re-entry after 11pm or whatever time we want. That way we can lock the automatic door settings just keeping out any extra problems that might arise. Just an idea. Manager Communication: Wyatt and I opened up the building to much fanfare and applause. Discussed prep for the Oscars party this evening. I took a minute to organize the liquor room shelves a little bit - made some space within our menagerie of random bottles to have a proper red wine shelf again. - IP Hot water not a consistent presence in the dish pit this evening. -LB  I brought a Fiddle leaf fig cutting to Trees Lounge.  I would like to get a more decorative pot for it at IKEA and grab possible a few taller trees to go in the corner. Manager Communication:  Pretty slow day. Plenty of manager support. Ian crafted an absolute banger of a drink, shout out to Ian. Today reminded me a lot... - GS When I got in Nat had just finished batching and we got her and Matthew out post-haste. Wyatt, Kayla, Jared, Gus and myself got everything situated for the dinner rush and then we were off to the races. Gab did a really great job taking charge behind the bar tonight - she delegated when we got busy at the pass, and she has a good handle on whose strengths are best utilized where.
