Manager Communication: I placed my first Baldor order. -LB

There is the new apple sass cordial in the walk-in. There is one that says Apple Sass 10/25. Unsure if that is the same product.  -LB

I asked Chef Nick to add me to US Foods account. Have not received that activation yet. Will communicate order to Gus/Jenn.-LB

Started off the day giving Vlad the rundown on how to remove and clean the drain catches in the floor drains. He's on going through all of the dumpsink drains and floordrains that have been giving us trouble. Lauren and I put away the large liquor order and stacked and organized the glut of kegs in the walk-in. Even though Ariel was out today,we all made a great team. - IP

Customer Comments:

I was alerted that a guest left a flag after a screening that said that their lip had been cut on a chip in the rim of a wine glass. The guest did not ask to speak to anyone, just left the flag and left after their movie. We will be more vigilant at the pass regarding potentially hazardous glassware. - IP

BAR Staff Observations:

Matthew was a real workhorse today. Felt like he really took the lead behind the bar and it was good to see. Jeshua was on his game in the lobby, and Gab was bringing really good energy to the bar tonight. Was a good time. - IP

FOH Staff Observations:
Kobe is great. Really jumping in to help tray and run glassware in a way that is not as common for newer staff. Good stuff. - IP

Sick Leave/ Call outs: Ariel has a gangsta toothache. -LB

Special Events? The Night Flight Festival was a small but very good crowd. They all hung out and drank a bunch after their screening. Woods always brings out good people. - IP

Prep List: I made an XL Elphaba, Espresso Martini (Swapped out Borghetti with Trees Lounge), Tornado Wrangler, Dead Man's Chest. - LB

I made two lemonades, more honey syrup and a bounty law. 

Tomorrow will def need a Tornado Wrangler and maybe another Margarita keg. - IP

Maintenance:  I ran Green goblin through the service ice well at trees lounge and under the ice machine. This is an enzymatic, non-toxic cleaner that helps clear out mold. I won't treat any other areas unless they seem like the need it. I always use this after I clean an ice machine as the cleaning usually unseats mold that can then back up the drain. I put mesh drain guards in all the ice wells at Trees. This prevents seeds, mold from ice, broken glass and what not from ending up in the plumbing that then causes mold to get stuck and causes clogs.  I do think having a mesh or screen drain cover over the ice machine drain at Trees could help some of the clogging as the grates are quite large and debris can still get in there. -LB
Can we get clarity on the ice machine cleaning schedule.  Happy to play point on all things with mold.-LB

The doors that we were using for entry were having issues again. They are not closing, I think partially due to the wind holding that door harder than the mechanism expects.  I swapped the signage and we locked those doors. However, they don't properly lock when they are off. Investigation is needed. -LB
