Saturday 03.09 Jenn



Manager Communication: 
The rain and spice did flow, and we were very busy all day (to be fair, I did not get in until two).  Trees had a few crowds develop over the evening, which was great, and they usually all went into their theaters once they opened.  Crowds in theaters were well behaved all night and kept drink service bustling until last call.

BAR Staff Observations: 
Echoing Ashley from last night, I really cannot praise bar team enough for today.  Openers and mids sailed through service until I came in, and the rest of the evening ran smoothly because everyone was quick to support when needed.  Both Natasha and Matthew were here a little longer than nine hours, primarily because I needed them for support while Ian caught us up on batching.  We were able to float people up and down as service needed, as well as for any restock needs, and by the time the last movie headed in I was able to get Ian out of here, and closers ran the rest of the night without issue. 

FOH Staff Observations: 
I was primarily based at Trees tonight, and just want to shout out: Rebecca, Julianna, Raekwon, Makenna, and Erika for being great at the pass and about communicating glassware needs all night. 

Sick Leave/ Call outs: 
Dana was feeling better last night, but woke up very sick again so reached out to me this morning.  We both agreed that he'd take another sick day so that he has a better shot at being ready to come in and work the Oscars close tomorrow.  I let Nathaniel and opening bartenders know, and came in at two.

Staff Meeting Agenda notes: 
The note of the last two weekends is glassware.  Throughout the majority of the day, by keeping track of check drop times, I was able to prompt Lead Servers to check specific theaters for dirty glassware.  However, I found that servers had a much easier time prebussing Kung Fu Panda 4, and that really slowed down during Dune II screenings, which I think could be due to how guests order in those theaters.

Overall, I think this is just a matter of keeping on top of servers and working with other floor managers to encourage servers in theaters past their first push to start bringing down glassracks.  Shout out to Jeremy and Erech, the MVPs of running glassware directly from the kitchen to the bars when they heard me call for glasses.  I agree with Ashley that we have enough glassware in rotation, so it is not a matter of stocking.  The main reason why I feel so confident saying this is that when I told servers during our last Th1 rush that Trees would not be making any more drinks for any theaters until I got more glassracks, I then received five racks from Th2/4/6 in five minutes (not counting the three water cup racks that were also brought down).  

Additionally, from 2-8 I would basically stand in the Trees dishpit and immediately stack up newly-cleaned pints at the Th4/6 service pass,  so that bartenders could get them into service right away.  We didn't have the extra hands to really unload glassware, so I emptied most of the racks at Trees and, except when changing every non-Winter G&T and Espresso Martini kegs we have in house, I was kind of glued to Trees from the moment I came in until ten.  Again, service never paused except during that final load in for Th1, and the other managers were really fantastic about helping us out all day. 

86ed / counts on items: 
We put the last keg of Singlecut Kim on tonight, and the distributor let us know this week that they are out of stock until the end of the month.  Just keep an eye on it, and let's make sure we remove the letters from the board once we are 86'd. 

Prep List: 
Winter G&T needs to be finished (needs 1 oz of plum bitters) and charged tomorrow once plum bitters arrive from Amazon.  Ian batched and strained as much as he could and left it in an 12-qt cambro in the walk-in next to the Saratoga Still.

Over/Short on Banks: 
Filmbot was $50 under.  Ashley, if you could please reach out to Miguel, Matthew, Ian, and Jeshua tomorrow morning and see if they have any idea what may have happened.

Ordering/Receiving/Shipping: 
I placed a US Foods order for delivery on Monday.  Let me know tomorrow if I need to order anything from Baldor for Monday.

Maintenance
The water stations at both bars have been pouring a little cloudy the last two days.  The taste is fine, so it may just be an issue with pressure or temp.  I don't know what is causing it, but if we could have Juan or Angelo check it out.  I'm uncertain how to properly explain it, so I did not add it to Maintenance Doc yet.

Additionally, after eleven we had some leaks at Trees, most likely due to the heavy rain and wind.  It was concentrated by the tree, and Darius set up stanchions to keep guests away from the small puddles.  I have sent on a photo of the leaks (looks to be coming from both the bricks and the ceiling above one of the halo lights).
