Saturdays 1/31/26 Lauren

Manager Communication:  It does feel like this Saturday was busy enough to warrant another bar body. We were really busy all night at Trees, daytime I heard was pretty busy as well. Jeshua had sold out theaters downstairs and was somewhat resistant to Jared's help again. I opted to go down to support since the three upstairs were resetting and still slammed front-facing.   We were likely slightly affected by not having Jenn around during the early pushes to help achieve max efficiency.  But happy to see lots of new faces in the lobby and upstairs, just want to give them a great experience.-LB Pretty busy throughout the day, throughout the building. New movies and celebrated movies from last year plus cold weather equals business is good.--LB BAR Staff Observations:  Bar team gave absolute hustle today. Manager Communication: Opened up the igloo building with Jenn, Jess and Gil. Matthew and Tevon got waylaid by the MTA for a bit, so I got them a head start on opening the bars while Jenn did inventory.  First round was slow, but dinner round numbers look a little better. - IP I heard Greg was not feeling well. Matthew said he can come in earlier tomorrow if we need him.- AB2 BAR Staff Observations: Tevon and Matt arrived a little late, but the stock from last night, courtesy of Natasha, made opening a total breeze.  Tevon started to faded a little by the time family meal came up, so I cut him and hopped behind the bar until Ariel and Natasha arrived. - IP Was able to get Matthew before 11. Manager Communication:  All bar binders are updated with the Hot Bananas recipe sheet, and build sheets for the bar are printed, cut, and ready to be posted tomorrow. JH Big shouts to Dion for helping me with the kegs in the walk-in. Tidied up the Walk-in -GS Customer Comments: Trees had a nice crowd. There was a group of Park Slope dads that hung out for like 3 hours. Was consistently busy throughout the night. -GS BAR Staff Observations: Natasha beasted Trees tonight.  Tevon wasn't feeling well so we sent him home probably around 6pm. I didn't think there would be much traffic outside of the 9-5 crowd, but boy was I wrong. I was behind the bar from like 7:30 to 11:30. Jeshua is such a pro as well, he did a lot of cleaning in Lobby bar. We could have used another bartender tonight, but it didn't get busy till I cut everyone so the bartender was me. Manager Communication: The coffee maker/hot water spigot at Trees has been fixed! It's fully operational and we will have updated SOP for coffee making very soon. - IP I texted Matthew this, but so everyone knows what is going on regarding the 14th st. gas leak: National Grid has a temporary fix on the gas leak that started on Saturday. They cannot permanently fix it until it warms up outside.  They may come and ask to do readings in our basement to check the concentration of gas that has gotten down there since there is some gas leaking that can't escape the ground. There was a hole drilled Saturday to allow this gas to vent out.  They do not think they will drill more holes, but make sure to contact Matthew if that is something they mention.-LB I ordered 2 cases of rocks glasses and 2 cases of pint glasses from Webstaurant since we have no back ups.-LB Keg tapping tutorial today. Manager Communication:   Solid open. Jared and me. Rocked it. -GS Easy night capped off with Possessor (agh I'm so jealous, that movie RIPS) and A Few Good Men (also a banger). Otherwise very quiet. - IP BAR Staff Observations:   Lydia was chatty today. I offered Greg a cut and he took it as he feels like he might be getting a cold. He didn't call out though. -GS Charlie beginning to take some noticeable ownership of the bar. Lydia was excellent with the last pop of people at Trees before they got outta here. Tevon was on cruise control in the lobby. Manager Communication: We don't need anything from Baldor yet, so if we need more blackberries we can grab from Mr. Kiwi.-LB Also I received an email from Baldor that they plan to service all areas tomorrow. just letting y'all know. - AB2 Slow chill snow day, lots of sleds coming and going.-LB Super busy Hank's screening and party. Manager Communication: Snow-my-goodness gracious! People still braved the elements to get their cinematic fix, and the team was ready. James and I got the building open with Greg and Natasha helming the bars. Carly came in shortly after doors and we were off.  The last round being finished aroun 10p combined with the level of sales allowed us to do some schedule reordering - we cut Jeshua's close, and moved Patrick and Charlie's in times both to 4p.  I was somehow logged in at Trees and my number started some checks. Did a checkout-LB I moved the high top tables to the mezzanine, a table to bar storage along with some chairs and bar stools for tomorrow's Hank's Saloon party. I may take away some stools still depending on how the weather looks tomorrow.-LB Chill vibes to end the night. Manager Communication:  Trees got absolutely slammed after the first round let out.  A young kid had a birthday party, and a bunch of other groups came through for some sips, bites, and protection from the wind.  