Manager Communication:
Crazy busy right from the jump. Stock levels were good behind bars, but I made backup FWWM and Lemonade for the walk-in right when I got in. Plenty of DWP2 special - rationing the lemon juice in case we need more lemonade - however, Chef Jared let me know we are welcome to a six pack of 32oz lemon juice bottles they have in the kitchen if we need them in a pinch. - IP
Customer Comments: Some wild lobby action customer service tonight. Trying to buy tickets with a 7 year old (17 year old midget) to the DWP2 and wanting to sit on the floor. Then wanting to see The Drama after I said it is about gun violence, they said "we are gun violence" , they weren't really taking my no on the matter and I was uncomfortable. Carly was amazing, they took her no like a champion. Incredible to watch. But a really bizarre situation. This is after a woman came an hour into Michael with her mom in a wheelchair and there were no ADA seats. I refunded so they could come back at a time when we could remove the seat for them not an hour into the film-LB
Having the filmbot access available to the bar team has been pretty great. Thanks for setting that up.-LB
BAR Staff Observations:
Greg and Nat in Trees and Lobby. DWP2 kicked things off with a bang and went right into Sundays on Fire. Despite being extremely well set up from a thorough close and open, it was a real test of wills at Trees for the sold out opening round. When the service rushes are even slightly more tame, having a solo bartender at open with one bar Manager to jump in to help usually suffices - but when we know for certain we're going to have sold out 1's and 2' right at doors, I would strongly suggest bumping up the first mid's in time to 11a. I know there has been a lot of back and forth about this, and I don't want to muddy the waters, but whenever something needed to be fetched from the liquor room, or a keg changed, etc., it left just one bartender behind the bar. With sold out theater 1/2 rushes, and people populating Trees Lounge (of which, only one or two guests ordering Trees Cocktails can put a 5-10 minute hold on service - it doesn't take much), it would really make a huge difference in ease and execution of service. The subsequent rush after Danny had arrived went super smoothly, because at those peak levels of business, in order for our guests to have the best possible experience (and our staff to not be stretched too thin), it is my opinion that two bartenders is a necessity. - IP

Whipped Cream issues and concerns: The bar team has been confused as to how to really master the whipped cream topper. This was told to me by Natasha. I have advised them to keep the charged unit out in an ice well so the cream is cold and the CO2 cartridge doesn't get cold and die. This has been a frustration point for them during busy service times. So if we as the bar team can do some further research and include an update in the bar email this week I think they would appreciate this. This is something I did anticipate and tried to get ahead of for menu change when I asked that a full tutorial for the whipped topping be explained. I am also a novice with this, but I can research tomorrow and try to find some answers if we are looking to keep this item through the Summer menu change.-LB
Gus, there have been a lot of High Noon cans that the top breaks off leaving them unable to open, if you can reach out to Francois and maybe get a couple of free cases.-LB
FOH Staff Observations: Really good flow of service from the theaters today from the Trees service pass. I would say the same for the pace at which glassware came from theaters and this makes all the difference in how the bar team can function. A huge salute to the runners, servers and floor managers today.-LB
Vlad and Markenson have been very helpful and responsive all weekend. I appreciate them so much.-LB

Natasha made an OF keg, a Negroni keg as per IP and I had her make a FWWM. I will make Lemonade tomorrow after our lemon juice arrives. -LB

Maintenance: The dishpit dollies have been more contained, but if Juan could drill holes in the grey ones that don't have holes that would help. For the most part this issue has been resolved. -LB
Unfortunately the Trees lowboy doors are broken again. The left door seems to not be holding on to anything. I think the middle door is also not connected to anything. I can try to investigate further tomorrow but they aren't really functional again.-LB
