Tuesday 4.30 Jesse

Manager Communication: Great ticket sales and sell outs today; Avengers just won't quit. The slower, comparatively, daytime showings give us plenty of time for set up and prep and then from 7 to close, things stay busy. Worked well with 3 bartenders on today, only a few instances of manager help and coverage needed to get through. Presence definitely needed at Lobby prior to showtime and at HiRes for pre-shows to expo, as Lobby gets stretched thin by ticketing and questions and then the bar upstairs all focus goes to service bar. Definitely more drinking crowds during weekday night shows, our sales mix is much more liquor/wine/beer than NA. Cut to 1 bar up at 10:30 pm, cut Lobby at 11:15 pm and re-routed so Susan could get out soon after. BAR Staff Observations: Susan is just a rockstar on Lobby solo, a tough shift that she handled extremely well. Manager Communication: Very busy from the get go.  About 4 to 5 times our ticket sales, and more for food and beverage. Running with 1 bartender down and 2 up worked with the strong bartenders we had on.  But there was no time built in to get prep done, which was fine for today.  It just makes the prep shifts have to be on point and focused.  I will be doing a prep list for each day to assist with this. Customer Comments: We had an allergic reaction to Bell Pepper.  I was informed by a man who came into HiRes and told me someone was puking upstairs in the drinking fountain.  I rushed up, and she was apologizing, and I told her not to worry, and walked her down to the bathroom.  She told me it was just stomach related and not life threatening as I walked her down.  We spent the next ten minutes figuring out what happened and finding the chain of mistakes. Manager Communication: Similar flow tonight as last night, which was expected. The only showtime to not sell out was the late Avengers, and even that sold strong for a Sunday night. A bit more family driven with the crowds for the showtimes leading up to the 7s and 11s, the drink mix felt a little less adult today but the volume was absolutely comparable. Well handled, good staffing for the level of business. Still managed to batch and make tight cuts; went to 1 in Lobby at 9:30 pm, went to 2 in HiRes earlier tonight as well (10:00 pm) and Susan, Rebecca and Ben rocked it out as our closing team between floors. Drink running was tough with one runner today; we could use a conversation about organizing cut staff to assist with drink running in a coordinated way to help with busy shows and times like this. Manager Communication:  Noble Tree sent us a keg of watery coffee.  Had to keep it 86'd.  I will talk to them tomorrow, and get it here by Tuesday. Spoons was easy, and everyone held down the early rounds great.  Captain Marvel and Us did well as well, and it was a good flow.  Much fewer bar business after shows with the long lines.  Even though we have the upstairs seating, people see the uncomfortable space and don't want to stay like they do when we have more downstairs seating. Customer Comments: Mostly good energy from folks.  A few returned tickets from those who could not sit together, which is a change from most days this week. Manager Communication: Busy all the way through today. Spoons went smoothly, lots of families for the early shows and drink sales coincided with that. However, once we hit the 4s, 7s and late rounds the dynamic shifted big time. Decent bar business in between shows, although we never built much of a crowd. The lines, when they dominate the entire bar for movies like this, definitely make a difference in how people view the bar, and we don't get the kind of bar business we get on other busy weekend days. Showtimes went really well from a bar perspective; drinks went out quickly and well, we slowed when the theatres got backed up and for the first time in a while we never hit a snag with glassware. Cut openers when the 3 o clocks got in, cut the swings when the closers got in, went to 2 up and 1 down after the final round and re-routed the Lobby at 11:45 pm. Manager Communication: Busy service, but rather smooth.  Good amount of drinks at the bar made the drink rush a bit steady instead of crazy at the beginning, but the drink rushes were much longer than anything we have experienced.  Ryan dropped an empty keg while changing it, and it cut the line for the Riesling right near the sankey.  I was able to cut the line a bit and reattach it, so it is working again, but we will need to get a clamp.  I kept an eye on it, and it was fine, since it is low pressure nitrogen.  