Very very busy, but bar team absolutely handled the crowd like champs. JH Trees solidly busy through the evening.  I think as a function of safety, we can't let bartenders play music when they are restocking in the back, need to be able to hear people saying corner. PSP was poppin' - AB2 Customer Communication: Birthday People in Mezzanine were ended up being a lot tonight. They were rude and left the Mezz looking like a Chuck E. Cheese kids party. They made it impossible to clear glasses and plates from them and didn't have much respect for the team. I spent 30 minutes cleaning the mezzanine after they left. Not the biggest deal to me but I only say all this to let y'all know what to be aware of if this lady wants to book anything in the future. - AB2 BAR Staff Observations: We cut Natasha, but then found out Matthew Soler's saitica was at him so we cut him and brought back Natasha. Manager Communication:  Machines good to go. I also affixed the holder piece for the second ice bucket to the little nook between the breaker box and the door frame (basically, right behind where the dirty glass racks are stacked up at Trees). It's out of the way and now DOH compliant - and now Trees has an extra bucket handy to help expedite opening and ice restocking. - IP We received Sarene today so we are back up on Al's and Deviation Stout.   Very cold evening, with the special screening of Hamnet being the biggest pop of the night.  Not too many folks stayed afterwards for a drink, so it was a pretty sedate Trees Lounge once the third round was underway. Manager Communication:  Had a good bar manager meeting looking ahead.-LB Becca and Dion are a great team. They know Nitehawk so well and are great at anticipating the needs of the servers, other MOD's and especially guests. - IP Customer Comments: Had some pushy guests who tried to bully Charlie into giving them a free OJ for their shot of tequila - and he held his ground and was calm, kind and professional about it. Manager Communication:  Rebecca and I opened the building. I had to help Trees set up cause we had a tardy issue, not too late, but we got it done. Got a lot of batching done pre open as well. -GS Stayed busy until after the dinner round. Gab stuck around til 8ish, as the bar remained quite crowded til around 9. Manager Communication: I came in and plugged the compressor back into the wall, and it seemingly had no issue this morning. Gus popped by to drop off some Cinzano to make a backup Negroni keg, and we took a look. Other than one of the gauges on the side remaining in the red, the soda gun seems to be operating normally. - IP Coke called back, but did not leave any message. I was helping at Trees and missed it - and subsequently was unable to get a hold of them. - IP Coke called me when I was asleep. Hopefully we can touch base and they can send someone so we learn how to fix the issue faster or replace the part.-LB So I think we may be over-saturated at the moment with plastic pints in the racks. I know we have been expecting the team to unload racks, but there isn't that much glass in each rack. I broke out the last box of pint glasses. Manager Communication:  Jumping to the top so Ian knows right away. Soda system in lobby is a no-go.  We will leave the labeled store and pours at Trees in a bus tub for lobby's opening service. If there was a way to route sodas only to Trees on MB that would be amazing, but likely not possible.-LB The snow actually didn't deter too many guests today, and Trees was pretty busy once the first round movies began to let out.  Never got too crazy, so we were fine with staffing behind the bar, but it was a decently active snowy Saturday morning. JH A woman named Rebecca VanSambeck came out of the 3:55 Marty Supreme with a bloody lip.  She had a small shard of glass in her Gansett. I assume that it was a shard from the bottom of another pint glass that got chipped when stacking or pulling glass with water suction.  She was shaken but ultimately okay. Manager Communication:  Decent evening for a warm winter weeknight, with the running club keeping Trees bopping well into the third round. JH BAR Staff Observations: Everyone was here and well into the dinner round when I got in, and Tevon was out of here after assisting with breaks and restocks.  Matthew got out of here just as Trading Places was loading in, as the runner crowd had really mellowed out by then, and I figured Gabrielle and I could knock out that initial service push in twenty minutes (I was correct).  