Tuesday 06.27 Jenn
Manager Communication: Pretty busy first round, with some late round pops of service. Trees again had a pretty decent dinnertime crowd.
BAR Staff Observations: Lydia and Maya set up both bars for open, and Miguel arrived just before doors. First round was very buys at both bars, and the soda ferry system was utilized pretty heavily, with myself and Miguel switching out every few trays. Maya was really on top of communicating soda needs, and crushed a solo lobby service. Lydia and Miguel were kept very busy throughout the evening, with Lydia getting out of here shortly after I rerouted Th5/7 at 10:30. Both Maya and Miguel closed each bar without issue.
FOH Staff Observations: Just some notes to keep an eye on this weekend, related to the glasswasher at Trees:
- Servers need to be more proactive about prebussing. Trees gets absolutely swamped with glassracks during flips, and that is the only time glassracks are currently being brought down to Trees.
- Additionally, servers and runners can put glassracks through the dishwasher if the sink is clear.
- Once last call in the building has passed, glassracks should be brought down to kitchen unless a bar manager or bartender okays bringing them to Trees. The last two nights a couple of sneaky glassracks have materialized at Trees well past midnight, which just adds to an already thorough Trees closing checklist.
Prep List: Simple Syrup should be made early tomorrow. An Old Fashioned keg, Cantina Machine, and Michelada should be batched as well. Check last weeks sales numbers for Jungle Bird and City of God against what product we have in-house before batching more of either.
Ordering/Receiving/Shipping: Baldor and US Foods arriving tomorrow. Baldor preordered and arriving Thursday, too.
Maintenance: Coke did not show up today. I checked the ticket number, and it still just says Technician Assigned, which is less than helpful as it has said that for the past two days. Unfortunately, due to business levels and needing to ferry sodas between floors, I was unable to call them until just after 7, which is when their phone line closes for the evening. Edgar, if you can please reach out to them first thing in the morning. The compressor began making very loud noises again this evening, so I pulled out the plug as the noise was very disruptive.

A ceiling tile above the tri-sink at lobby was leaking tonight, just a droplet of water at a time. Neither myself nor Maya could figure out if it was just condensation or a leak, so I added it to Maintenance for it to get checked out.
When I brought the front gate down tonight, I noticed that it seemed a bit jerky. It never stopped completely, but the motion was noticeable so I thought it best to mention it. Additionally, the bottom bit of the gate (the link part, not the bottom shutter part) kind of slumps out at the bottom, which I vaguely remember the gate tech mentioning was not supposed to happen. I'm sorry if this is difficult to parse out, my descriptive gate vocab could definitely use some work.