So I will pick one up Sunday. People are drinking cold brew til late with this movie, so make sure we are restocking creamers even for the last rounds. We are looking good on prep, Lemonade will have to be made early, but then we should be good on batching as we have times to. Manager Communication: Busy night.  Good sales for captain marvel and sold out 9 to 5.  Got lots of organization and prep done.  Added a shift to be picked up tomorrow, let's keep an eye on it to approve. I posted a prep list for William, and we should be pretty set for the weekend. I did not get a chance to print signs for the walkin sections, but let's keep on people about the orderliness, as I did more to organize it yet again, and it will help us not miss things or make too much of things. It may be tight staffing tomorrow, so make sure that Rebecca knows to move bartenders between floors as she sees fit.   On all cuts, we need to make sure everything is getting done properly. Manager Communication: A slow service today. Weather was gorgeous, so despite there being some good foot traffic we didn't draw much in. Cut to two bartenders by 7:30 pm, kept Susan on Lobby bar to handle tickets and breakdown until 10:45 pm, then transitioned her fully to getting cut. Got cleaning done in both low boys, cleaned shelves on back bar, cleaned bar front and floors under the dish machine. BAR Staff Observations: Ryan is an excellent opener. Knows when to stop batching and doing prep, gives good direction to the other bartender. FOH Staff Observations:  New server Kylie was proactive and asked questions at the service bar, and seems to be strong. Prep List: Finished the Endgame cocktail and proportions, ginger syrup. Manager Communication: Busy night for a Monday.  Great first round with Spring Break and the rain.  Lots of walkins.  Numbers jumped about $4,000 in sales from beginning. Manager Communication: Slow Sunday. The holiday, the weather, the slower week leading up to this. All the factors conspired to give us a steady starting sales number for the 4s and 7s and almost no walk in sales. Late shows dropped off big time. Just made aggressive cuts and kept things productive. Down to one bartender on each floor by 10:00 pm and then down to HiRes only at 10:30 pm. BAR Staff Observations: No issues today and a strong crew on, everyone was productive cleaning, consolidating and taking early cuts. Prep List: Tonic syrup will need to be made and Ginger-Lime. Ginger syrup is done. Other cocktails balanced well. Ordering/Receiving/Shipping: Baldor en route tomorrow.

Manager Communication: Steady Saturday, never very busy. We did get a nice addition of sales to the starting levels for the 7s and sold out a few of the smaller theatres, and the Us for the 7s did well, but otherwise a light day with low bar business. We also felt the MTA troubles today and the F and G being down; lots of guests running late due to it and it probably discouraged people from making a trip. Cut to 1 bartender in Lobby and 3 up at 7:30 pm and cut to 2 up at 10:00 pm. Closed Lobby down at 10:45 pm 15 minutes after the last showtime, routed up and reduced hours as much as possible during the slow late night. Customer Comments: Had two guests leave Amazing Grace early complaining that it was too loud. Sound was normal for the film, projection and several managers came through the theatre and it sounded great and typical for the other screenings. Manager Communication: Slow for a Friday, Cut the downstairs bar after last show time.  But good business in the bar from 7 to 10:30 Got prepped up for the weekend, have backup kegs charging.  Good on all ingredients. Made michelada without valentina, left a note on the batch. Customer Comments: Had 2 people not want to sit in the front row of theater 5.  Issued them an e credit, but they want assigned seating.  Great feedback so far on the new drinks. Manager Communication: Slow night, cut openers almost immediately.  We batched things for tasting tomorrow. I got all three bar binders up to date on everything except food, which Ryan will be printing en masse tomorrow. The guy for the video games was by and we got $95.  He toggled with the machine and said a wire was loose and that it should be working, but if not, we should call the company and ask for Amy. Union and 12 percent did not come today, I realized around 5 PM. After the downstairs bar closed, Ellie noticed a homeless man snuck into Theater 7.  He was harmless and there was no incident, but we were running around doing closing things and this happened.  For summer we could really use an in house security for just the last round.  