Routed lobby at nine to give Gabrielle some time to get into the pre-close groove before theaters began hitting last call, and both Jeshua and Gabrielle closed each bar without issue. Manager Communication:  Dumbwaiter is happening. I moved the bar cart to in front of the walk-in so the runners can turn with trays. Manager Communication: Coke came in today. The guy did tests and saw that there was no issue with the sodas. There was nothing out of the ordinary. He did put buttons on each spot missing a button on every gun. The soda can get foamy if the soda is passed its expiration date or if there is no ice in the well. He also stated that other guys are coming in to replace a couple guns and that's not what he was sent out for. - AB2 Tevon and Greg were scheduled for 12:45 and doors were at 2:05 today. I think this was a bit too early but by the time I noticed, it was too late to push them back those 15 minutes. My bad y'all. Manager Communication: Unremarkable open. Brunch shows were busy but manageable. Greg and Nat are super reliable. - IP We might need more menus at Trees lounge. It has been operating as a full fledge restaurant these last couple weekends.-LB I forgot to note last night I broke out 2 dozen pint glasses, this is the first real case we have broken out since we implemented the plastic pints. I would say this change has been a success on multiple fronts. We still have one back up case. -LB Vlad mentioned the trash bins are so full after this weekend. Busy metric for sure.-LB Golden globes chill, some people coming and going enjoying it being on.-LB Trees dishpit backed up and is not draining. Manager Communication: Thought it might be useful to add a section on here for drink specials running and mystery cocktails. So we are all up to date on any extra prep needs etc.  -LB Busy busy night at Trees. Diligence on all fronts for the bar team. -LB Coca cola did nothing to fix the foamy soda issues on the service pass at Trees lounge. They didn't replace the guns or look at the lobby guns which also need buttons. They are supposed to be coming back out to actually replace the soda guns at trees. I will be making a new service ticket. Much needed time is wasted standing at the foamy soda guns. -LB  At Jenn's suggestion, I asked Gab to give Nia a more thorough tutorial on pre-closing Trees as things wind down. They worked great together.  I do think if we want to start closing Trees earlier, no matter what that ends up looking like, having a pull out rope that says "Trees is now closed" would be very helpful for crowd control when Theater 1/2 etc get out late ni...

Manager Communication: Smooth open. Jared and I got things going with ease. Jenn did inventory. Easy start I think the lobby mid shift can be cut for tomorrow (I MADE NO CUTS)(based off of current numbers). I emailed as well for y'all to see. Busy night. Marty Supreme really has a good drinking crowd that stays rockin nonstop. - AB2 I took 1 Kota bottle and 3 Genziana bottles over for NWB. - AB2 Negroni kicked. I have keg cleaned in the liquor room. Manager Communication: Light morning  was able to get a lot of stuff done for Spoons. The team on tonight was great. Top to bottom. It wasn't a crazy busy night, but there were a lot of moving parts and everyone was locked in. Becca is already killing it. Manager Communication:  I spoke with Coke today and did a video call. We tried a fix, but they will need to send a technician out in the next 24-48 hours. They sound willing to replace both Trees guns that are issues, if I am not here please insist upon this and replacing the holster of the gun below the taps. It seems fairly isolated to the Trees soda tower, but while they are here they can double check the lobby system I suppose.-LB  Matthew said that we will likely launch the new dumbwaiter next Tuesday and we should all start getting in the practice of not using that table outside the liquor room. Also get used to slowing down, saying corner, knocking on the walk-in door. Manager Communication: Final holiday break day, and kiddos back to school tomorrow. Today was quite busy throughout the morning - Marty continues to crush. Last night put a big dent in a lot of our product, but we managed to make it through until the Baldor order came through around 4p. - IP  Ugh so sorry it was so late. Manager Communication: Jared is an honorary bar team member, crushing dishpit duties today. -LB It would be helpful for bar staff if we had a sign saying only popcorn is available to go. And it would be great for all employees if there was a sign asking people to step away from the doors when smoking. It blows right up the stairs.-LB Super busy day. Like non-stop. We blew through product. Lots of kegs to batch. Manager Communication: Building opened just fine. Had some hiccups, but handled.  I was unable to get to batching tonight. We will need Menta Whip and Dream Big (86'd) asap tomorrow. Sorry homies - AB2 Beer kegs were pretty buck city tonight. I reorganized all of them. Can we please try to keep on top of this? I understand we get busy and things happen but the connected Talea and Pilsner keg being one high in the back corner and having towers of mixed matched kegs in front of it is not fresh. If one of those had to be changed tonight, it would have required way more steps and been a lot more difficult than it needs to be. - AB2 I had another note on stocking tonight. Too often, the restock is falling exclusively to openers/closers. Where I think we (as a team) need to continue to push and heavily emphasize that mids should come in to stock, reset the bar, and get peeps through rushes and not just view it as coming in and working but understanding priorities.
