Very mellow Monday. Challengers dinner round still sold well, but nothing really grew too much in sales after we opened doors. JH

Spoke to Lydia about needing to tighten up her Saturday closes, especially in regards to the lowboy at Trees having been left wide open this past Saturday night into Sunday morning. However, this conversation got derailed when I saw that she had prepped the FWWM station with something that was definitely not chili salt. When I asked her about it, she said she had no chili salt at Trees when she opened so she subbed in chamoy instead.
I told her to dump out the product, clean the dish, and I brought up some chili salt from Lobby. I reiterated that her openings could also use some work when it comes to precision and detail, as being out of a product is something that should be communicated to a bar manager and that bar staff should not be subbing in garnishes as they deem necessary. She seemed to understand, but was definitely out of sorts when I spoke to the fact that she had been making drinks (FWWM) incorrectly since we opened today. I did not think it was necessary to issue a written warning, but will make note of it in her review this quarter. JH

Dio's guys showed up just before bartenders were scheduled to arrive, so Lydia opened up Trees around them. They got out of here just after doors opened, and were able to give me a quick rundown of what they were able to do. They had to defrost the fan again, as it had been in overdrive trying to get the temp down Saturday night after the lowboy door was left wide open and it iced over.
They were able to clean out the fan and related area, and advised that we keep the fan set to '0' until tomorrow morning, to give the lowboy time to come to proper temperature without running the risk of overworking the fan again. They said that we can set the dial to '5' tomorrow when managers get in. I looped in Ariel and told him to keep an eye on the temperature of product in that lowboy throughout service tonight. I said that if it feels a touch warm in there, to put the dial to '3,' and just to make sure he turns the dial back to '0' before leaving tonight. JH
