Monday 08.07 Jenn/Edgar


Manager Communication: Pretty humid day, but we stayed steady for a Monday. Dinner round was pretty much sold out with the afternoon round doing big numbers as well. Late round was a bit quieter by comparison, but still had a few sellouts. Barbie is still going strong, but looks like it's starting to wrap up gradually. EA

BAR Staff Observations: Everyone pulled together for another busy Monday. Albeit, slower in comparison to the last few weeks. Jeshua and Ian kept pace with the tickets up at Trees and were constantly able to cycle glassware into the bar in between rushes to keep us afloat. Eliel set us up with juice and garnish before Gabrielle took over for the rest of the lobby shift to allow Eliel to go home and rest. 

Great work from all staff today. EA

FOH Staff Observations: Servers in the sold out 4:30 Th1 and the 6:25 Th2 Barbies were really great about pacing out ticket orders and having people run trays from Trees.  Kaya and Raekwon in particular are generally really on top of sending drink orders from the theater while doing greets, which helps bar get ahead of tickets earlier in the service push. JH

Staff Meeting Agenda notes: 

86ed / counts on items: 86 Sauvignon Blanc. Low on Manhattan Project because we're out of Method Dry. Was unsure if we would want to use Carpano Dry while we reorder or not. Also low on Y Tu Mama Mix for same reasons. EA

Prep List: We'll need a captain blood at some point if time permits, but it's not urgent as one was just tapped today. We can also make due with another Lemonade and maybe make the rest of the basil syrup so the remaining leaves in the walk in don't go brown. 

If we do decide to use the Carpano Dry, we should make another Manhattan Project since the Hatch Rye is ready. EA

Ordering/Receiving/Shipping: Baldor arriving tomorrow.  Harney & Sons (only Peppermint Tea) and Big Geyser (Gosling's Ginger Beer & Saratoga) arriving sometime this week, most likely Wednesday/Thursday. JH

Maintenance: The Th7 service pass leaf was accidentally dropped down too hard, and ploughed right through the stopper and landed at a slant.  After checking it, the leaf and the joint seemed sturdy, but the stopper had a gnarled screw, which allowed for the break through.  I was able to remove all the screws so that we could get the leaf back to the appropriate side, and Edgar found a new screw to replace the crooked one, and reattached the stopper.  There were no further issues, but we should probably include a note in this week's bartender email to remind bartenders to be mindful of the force they bring the leaf down when possible. JH
