Sunday 12.03 Jenn/Ashley



Manager Communication: 
Cold, rainy day, which definitely brought in a lot of day-of ticket sales (the 4:30pm Th2 Napoleon tripled in ticket sales between doors opening and the theater opening).  The smaller theaters consistently filled up throughout the day, and Beyoncé easily led sales for the larger theaters. JH

Very busy Sunday evening, made to look easy by wonderful bartenders. Matthew and Miguel got both bars completely reset before clocking out. Darius handled the service pass with multiple sold out theaters, communicating with Jeshua who was supporting. Tevon handled cocktails solo for a very full Trees crowd. Kelsey held down Lobby which had plenty of walk-ins. Tevon did have to step off to batch more Queen B's Sting, using the last of the Ancho Reyes (substitution for Giffard Piment D'Espelette). We then ran out of Paloma, so I made the call to get a bottle of Ancho Reyes from Windsor Wines. Payout in Trees financial. AB

Customer Comments:
A guest came out of TH4's Napoleon (last round) complaining they could hear TH1's Renaissance. Will adjusted accordingly. AB

BAR Staff Observations: 
Matthew and Miguel did a great job setting up each bar for doors, which was great since service took off at both bars once we opened.  Darius is really great about touching base with both bars when he arrives for mid shifts, and was able to restock both bars before heading up to Trees to help Matthew with service, and Matthew was able to go to the back and get some quick batching done to set us up for evening service.  

Tevon got in just as the first Renaissance screening was seating, and the bar had definitely filled up by then.  Once that screening had settled in, Darius was able to float back down to lobby and work service with Miguel. JH

Darius was more than fine staying a little later than intended, and it was appreciated. He really does a spectacular job looking out for his co-workers and setting up before leaving. AB

FOH Staff Observations:
Prebussing glassware remains an issue, particularly on the first floor today.  I do not believe it is an issue of needing more glassware, as bars are starting out overstocked.  But throughout service there is a delay in running racks to Trees or kitchen, which can really impact glass temperature during tight flips. Ashley and Nathaniel did a tour of all stations before the third round to encourage more racks to be run, but this needs to be more self-directed and consistent. JH   

Wilfredo took the lead in TH1 as far as pre-bussing and retrieving glassware for Trees. He definitely sets a standard which is unmatched. Erech also brought glassware from kitchen to Lobby a few times which was incredibly helpful. AB

Special Events? 
The Holiday Market definitely picked up some traffic as guests were departing first and second round movies.  It did not bring people to Trees, but plenty of guests were happy to peruse and hang at Trees a little bit once their movies let out.  The Nitehawk table did fairly well, and looked like it probably had the most sales from the day. JH

Staff Meeting Agenda notes: 
We may need to order a couple more rollies for glassracks. Servers have been having a harder time finding them when opening recently, and some of those opening glassrack stacks by the elevator are getting perilously high. JH

Prep List: 
Started the day with only one quart of the Beyoncé special, so I made another triple batch of Blue Spiced Syrup during the first round, and then a double batch of the special.  We will probably need to make another batch today, as it sells really well, but we are almost out of the Ancho and may only have enough for one more batch. JH
Juicing will need to be a priority in the morning, including orange juice for Fistful of Dollars (bars are lightly stocked, none in walk-in). Need a backup Negroni keg. There is currently a 4-quart backup of Queen B's Sting in the walk-in, I didn't want to make more than that with the Ancho Reyes we have currently in case we are getting more Giffard Piment D'Espelette? The Autumn G+T (no-batch list item) keg is less than half full, do we want to go ahead with a half batch with the five-spice syrup we have in house? AB

Ordering/Receiving/Shipping: 
Crushed peppermint candy for winter menu arrived.  It is in the liquor room dry racks next to the hot sauce. JH

Ordered two boxes of coffee stirrers from Amazon, which should be arriving Wednesday.  All in-house stirrers are stocked behind the bars. JH

Baldor arriving tomorrow. JH

Maintenance: The stall second from the accessible stall in the Trees women's restroom is currently out of order. It was continuously flushing/spraying guests. Markenson didn't know how to get it to stop. Carly and I and a couple screwdrivers later, it finally seized flushing. The door is currently locked with a sign. Can Vlad go over what he usually does in this circumstance with Markenson when they are here together? Mentioned in Maintenance blog. On a positive note: Carly and I learned so much about our toilets, and a little about ourselves.
