Friday 01.05 Ashley



Manager Communication:
An all-lead Friday (Gabrielle is an honorary lead in my honest opinion)!! It went a long way. Tevon helped Ian and Matthew in Trees until Natasha got in. He reset Lobby and prepped so much product for us. Gabrielle had quite the busy night and held her own as usual. Ian worked the pass for multiple sold-out shows and Natasha jumped right in once he left. After 5:30, it never dwindled down. All bartenders really kept up the hustle. AB

The ice machine in Trees was not operational this morning, as well as the hot water from the coffee machine. After multiple attempts to restart, I had to change the filters. Nick walked me through it and I used Ian for his height. We ended up looking like we got off a water ride, but you guys, I can officially change those when necessary. It did in fact bring the ice machine back to life so we are set for brunch tomorrow. The coffee machine, however, is still only pouring cold water. I restarted it a few times, but the sensor screen being broken made it difficult to pinpoint the problem. Hot water everywhere else in the building is fine. Hopefully this works itself out by morning, if not I would brew hot water into one of the spare coffee urns for busy tea service during brunch. I left a cambro overnight under the water filters. There is a steady leak under the blue nozzle that relinquishes the water of doom, even though the nozzle is completely shut off. I'm not sure if this happens every time these get done. AB
 
I FiFO'ed the soda boxes, there is an expired Diet Coke and Seagram's Tonic on top of the stacks. We've used an expired tonic before without issue in taste, hopefully the Diet Coke is similar. B

I've been in contact with Susan Kent on the return of Karaoke. She would like to keep the same schedule of second and fourth Wednesdays. I sent an email out to Chenelle to double-check there isn't any Trees buyout coming up this might intervene with, and to give her the heads up for Trees availability down the line. Will keep y'all posted. AB

BAR Staff Observations: 
Ian and Tevon were absolute gems today. Shout out to them coming in early to help. Tevon ran around both bars assisting with glassware, resetting, you name it. Ian's height came in handy when changing the water filters in Trees, and held down service for multiple sold out rounds. AB

FOH Staff Observations:
I hate to put anything negative, but drink hands were severely lacking. I understand we ended up short on support, but some servers were noticeably working harder to make up for it than others. Those shining stars are Shae, Julianna, Barry, and Sarah (who stuck it out with a family emergency at home). AB

Was on the way out and noticed 3 glass racks on the clean side that were dirty from a theater. Dish pit was obviously broken down, it was 1AM. I tracked down Felipe and he admitted to it and apologized. I explained to take these down to kitchen at the end of the night, etc. This could explain how some of the glassware has been dirty mixed with clean behind the bar. AB

86 Texas Tornado. Peach Tea, Phoney Negroni, and Athletic Hazy IPA on a count. AB 

Prep List: 
A lot got done, but then more happened. Will need more Rosemary Pom Syrup, a Negroni keg, and oranges juiced for Fistful of Dollars. We have 6 quarts of Bloody Mix in the bar prep lowboy, and one Bloody Concentrate. That would usually get us through a weekend, but Bloody's have been flying off the shelves lately. I would just keep an eye on it tomorrow and hopefully that prep could wait until Monday. AB