Summer on the park is a lot to deal with. Manager Communication: Outside of trivia, not much to report from the day. Slow theatre service and not much ticket pick up. We cut down to 2 servers for trivia, 2 bartenders up and 1 down as soon as trivia started. Then we cut Lobby bar at 10:30 pm on the dot, shut the gate 15 minutes after the last showtime and were down to 2 bartenders total by 11:15 pm. Trivia was a success again, with full floor downstairs and 3-4 teams upstairs. Definitely our tamest so far, but still a great sales driver. Crowd was very excited to hear we will be doubling down. Manager Communication: Slow Sunday with the lull from our movies combined with nice weather and GoT premiere.  Used the time to condense the walkin, and organize.  Made cuts quickly, with Grace getting out at 7 and going down to 2 at 10:30 after all cleaning and organizing was done.  Closed downstairs at 10:40 and got Ben out with just William for close. We have 4 qts left of Peppercorn Gin, which should have gone in to the batch that was made Thursday.  Did this not get made with peppercorn gin, but rather regular gin? Jesse Saturday Dinner 4.13

Manager Communication: While the weather seemed to keep the early shows tame, we got rocked for the 7s and pretty well sold for the 10s. Great bar business until 10:30 pm and even a few guests beyond that, but we filled the bar and tables before and after the 7s. Drink rushes well executed on both floors but very busy, with glassware becoming an issue for both when all theatres were sat and mostly sold. We moved racks between bars and had runners coming back with dirty ones to clean, but HiRes seems to always want for pints and Lobby bar seems to just generally need more prompt return of glass racks. Otherwise, no issues and well handled by all on tonight. But to 1 bartender in lobby at 9:15 pm. Cut to 2 at HiRes at 11:00 once business tapered out and sidework was done. Customer Comments: Had a family get very upset due to showing up 5 minutes before showtime for Dumbo and not being able to sit together, saying our lack of assigned seating is bad for groups and families. Nick and Ash Saturday Brunch 4/13/19

BAR Staff Observations:   Jay had his shift up for tomorrow and no one could take it, so I cut him, Ash is down to stay late and we can move Grace up for support if the gospel brunch gets busy. FOH Staff Observations: There were two complaints at the bars today during the first round from people who could not get service in the theaters, one from theater 7 and one from 4. Managers helped both guests and they left happy. One stopped in the lobby to thank us for how we handled it, but obviously it would be better if servers were more attentive in their theaters. Hiring/Training: Ash trained as bar manager today. We covered everything in the checklist and she has floor manager codes. She will have one more train with me next weekend. Special Events? Manager Communication:  Slowish Friday bolstered a bit by the Her Smell Q&A We did lose some business to the closed bar because people after Her Smell did not want to drink downstairs.  They would have stayed if it was half the bar blocked off.  Obviously we made more from the party, but it is a bit of opportunity cost.  If we can think of ways to do privacy things on the mezz for talent, it would be a good model going forward, especially for weekend nights. I cut Rebecca early, kept everyone else for the party.  Cut Eliel when there was not much turnout after the movie.  Cut Grace as soon as the party died a bit. Manager Communication : Good crowd tonight, everyone did very well. Rebecca and Ryan got us pretty well set up for the weekend. Special Events? Her smell Q & A and Vertigo both had a pretty good bar turnout and made a decent night out of an otherwise very slow one. 86ed / counts on items: We ended the night with a 1 count on Moonfog. I think this is the closest we have ever come to running an item out perfectly before it comes off the menu. Prep List: We will have to prep the amazing Grace special tomorrow as I have to pick up a couple of the ingredients in Williamsburg tomorrow morning. Ordering/ Receiving: I realized after the order deadline tonight that we did not recieve our Southern order yesterday. I reached out to our rep to see if it is coming tomorrow but have not heard back. Manager Communication: Slow night.  A little better than last night with some bar business after the sevens. I have a prep list for tomorrow with the walkin mostly condensed.  Prep list is posted next to the do not prep list as well.  Trying to roll into the weekend low on the things we will be losing. Started processing the blood oranges.  Making a bunch of blood orange oleo.  Will then juice the oranges and make a blood orange reduction and some blood orange bitters.  Have an idea for Aladin, but can be used for another special as well.  