Manager Communication:
I clocked the bad ginger ale that is on the floor by soda shelf in Lobby bar. So the next US Foods order if we can send it back and leave it in kitchen.-LB
Another very busy evening, with second round selling out most theaters and third round not too far behind. I was basically glued to the service pass at Trees from 6-10, as it was absolutely non-stop tickets. However, service never got backed up and the staggered showtimes gave bars a chance to restock before another service push. JH
BAR Staff Observations:
BAR Staff Observations:
Matthew is excellent at opening and dealing with busy rushes.-LB
It's been said a lot the past week, but really great work from bar team tonight. Tevon and Jeshua basically held down Lobby all evening with very little support from me, as I was at Trees. Similarly, Gabrielle and Matthew were absolute machines at Trees, swapping from service to guest-facing to restocking and everything in between.
We talked a little bit about whether or not we should have scheduled another bartender tonight, but the general consensus was that a fifth pair of hands, while helpful, would have needlessly cratered the tip pool. As we have had a pretty mellow few weeks before now, most bartenders are very happy with the hourly tip rates from this past week. JH
FOH Staff Observations:
FOH Staff Observations:
Absolute rockstars in Th1/2/4/6 tonight, with the standouts being Abe, Jay, Jovani, Michael, Quetzie, and Rebecca. Also! Glassware was never an issue at either bar during service, which really helped bar team focus on keeping up with tickets as opposed to having to pause service to chill glassware. JH
Hiring/Training:
Hiring/Training:
Rebecca keep your eyes peeled for Mariposa Coalson's resume in the jobs email account, I used to work with her at Caveat.-LB

There are no more lemons in the walk in, but both bars have quarts and backups to start service tomorrow. If opening bar manager could grab some lemons on the way in, I'll be sure to order some from Baldor for delivery Friday morning. JH
Prep List:
Prep List:
Ian cranked out OF, 2 Lemonade, FWWM, Negroni keg, Simple Syrup, Arbol Tequila, Together is better. I am hitting some Cherry Limeade and one more Together is Better. -LB
Both bars are stocked and ready to go in the morning, as well as the walk in, but we should definitely get a start on batching before doors, if possible. We could use Bloody Mary Concentrate, Elphaba's Elixir, Espresso Martini, Glindade, PST Concentrate, & Rage is Your Gift. The Bloody, PST, & Rage can definitely be done during service.

Ordering/Receiving/Shipping:
Finback, There was a case of quin quina and a western repacked box of Smith and Cross. US foods-LB
Maintenance:
Maintenance:
Ian is doing his amazing weekly cleaning. I am going to try laying the new mats on the problematic shelf in Trees as a quick fix until we can swap out for the more sturdy shelf, this was a successful fix in the meantime.-LB
Labeled the Trees dishpit sink for clarity regarding temp and on/off confusion.-LB
Ian and I tried to make the shelving situation better in the liquor room using no funds.-LB
Ariel and I discussed installing hand soap and C-fold towel dispenser in the dishpit, since we get dirty often on the side without handwashing station. Also a light under the shelf in the pit to illuminate tickets as today it seemed a bit dim.-LB
Gabrielle let me know that when she was burning ice in the well at the Trees service pass, that it was draining especially slow again. We may need to get a plumber to look at it, when we can, as our plunger can only dislodge so much, and there has to be something stuck in there. JH
