Sunday 5/4/25 Lauren/Ian
Manager Communication: Broke out 72 new water cups. I ordered 2 cases back up to have in liquor room. I also ordered two new dish dollies to replace the ones that are on death's door. We have used all our Webstaurant credits-LB
I vacuumed and sprayed air into the compressor of the frozen machine in the lobby, it was pretty dusty. Hoping that will help it freeze. I do think we need to consider freon levels, sometimes when the atmospheric pressure changes this type of machinery is slow to rebound. -LB
The evening service was extremely busy in all the theaters, and the team (all around) absolutely crushed. Glassware was constantly being replenished, drinks were being paced out wonderfully, and the bar was cranking. The prep work of Lauren and the day time team was immaculate, and because the servers and runners were SO GOOD with running glassware all night, things ran about as smooth as I could ever hope for. More of this please! - IP
Customer Comments: Justine came to the bar to report someone thinking the pilsner was an IPA. I went in and assured them it was not but the hops profile used is a bit similar, gave them a Thai wit and they were pleased. I do think that this pilsner is good, but have a few options that might be lighter for Summer proper. -LB
We had a second complaint about the pilsner at Trees, Patrick deciding keg was bad. I ran it out after tapping a new keg and I believe he is correct. I will reach out to Sarene. I have tagged the keg in the walk-in. I won't be logging any as spillage as we will likely get a replacement from Industrial Arts.-LB
We had a near altercation in theater 7 tonight, but because I was babysitting for the last several minutes of the movie to make sure the talkers remained quiet, I was there to jump in and make sure they all left without escalation. The guy who complained decided to get up in the face of the person he accused of talking when the credits rolled and I got in the middle of it and told everyone it was time to leave. They complainer came back later and got all up in Justin's face - Justin and James handled it like absolute Pros - James explained that he was right about the talking, and we strive to make sure that the rules are upheld and we apologize for the inconvenience (he was given a pass earlier before he got aggressive, and seemed pacified... apparently not!) but there is no instance in which aggression will be tolerated. When this information seemed to bounce off, and he continued to rage, Justin made sure he left. - IP
BAR Staff Observations: Bar team forgot to clean coffee airpots.
Frozen machines were not freezing in the lobby, so I grabbed tools to work on them and sent Natasha to Trees Lounge since Maya wouldn't let me be her hands despite busy Theater 4, 1 and Trees. Natasha told me upon returning to the lobby that Maya would not really let her help get out of the weeds despite Natasha being a lead. It does make more sense to have Natasha in the lobby. I may swap them depending on business later today but don't want it to make Maya feel bad. I wish that she had a more adaptive bartending-style.-LB
The team was great tonight. Maya stuck around til about 6:15, and then Greg, Patrick and Jeshua were off to the races. Patrick held down the service well (noticeable improvement with expo'ing and speed - still work to do to catch up with Nat and Greg, but definitely a step in the right direction) - Jeshua was hands and Greg was stirring and shaking for the peeps at the bar. They were suuuuper on top of it tonight. Darius rocked the lobby solo and made easy work of it. - IP
FOH Staff Observations: Everyone really busting their buns today. It felt significantly busier than yesterday afternoon. Everyone was really moving. Manny, Sonny, Evan, Anthony to name a few. Impressive teamwork.-LB I hit up the heavy players with tokens. -LB
Staff Meeting Agenda notes: emptying the liquor boxes to completion in the liquor room. -LB Consider a Monday prep shift for days after weekends like this. -LB

I was able to get to emptying the liquor boxes tonight after Trees closed - it took me all of five minutes - definitely something we can all stay frosty about. - IP
86ed / counts on items: High Noon.
Prep List: 2 lemonades, margarita in cambro to be pour in keg tomorrow, rebel keg.-LB
I was able to make more Unsweetened Iced Tea, but couldn't get to the OF Keg or the Can You Dig It - otherwise, the bar and walkin are looking pretty good. - IP
Pay Outs: 5200 $11.98
Ordering/Receiving/Shipping: To Rise. Baldor and US Foods coming tomorrow.-LB
Maintenance: Rebecca mentioned the elevator folks having been here Friday, but if the next time they are here we can ask if they can make the door sensors on the Trees elevator more sensitive. Yesterday I had two dish dollies wheels get stuck getting off the elevator and the doors crushed my arm so bad that they ripped open a scabbed cut. I am fine, the point here is I worry about patrons getting in this situation. The slowest elevator up and down, but it is a little quick on the closing draw. Thanks.-LB

The gasket on the bar prep freezer is ripped and this causes suction so the freezer is unable to be pulled open. I put some duct tape on it to try and make it easier.-LB
A recurring issue I noticed yesterday and earlier today when changing kegs, it started when Natasha was changin the cider on Thursday. The gas seemed to be running hard. All three kegs I changed got messy, very unusual. I noticed later that the gas line for the charged kegs was left open. Unsure who left this open or if it would make a difference in the beer gas allocation, just wanted to highlight in case more troubleshooting will be in order. Ian noted the open gas line should not be an issue but wanted to let y'all know. -LB

Tonight I had several instances where bartenders could not find checks they needed to access - it was simply because they were unaware of the ticket filters at the bottom of the POS and how to properly utilize them. I showed Jeshua and Patrick and we found the tickets right away. I think we should just make sure the whole bar team know how the ticket filters work / how to find tickets that may be missing. - IP
