Monday 07.03 Jenn/Edgar



Manager Communication: Busy, busy first round, into a very buys dinner.  Ticket sales climbed all day before doors, so I expect much the same tomorrow. JH

Sold out dinner, mostly sold out late round. No AC in the lobby and Trees. I appreciate that it's getting worked on, but those conditions were pretty unfortunate and unacceptable. Fingers crossed it's fixed by tomorrow because I don't think we can do another day like this. I had to stop service a little earlier than usual because we just couldn't keep up and were all feeling the heat exhaustion. EA

BAR Staff Observations: Bar held it together as best as possible, but the heat just got to all of us today. Morale was pretty non-existent by the end of the night as everyone was just exhausted and taking turns going to cool down in the walk in. For what it's worth, I can definitely say I've never seen Andrea upset until today and she's usually very self sufficient and stoic. Nevertheless, she was able to close out the night relatively ok. 

I was able fill in the gaps for service to make sure they got through all rushes on both floors and make sure everyone had a second to breathe, but as mentioned above, it was stressful for all parties involved. Again, let's make sure the bar gets the breaks they need tomorrow incase the AC isn't fixed and that we're actively involved in stepping in for them.

86ed / counts on items: 86'd Belle de Jour, Coffee & Cigarettes, Dutchess Helles Lager, Kombucha, Ruby Hibiscus, and Sauvignon Blanc (Crosby). JH 

86 Jungle Bird.

Prep List: I stocked as best as possible to start the day. The only thing I didn't get a chance to make was Michelada. I didn't make any Jungle Bird as we didn't have the banana liquor to make it. I washed out the bubblers and put water in them so they wouldn't run dry. 

Garnishes should be prepped first thing tomorrow. Juices should be looked at as I didn't have a chance to take stock on what we have. 

Rittenhouse Rye and Ginger liqueur has been taking to the bar for the liberty special. EA

Ordering/Receiving/Shipping: Baldor & US Foods arriving Wednesday. JH

Maintenance: It doesn't feel like any of the aircon is working at either bar.  All four thermostats were placed on a cool hold and never got below 70 (Trees was between 73-77, while Lobby never dipped below 78).  I let Paul know to pass on the message to Palco, so hopefully they can check it out when they're in to work on Th3 later today. JH
