Saturday 03.04 Jenn/Edgar



Manager Communication: Very busy day throughout the building.  First round started strong with the Shorts screening and Persepolis, and the second round had a bunch of very well-sold theaters across all three floors. JH

Dinner was just as busy. Both bars saw a non-stop pounding (Trees more so than lobby), but the team handled the onslaught with grace. EA

Customer Comments:

BAR Staff Observations: Andrea and Maya set up both bars without issue, and Jenna arrived right before doors to help Trees get through out Shorts screening this morning.  Maya was great support at Lobby, prepping citrus garnish for Trees, and Andrea was very proactive about communicating with Maya when opening.  

I was able to get Jenna out shortly after Tevon arrived, and Andrea floated between bars to get both bars restocked.  Once closers were in, Andrea and Maya were able to get out, and both bars were set for the dinner rounds. JH

Bar staff held it down for a busy service at Trees. Tevon was an absolute asset to day to help us get through multiple busy service pushes. At a couple points throughout the night the bar was in deep while waiting for their theater to open and I had to jump back there to dig them out (definitely an amazing problem to have). Everyone was very positive, but tired nonetheless. Tevon got out after the bar was reset a little after the last round in one was seated. Gabrielle and Ian took care of Trees for the rest of the night and closed with ease. 

Matthew was pretty much a one man show downstairs with ticket support from Dwight and also was able to clean up and stock up the bar a bit before he shut it down. EA

FOH Staff Observations: Servers in TH1/2 were feeling the pressure today, but they came out on top and supported each other throughout the busy shifts. Lauren, Monica, and Brittany also supported and ran trays into 1/2 while they waited for their drinks. Great spirits despite getting crushed. EA


Special Events? The theater crowd did not drink too many of the specials, so the count on product is pretty close to what it was after Opening Night.  I walked Edgar through where all the drink specials are located, and left the build sheets posted at Trees. JH

86ed / counts on items: Stout and Sauvignon Blanc 

Prep List: Dinner service depleted us pretty badly. I was only able to make a back up Old Fashioned keg in between each round since it was nonstop and I was constantly looking for glassware. 

Lobby looks pretty slim tomorrow so they should focus on juicing as we're low again, and maybe prepping more garnish for the party in the evening. 

From prep area: Firewalk (We should have enough to start), Lemonade, Strawberry, Negroni Keg, Coffee + Ciggs, and Diamond Dane (What a crusher!) EA

Pay Outs: $150.00 (Ariel & DJ) JH

Maintenance: Both coffee machines continue to intermittently spit water, and we can't really narrow down anything in particular that causes it.  Edgar said that he may be able to find a workaround to temporarily stop the one at Trees from leaking. JH
