Saturday 06.29 Ashley/Dana
Manager Communication:
Lydia's swing-shift this morning was very much appreciated. They juiced for both bars, sliced fruit, & put away tons of glassware. They were able to leave around 1PM and both bars were extra prepared for Saturday service. AB
FDNY inspector returned today to check CO2, he said both our inspections this week are approved! One note, the CO2 sensor in the soda closet closest to the floor was off. He mentioned if that light is off to make sure it's on, it's the sensor that tells us if we're going to die from lack of oxygen (lol). AB
Busy, tough night for the staff today. Had a large crowd from BRIC arrived to Trees extra thirsty at the beginning of the rush from TH1 Quiet Place. Bartenders commented that it felt nonstop today. Gabrielle and Kelsey really held it down on the closing side tonight with it being a rough night for them. I gave both a token for rolling with the punches tonight. -DL

BAR Staff Observations:
A little concerned about Maya & her performance in Trees Lounge today. Her walkie calls were non-stop and not always necessary. At one point, she called because she couldn't find the bar binder. I told her I would look for it in a moment (it was there last night), but asked what she needed - which was to look at our Cosmopolitan specs to make for a guest. This was a little disheartening for a few reasons. Maya has been very vocal about not getting enough Trees shifts. While it is best practice to work with our standard specs, every bartender back there should know how to make a Cosmo. Also, general problem-solving, like looking the recipe up on a phone, is preferred over having a guest wait for this long. If everyone is on board, a Classic Cocktail Quiz is in order. We can treat it like the seasonal quizzes we give, limiting shifts upstairs until the knowledge is there. AB
Needed Natasha to stay a bit late tonight to support a big rush from the theaters and BRIC all at once. She was great at holding down service bar with me as the rest of the team handled guests walking in. -DL
FOH Staff Observations:
Jelani seems to still be pretty lost in the system. There were multiple occasions today where he forgot where the tickets came out for TH4/6. Started to run incomplete tickets. And started to go back upstairs without any drinks on his tray except his own in a quart container he had. -DL
Special Events?
BRIC came in throughout the day. Busiest day I've seen from them so far. -DL

Prep List:
Natasha was the only lead on the roster today, so we got a lot of anticipatory batching done this morning. AB
Will need to make more Strawberry Mint Spritzer tomorrow. We should look into having 3 kegs on hand as the Mojito and Spritzer are both flying. -DL
Maintenance:
Maintenance:
One of the exit signs by the men's restroom near lobby bar fell from the ceiling out of the blue. The sign is by the frozen machine in lobby bar and it was added to the maintenance doc. -DL
