Monday 04.03 Jenn/Edgar

Manager Communication: Pretty mellow start to the day, but it felt much busier than it was with the arrival of the DOH inspector. Dinner rounds in TH1/2 were decently sold and the late round for Texas Chainsaw Massacre kept the bar moving. 

The Volo crowd brought in some good groups for some post softball beers and they were solidly here until nine PM. Good to see Mondays getting a small pop again. 

We are low on sani test strips for the bars. Does kitchen or bar do the ordering for these? EA

BAR Staff Observations: Ashley and Eliel both had easy opens today. They were clutch at Trees alongside Tashi once DOH showed up to throw a wrench in our day. Andrea combed the entire lobby bar for any possible violations and had us set for success down there, while Ashley, Eliel, and Tashi combed through Trees lounge without skipping a beat in service. After the inspector was left, I was able to cut Ashley and Eliel stayed back for a bit to help Tashi navigate a couple of rushes before they left for the night as well. 

Very smooth movement and communication between all bar staff today and other than those stupid flies, it couldn't have gone any better. EA

Porter Observations: I had Mike start wiping down the walls in the dishwasher area today. He will continue with the ice machine side tomorrow. Jenn, can you remind him? I asked him to do this first thing tomorrow before he does the bar prep clean. 

I can have Vlad do the drains as per usual on Wednesday, but have him go at them a little harder to make sure that there's no "sludge," in the drains. EA

Staff Meeting Agenda notes: For bar email, everything at the bar was pretty great during today's inspection EXCEPT the lingering fruit flies by the dishwasher and hanging out high above. I will add this to the bar email of ongoing cleanliness and to also be hyper aware of splashback from the frozen machines and/or the bubblers. As well as wiping down accumulated sugars that end up on shelves. EA

Prep List: Pretty much everything we didn't have time to batch today. I believe the only things that got done was the firewalk before we were delayed with DOH. 

I'd lead with strawberry lemonade and Neon Demon before anything else. Other things I've noticed we need are 42 Regular, F this Franchise, and Michelada. EA

Ordering/Receiving/Shipping: Stumptown arriving tomorrow. JH

The parts to repair the nitro faucet should be arriving via UPS at some point tomorrow too. EA

Maintenance: The fire alarm box in the Soda Closet is still beeping. JH
