Manager Communication:
Jared is an honorary bar team member, crushing dishpit duties today. -LB
It would be helpful for bar staff if we had a sign saying only popcorn is available to go. And it would be great for all employees if there was a sign asking people to step away from the doors when smoking. It blows right up the stairs.-LB
Super busy day. Like non-stop. We blew through product. Lots of kegs to batch. I have cleaned them all. 
Really excellent work from everyone in the building no one stopped moving all day.-LB
In  lieu of making cuts for tomorrow, keep shifts short if you can for the openers. Greg has a neck injury. Sales are pretty steady throughout and based on how much product we are going through, more hands versus less makes sense to me as of 11pm.-LB
Would like to discuss not leaving open juice, purees etc in liquor room lowboy, the walk-in should be the one stop spot for open products, if it isn't any of us, please reinforce this with the bar team. Also please leave empty cream squeeze bottles and lids on shelf or on lowboy. I would have made more, but only came across them when I was putting away stuff and found them with other lids. -LB

BAR Staff Observations: Holy wow. Natasha and Matthew cranked out the morning without a bar manager no problem.  Got Matthew out first since he is in pain. Charlie did a double bar restock and we were off. No idle hands in this department today.
Business picked way up for the Marty Surpreme in theater 1. They knocked it out of the park. We have some serious fast hands on our team. Shout out to Lydia, Gab and Charlie. Jeshua manning lobby like a champ as always. -LB
Lydia gets MVP today. Trees was slammed all day, no ebbs or flows just business all day long. Bar team was continually covering unloading glassware, restocking. All hands on deck all day. -LB
A plastic bag wrapped in masking tape in the Trees lowboy visible next to the eggs,  I asked what it was, it is Natasha's celsius. Looks horrid for guests, not to mention that staff items are not prohibited in these units. The next time I see a personal item in these lowboys I will write someone up. Natasha willfully disregards this and the phone use rule. It is not fair and difficult to enforce the rules when this is routine.-LB
 
FOH Staff Observations: Siete continues to be helpful in the dish pit. 

Sick Leave/ Call outs:
Jenn out sick. Greg out sick. I got here as early as the MTA would allow.-LB


86ed / counts on items: We are on our last keg of EVT, Frizzante and SB. I  put 125 count on the EVT, but cannot due the wines due to the carafe situation. -LB

Prep List: 2 Teas, Holy Mountain, half batch Arbol. 3 Lemonades, 2 Froco.  If we need more Froco before Monday, you can change a bag of coke when it is half empty and take the syrup to bar prep. -LB
Simple syrup, leaving our while it cools, it is fine. I made Dream Big and I am the fire, noticed I am the fire has no dilution.  Updated Fire count but not Dream big since it is absent.-LB




Ordering/Receiving/Shipping:
Baldor came, but without some items.  Chef Jared helped us get to the Sunday delivery minimum. US Foods coming Monday.-LB
Harney and Sons ordered with plain tea for iced tea and some peach tea for spring menu.-LB

Maintenance:
The OF line in the walk-in is going crazy clicking again. I soaked both connectors in hot water and the gas seemed to fill the tank. That gasket and cover are not automatically creating a seal. This has happened to me every time I have changed them in the recent months and I think taking a look further might be prudent. -LB
I soaked and scrubbed OF, Negroni and Tom Collins kegs outside with hot water and vinegar. Ordered a bunch of vinegar for deep cleaning.-LB
