Manager Communication:
I'm still quite unwell. Got the place open and made sure that the bars were set for the buy pushes in the afternoon, but once Patrick got in, and Rebecca and Carly assured me they had everything under control (you guys are the best - thank you so much <3), I got outta here to rest and recuperate (and not contaminate the rest of the staff!) I filled Lauren in on the happenings of the day and I'm sure with the team we've got, there shouldn't be any issues. - IP 

I broke out two cases of rocks glasses last night. Natasha just told me she broke a bottle of bitters, sangiovese the other day and someone dropped a chenin blanc in front of walk in the other day. I realize I should have put that somewhere for spillage.-LB
I don't know if there is any paperwork for the bartenders that trained with Greg today to fill out, was not informed but I saw this yesterday, but I gave Darius a couple tokens. I will hit Tevon with some later this week.-LB

BAR Staff Observations:
First round was mellow upstairs, and it gave Nat a chance to get everything well set up at Trees. First floor first round was very busy, but Tevon is an All-Star and made easy work of it. "Sundays on Fire" crushed - almost totally sold out, but fortunately Patrick was in by 12 to assist Natasha.

FOH Staff Observations: Everyone really pitching in and helping today.-LB
 

Hiring/Training:
Greg was in at 1p today and I asked to Tevon show him the ropes in the Lobby - getting some time/exp on Filmbot and how to help direct traffic in the lobby (as he has only worked in Trees thus far). - IP

Sick Leave/ Call outs:
As mentioned above, I am still under the weather and Rebecca thought it best that I get outta here to recuperate and not potentially expose the rest of the staff to whatever I've got. I clocked out around 1p - IP
Nick called out so on this fun Sunday we also had no security. Full moon fever all around.-LB

Special Events?
"Sundays on Fire" and All We Imagine As Light both sold out and were smooth and steady. Natasha, Tevon and Patrick did an exemplary job. 

Staff Meeting Agenda notes: I think a policy of 21 and over in Trees Lounge after 7pm is not a terrible idea. I had to ask the teens that hang on the mezzanine to leave and Vlad (acting as security) allowed them to stay downstairs.  Which is fine since we have eyes on them. However they have no IDs on them and the risk reward situation here seems unnecessary to me.-LB 

86ed / counts on items: We are selling athletic free IPA as an open item because Al's and Phony Negroni are out. Long live dry January.-LB
I see that kitchen ordered us coffee filters. Patrick grabbed some for this morning from the bagel shop.-LB
Used the last of the laminating sheets so put in an order for more.-LB 
 
Prep List:
I made a cherry limeade when we opened to get Trees ready for opening, but otherwise stayed pretty conservative as to not overbatch. On that note, the stuff we don't have a ton of backup of in the walkin, but a good deal behind the bar are:
- Dead Man's Chest
- Espresso Martini
- Cherry Limeade
- Spirit of Comfort
- Elphaba's Elixir
Probably good to just keep an eye on these during service - may need to batch more for the rest of the week, but didn't wanna overload. - IP
Natasha banged out a FWWM, 4 Lemonades, Espresso Martini. I made a Spirit of comfort, cacao water for tomorrow, Bloody Mary mix.-LB
Ariel, if you can make some Bloody concentrate and a Negroni keg. Unsure what else might be needed. -LB


R&D comp checks:

Over/Short on Banks:
When I opened and checked the banks, Filmbot was $1 over, and Lobby Bar Bank was $10 short (one singles clip only had $15). There was a full $25 clip of singles in the cashbox, so I swapped that into the Lobby bar bank, and put the extra dollar from film bot and the $15 in singles from the lobby bar bag into the envelope in the cashbox. There should be $16 worth of singles in the envelope. - IP

Ordering/Receiving/Shipping: Baldor is coming tomorrow. US Foods might come tomorrow on late van, otherwise it will come Wednesday.-LB

Maintenance:
One of the black plastic chairs from Trees lounge has lost the screws affixing one of its legs. The leg fell off when Markenson was cleaning, so he brought it to me. It is in the vestibule outside of the office. I will see if I can find appropriate screws to reattach the leg. 
I know the Trees frozen machine has been giving us some issues - I realized the only reason we were not using the right-most bay was because we didn't have another set of functional rotors - so I took the rotors from the dysfunctional bay, and moved them to the one we hadn't been using and it seems to be working fine. This obviously doesn't solve whatever is wrong with the other bay, but at least we're now back up to two functioning Firewalk frozens behind the Trees bar.
UPDATE: The far right bay is working fine, but the FWWM we put in the machine froze nearly solid on the 1 Slush setting - it is possible that the frozen machines are freezing too cold, but I think it much more likely that the batch of Firewalk was made incorrectly. I think it might be of use to empty the far right bay of that product, put some in that can be verified was made correctly and then see what's up.  - IP
FYI we have that set of rotors for the new machine.-LB 
The gate at Lobby bar would not come down tonight. I told Jeshua and he went down and got it down. He says to not put gate all the way up and when you push the down button to give the gate a little pull.-LB
