Sunday 01.16.23 Eliel and Edgar



Manager Communication: Once again, a busier second half of the day with M3gan selling really well everywhere except for the 10pm screening. Super chilly day. Trees saw great numbers in between movies and we had tables full for the NFL games. I want to start doing this on slower days to fill up space and make Trees a bit more livelier. 

Going forward, I'd like to see if it's possible to have the projector down and playing movies from our Plex server on slower days. It might help keep guests around longer or bring in guests who don't necessarily want to come watch a movie, but will come to catch snippets of something we're showing at Trees while eating and drinking. Do we need specific licensing for this type of thing?  

BAR Staff Observations: Bar team worked really well together today and Tevon was a champ for running between floors to back up wherever the rush was. I have Matthew Soler his first taste of a sold out theater on the service bar and he is starting to find his groove. Lately both him and Sean have been finding their stride and it's great to watch them work together and take each other's lead. 

Lee was great in the lobby for directing traffic and navigating sold out shows down there. It was Lee's first time cleaning the lobby frozen machines and Matthew's first time cleaning the Trees machines I demo'd the break down and rebuild on one of the tumblers. Lee was able to put the other two back together and water test all off them to make sure they held. Matthew did the same upstairs. Since it was their first time with the respective machines, they made sure to take it slow and take care while doing so. EA

FOH Observations: These tight turns have been killing us this weekend. The bar was able to stave off guests with drinks as they waited for the theater to open, but the lack of glassware in between rounds and the racks of dirty glassware all coming at once is overwhelming for both the bar and the servers. This is also causing servers to feel the need to rush while cleaning and  flipping and ultimately leading to A LOT of breakage lately. I went into a station to look for glassware during a flip to help and some of the trays I saw were pretty dangerously stacked. We need more time for shows that are popular.  EA

Prep List: I went to go prep Sugar and Spice, but realized we are out of Chai concentrate. That or I am thoroughly blind. Can you add this to a Harney's order? There's approx 3qts at Trees and a 2qt in the lobby, but we are flying through it. 

There's enough strong heart at each bar, but none in the walk in. We might need to batch more when the closers get in. 

Other than that, all I can think of is some Strawberry Lemonade later in the day. EA

Sunday 01.07 Ashley/Ariel

Manager Communication: Matthew and Miguel came in ready to crush this brunch. The Wizard of Oz, Wonka, and Poor Things all had great drinking crowds. Kelsey came in at 11AM & swung up to support Trees. Once Tevon got in we knocked out plenty of batches and syrups. We were able to cut openers soon after. -AB The Coconut Lime Slushie side of the frozen machine continues to be an issue. I don't understand because it's in the same style machine in Lobby, on the same setting. What do we do? (crying emoji, crying emoji). -AB We ran out of the Piña Colada umbrellas today. I was having bartenders just put a cherry in there. -AB2 I also no longer have access to this blogger anymore so I'm typing here from Ashley's account. -AB2 Customer Comments: Not a specific customer, but I noticed this weekend a lot of N/A Spritzers were being rung in "not too sweet". Manager Communication: The soda gun at Trees Lounge is having issues with Diet Coke. It has moments of coming out with no syrup. There is syrup in the bag still so I think Coca cola should be contacted to have it checked out before it is a further issue. -LB Super busy Sunday chilled out for a chill evening. -LB Customer Comments: While helping out Josef in the lobby today I had an idea that might streamline his tendency to takeover the attention of the lobby bartender or floor manager (or anyone who stops to chat, haha). Since he usually calls in to get his tickets beforehand, we know when he's going to be coming in - since he ALWAYS asks what movies we have coming up, and if we will have x, y or z - maybe we can print out an easily readable piece of paper with the upcoming schedule (as we know it) that we can hand to him and tell him all the information is on the paper.
