BAR Staff Observations: 
Lots of tinkering today. Separate email regarding that was sent. Nia came in with a great attitude today, ready to work! Trees was popping and TH1 & 2 were full for round 2, Nia worked service and worked on really locking in and cranking out drinks. I had Darius and Gabrielle support her cause I wanted her to get the reps. She did a great job.  -GS

Darius came in for a long shift- totally ready to go.

Darius is the best. Super reliable always. Lobby was verrrrry busy this evening, so I had to jump in to help with a 3/5/7 triple whammy - while I was away Charlie and Nia held down a very very busy Trees lounge just the two of them. They did a very good job considering the ticket sales were at a level that historically requires three bartenders at Trees. Nia is very deliberate at the cost of speed, and Charlie is very fast at the cost of accuracy. That said, service had virtually no hiccups. Where there is room for improvement is the awareness of secondary and tertiary tasks. With how busy we are, the lack grey racks at the end of the night has become a talking point - so I pulled Charlie and Nia aside after a very busy rush and gave them their due props for crushing a super busy drink rush - but also pointed out that they had not been keeping up with glassware distribution, and that is a major part of service. I stressed that it is an expectation that even when it's this crazy busy, the glassware is still getting circulated, the floor is getting bussed, restocks are happening. Just wanted to let them know I observed some moments of idleness behind the bar, and in my experience, there is seldom a time when you're behind the bar at Trees and there isn't something you could be doing. - IP

FOH Staff Observations:

I informed the servers (at least the ones I put in food orders for) that going forward the bar team will not be sending food orders to the kitchen without payment present. No more "I'll run to the locker room and grab my card" - you either pay then or open a tab to have it closed out later when an MOD is available. I also informed the bar team that was here today to enforce this rule. - IP

Prepped some Menta cream, lemonade and bloody mary mix.

Had to make more FroCo (good LORDT we are flyin through it) and emptied the last coke syrup box into the round cambro. I also strained the horchata. 
Tomorrow you'll have to make an OF keg, a Marg Keg, I Am the Fire, more Holy Mountain - and if the Avatar drink is stickin around some more cinnamon syrup. Otherwise, looks good. Sorry I couldn't get around to making some of the stuff - I was required at the bars for the majority of the evening. - IP
