Beautiful day outside, so while the big theaters definitely got above 100 tickets for the first two rounds, we did not have any complete sell outs. Trees was pretty busy, in bursts, throughout the day, particularly right when we first opened and then in between theater flips. Couple of crowds lingered after ST&B got out, which kept Trees bopping. JH
I cleaned out the old wines from the walk-in, moved them to the hodge podge trivia wine shelf. I had Natasha stock all the boxes and unbox the wines on the top shelf so the bar team can have the usual system in place, looks fantastic. I also cleaned out some old product from Singani events so the walk-in is a little less chaotic now.-LB
AB we need to recalibrate the thickness of strawberry syrup (it seized up with the pectin like jam) and the size of that recipe it is much bigger than the serving. glass. Team cannot strain out the seeds easily so let's troubleshoot to retain the delicious integrity of the drink. The size of the Baila Mi Rumba is also too large for the glass with the dilution from shaking. -LB

Greg + Natasha crushed their brunch opens, with neither needing to restock until we were well into the second round (and after Gabrielle had arrived). Natasha handled a very early parents/kids party at Trees this morning, and was super communicative with me when necessary. Greg held down lobby solo until Jeshua got in, and Gabrielle was able to watch lobby while Greg did a restock and took a break. Both Gabrielle + Natasha did a great job navigating a very busy daytime Trees crowd along with a bustling service pass. JH

We should consider Tevon as a bar back during Saturdays if he is into it. This shift is really too much with 6 bartenders. I am a manager and a bar back. -LB
FOH Staff Observations:
Had a bit of a frustrating issue with runners this morning, and I'm at a loss for how the situation ended up the way it did.
Had a large group of adults and kids arrive right at doors, who then headed straight to Trees where they ordered 16 snack trays on one tab. Natasha advised them that ordering in the theater may be easier, but they were insistent that they preferred to receive them at Trees and walk into the theater with them. Once Natasha sent the order (Ticket J1), I walkie'd to runners to let them know that the ticket was not a mistake and to run all 16 trays to Trees. Whichever runner was on walkie pretty curtly told me he saw that the ticket was labeled Trees Lounge and that the order would be up shortly.
Twenty minutes later, Kyle (server) came down to Trees holding a single snack tray. He said that runners had left it behind in the Th2 server station and when he saw it was labeled Trees he ran it down. Kyle confirmed it was the only snack tray in the station. I checked the printed ticket, which did have 16 Snack Trays printed, and walkie'd down to kitchen. I repeated the need for all 16 trays as ordered.
I looped in Wyatt because by the time the snack trays started to come up it had been about 35-40 minutes since the initial order, so the guests had gone into the theater as the movie was starting. Monica and Wyatt did a great job directing runners where to bring the trays, and ultimately all guests were served by the time the actual film began.
I'm unsure where the breakdown in communication came from, as I verbally confirmed the order, the ticket was entered correctly, and the order was placed not even five minutes after we had first opened. Additionally, the physical ticket was marked TREES in marker, but had been left behind in the server station and was ultimately delivered to Trees by a server. JH
I had to really inspire Conner to run dishes in the dishpit, expecially if you are interested in joining the bar team maybe show me by helping out when you can. -LB

(bar) I started an email thread for all bar managers with notes for suggested tweaks or changes to new menu drinks. Figured easier to make sure all notes across both locations are in one location. I also reminded all bartenders to add any notes they have to the suggestion sheets at each bar. JH
I have a lot of thoughts about this menu change and I will distill them for sharing. But generally, we seem to want to choose to operate on Hard Mode every time when it is well within our control to choose Medium or even Easy Mode for menu change. -LB

We blew threw FWWM. I did not have time to make more Arbol tequila. So the only problem with this large format recipe, is if you don't have enough to make it, you cannot make any.
Ian, I left a batch list on the board in order of importance. Currently Jeshua is restocking, so we also may need to make Twitterpated tomorrow.
OF keg is also fairly light, we should really watch these pours, we are going through these kegs too fast. -LB

Baldor + Manhattan + Sarene + US Foods arrived. To Rise came and picked up the four cases of Saratoga Still that were misdelivered earlier this week, Sarene swapped out the Safety Glasses Pilsner for the Safety Glasses IPA. JH

The 50 Year Storm tumbler in Lobby continues to have issues with the lid connecting to the little metal plates that keep the spinners in motion. At the moment, all we can do is readjust the lid until the connection is repaired. Have we ordered a replacement tumbler (just the clear plastic body portion)? The one we currently have has some breakage by the little metal plates, which appears to be the cause for the faulty connection. JH
The bathrooms are in need of a face lift. We need new toilet paper holders that don't have this recurring issue of the cover breaking off. They see a ton of action on weekends like this and they just end up on the floor. I saw three covers on the floor. I brought one to the janitor closet.
