Manager Communication:
Wyatt and I opened up the building. I got the triple-bay frozen machine reassembled and slushing up some product as per the instructions from the service technician. As of 11:15 (roughly an hour after refilling the chambers) the FWWM and FroCo were slushing up perfectly - but the Bounty continues to take more time. I'd be interested to see if it is the freezing capability of the machine (we can swap the Bounty and Firewalk chambers, as the Firewalk is working well) or the Brix of the batch that might need adjusting. It has historically taken longer to freeze than the others - perhaps we could tweak the batch to slush better. -IP
Around 7:45pm Alex M made a call that a man was on the ground unresponsive by theater 3 garbage can.  Michael, James, Dion and I all quickly responded. I took over since I had the time. It seemed he had low blood sugar. We got him water, OJ and a small thing of fries.  He opted to take his food to go and get a cab home. I ran his check, packed his food, and refunded his ticket so he can come back another day. He was super nice and obviously felt a little embarrassed. I said we all need help sometimes and it is fine. I alerted Michael to make sure he got safely into his Uber. He was in 5311 last name Guy-something I forgot already. -LB
I wanted to note, last night as it was slower than expected, so a lot of staff that was cut hung out on the mezz. I love seeing the community. Good vibes all around. -LB
I ordered more rocks glasses ahead of the Oz Onslaught. I will do a count/par list tomorrow/Tuesday. I am going to move some of the weird equipment bins to make room in the glassware cabinet.-LB

Customer Comments: I did not get to note this yesterday with the medical event.  But there was a woman who came out of a theater I believe or she had the salad at Trees, I am uncertain. She said the greens were gritty. She had three bites and then gave up. Patrick had helped her. Justin was aware and I believe he brought the message and the salad back to the kitchen, but I did not get to note this. -LB

BAR Staff Observations: I have moved the Trees Lounge Bar Binder to next to the freezer. It is out of reach for most of the bar staff (specifically Nia).  It makes sense there as it has all the classics. I went over some cocktail making rules for Nia and she is definitely improving on her skills. She doesn't try to wing it and that is the right move. Patrick and Jeshua just moving in lightening speed tonight.-LB
Charlie has an idea for menu change and we did a mock up after he clocked out. Happy to see he is settling in, he is a great fit here. -LB

FOH Staff Observations: Eryn really has the composure of a person who has worked here for so long. I complimented her and I complimented Erika for doing such a thorough job on-boarding her.  Sabrina among others really hustling and helping with dishes etc.-LB

86ed / counts on items: Al's. Sauv Blanc.-LB

Prep List:
Ian had Natasha catch us up on the Marg and negroni kegs. A few lemonades. I made a half feedback loop after realizing I forgot the count. So  we should NOT batch anymore. We will cruise through to Wicked.-LB
Prepped the Garlic Grappa for Goodfellas Film Feast.-LB

R&D comp checks:
Didn't get to the math for R&D before the banks were done, will enter tomorrow.-LB

Lost & Found?: Sarah brought a tote bag from a ground floor theater, it is tagged with a note.-LB

Ordering/Receiving/Shipping: US foods and Baldor coming tomorrow-LB

Maintenance: Frozen machines are looking good. I will empty and rinse them tonight. Tomorrow Ian and I will try and get them swapped but I may be dead weight in this situation.-LB