Just wanted to process them before they spoil. Manager Communication: An uncomplicated, steady day from start to finish. A few sold out theatres for the 4s and 7s, slow late rounds. Par for the course Sunday with a slight drop off in the morning due to good weather. Pretty smooth service today, made cuts aggressively due to good staffing and predictable business. Went to two up and one down after the 7s, shut Lobby bar down when the last show went in and got through pre-show. Cut to one bar runner at 7 and then to none before the late round, servers handled drink running without issue. Dine and Dash declined payments are starting to be a real issue; I don't know if this is just something banks are more strict about putting holds on accounts for, but we are dealing with several per day and difficult interactions when we have to reconcile the payment. Manager Communication: A busy and eventful night following a steady but never super busy brunch. Nice weather still seems real exciting for people, and they're opting to be out and about rather than in a theatre for now. Once the temperature drops and the sun goes down, all the folks out and about find their way here, and we got substantial walk in business and last minute sales for the 7s and late rounds. Even the 10:15 and 10:30 sold reasonable well. Had several serious guest altercations tonight. One gentleman had his card for DnD declined and when asked to provide alternate payment got instantly confrontational with Gil, myself and Michael the security guard. He got on the phone with his bank and the authorization approved, but he continued to threaten to fight members of the staff and I told him he was not welcome back. We also had a gentleman complain that we harassed him because he was asked twice to provide printed tickets that he did not have both of and then asked to ...

Manager Communication: Really  solid night with most of the sevens and nines selling very well.  Not as crazy as last week, but steady bar business til midnight.  Not sure the exact line for our water testing cambro, so I am leaving it over night.  I think it has depleted some, but check in morning to confirm.  Really strong service despite having no drink runner as Liv was dealing with an injury. Customer Comments: Had to turn away guests with an infant for the 9:15 Shazaam.  I explained that it was because there is drinking etc.  They told me the age policy should be posted on our website, which I said it was, and that it should be posted in the building, and I pointed out the signs.  I refunded them their tickets, and they left. Manager Communication: Good night tonight. Quiet outside of the event, but Pet Semetary made it a pretty lively night. Customer Comments: Celebrity Cat! BAR Staff Observations: I wrote Ben up today and suspended his comp privileges for a month. He is still a lead bartender and his shifts will not change but he will not be able to discount anything so we will have to assist him with that. Special Events? Pet Semetary. Manager Communication: A steady Tuesday, slow first rounds to start out with very little walk in business, but the event helped give us a nice boost as did decent walk in additions to sales for the 7s. Late rounds very slim outside of the 8:45 pm Us. Went tight on bar staff all day, cut to 1 bartender at Lobby before the 7s, cut to one behind HiRes at 10:30 pm. No issues with staffing levels handling front of bar business or theatre drinks. Had a small but nice crowd that stuck around for a few hours at the bar. Customer Comments: Had a group of ladies in theatre 7 come out to the bar to order as they hadn't seen their server in the last round. They arrived late and Megan was unaware that they had seated, got their drinks and food out super fast and they were grateful. Manager Communication: Slow Monday, but Us still got good turns for most rounds.  Solid bar crowd after the sevens. Got a lot of prep, condensing, and organization done today.  Also made prep lists for Tuesday and Wednesday, so that we are up and running for the late week to get ready for the weekend. Had a customer in theater 1 for the 7:45 us who was intoxicated.  The servers let us know and we had eyes on him the whole time.  He was only served 1 drink while here early in the show, but may have been on something else, and definitely had something  to drink elsewhere.  I was notified when he went to use the bathroom and Brett noticed he was visibly drunk.  I followed him back to his seat, where he was with a group of 4 more sober friends, and had eyes on him from the moment credits started until he was safely in a car.  His friends helped him out and I guided them to the elevator.  There were no incidents.
