Manager Communication:

Unremarkable open. Brunch shows were busy but manageable. Greg and Nat are super reliable. - IP

We might need more menus at Trees lounge. It has been operating as a full fledge restaurant these last couple weekends.-LB

I forgot to note last night I broke out 2 dozen pint glasses, this is the first real case we have broken out since we implemented the plastic pints. I would say this change has been a success on multiple fronts. We still have one back up case. -LB

Vlad mentioned the trash bins are so full after this weekend. Busy metric for sure.-LB

Golden globes chill, some people coming and going enjoying it being on.-LB

Trees dishpit backed up and is not draining. Sent MV an email and text. -LB

Customer Comments:

A dad and his young son were playing pool and the kid got excited with the pool cue and smashed the light above the pool table. I checked to see if there was any way to salvage it (loose wire, jostled connection, etc.) but no luck. Only half of the lights in the rectangle are out, so aside from looking janky, it still lights the pool table well enough to to play. Gonna pop that in the maintenance doc to be checked out ASAP. - IP

UPDATE: Pool table light should definitely be looked at, but when I tried the dimmer switch, the higher intensity end of the light is still operational - so if you have it at full bore, it will light up the damaged section. Still not ideal. - IP

BAR Staff Observations:

Nia texted me at 11:30, letting me know she was going to be fifteen minutes late for her 11:30 shift. I gave her a written warning. In my personal experience, she rarely shows up for her shift at or before the scheduled in-time. She is almost always five to ten minutes late - she has never in my experience gone over our fifteen minute emergency grace period, but when it's every shift, the behavior needs to be adjusted, as the requirement is that employees are ready to begin working right at the time their shift starts, not after taking a half-hour or more to get settled and ready to work (as is often the case with Nia). When she did a restock I chatted with her about this - she acknowledged this is a problem for her and she is really aiming to work on it this year. I, for one, believe she can and will accomplish this! - IP

I cut Greg at 3:45 because there was a  lull in theater rushes and we had Nia and Darius capably handling the bar. I had Nia restock for Nat so she could skate outta here the second Jeshua got in at 4:45. - IP  

FOH Staff Observations: Alex M. helping with dishes. The whole Sunday crew operates like all stars. Runner, servers. Really gelling as one team. -LB

I am fighting a really nasty cough. I tried to recuperate over my two days off, but I'm having a hard time shaking this. I have been experiencing slight dizzy spells during today's shift. I will of course continue to mask up, but it is possible I may need to take tomorrow as a sick day depending on how I feel when I wake up. I will inform all potentially affected MOD's of my potential absence. - IP

Lydia, Ian and I will all be out tomorrow. Gus made it all work coverage-wise-LB

86ed / counts on items:
The count on the I Am the Fire was off again - by quite a bit. We had enough batch in house for 8 cocktails and the count was at 51. I made another half-batch, and updated the count based on the amount of product we have on hand (in ounces), divided by 4.5 oz. The count is now at 33, which, if the math is mathing, is correct. - IP
This number got low again so more was made and I updated the count.-LB

I 86ed Naturelle (there is a cheater in the walk-in) and Dancin' at the Disco. We can finish the last cheater of Disco, if someone makes apricot syrup. I killed the old syrups and replaced the pistachio orgeat. -LB

Prep List:
Made a couple Fro-Co's to start the day, and a holy mountain. Walk-in is pretty well stocked. Made a half batch of I Am the Fire. - IP

Holy Mountain, Lemonade and a Negroni keg are the only things to be mindful of if you need to batch anything. - IP

Pistachio Orgeat, 3 Lemonades, Negroni keg, Tom Collins, I am the fire full batch. -LB

While covering Lobby bar today I noticed the 3/5 service gun is also foamy. And Trees service pass has not improved at all. Hopefully they come back this week when I am around. I will still continue to try and troubleshoot this issue as it slows us down unnecessarily. -LB

I forgot to note this last night as it was too busy to remember everything. The 1/2 printer at Trees got jammed three times during service. So I am not sure if it has something more severe going on.  The 4/6 printer got stuck once. -LB

Mobilebytes Issues: We seem to have some irregularity with stock amounts. It seems to be more of a pattern than us forgetting to put in the counts on specials. I think MB sometimes doesn't save updates to counts. -LB
