Monday 01.16 Jenn/Edgar



Manager Communication: Very busy morning and afternoon, with service being nonstop once we opened doors.  We definitely could have used an extra pair of hands behind the bar today, and I have some notes about that in Staff Meeting Agenda.  However, service did not suffer and both openers were in good spirits throughout the shift. JH

Customer Comments: I handled a guest call today regarding yellow passes that were given to guests from the Babylon showing on Tuesday Jan 10 in TH7 when the projector went out. They were told that they could use the passes at anytime because of the incident. After confirming with Nathaniel that this was the case, I issued the guests two passes for the TH5 showing of Babylon. I know we're not supposed to issues passes on Holidays and weekends, but because they were told this I honored it. This was the single instance of that. EA

BAR Staff Observations: Eliel was a champ at Lobby today, which had plenty of sold out screenings and a lot of first time guests looking for help navigating the building.  Eliel was able to help out Sean with glassware, juice, and citrus garnishes, which really helped set Trees up for success today.  

Sean has gotten a lot better about being proactive about communicating service or stocking needs, which meant service never got weeded, even when Trees had a fair amount of guests while the 2:35 M3GAN in Th1 was seating.  However, Sean still kind of trips up when assigned to tasks that do not directly relate to making drinks.  I do not think it is an issue with him not paying attention, and more that he is just very keen to get back behind the bar to help with service and forgets about the other parts of service that need to be maintained.  He definitely has made strides since his review, and I think offering a bit more guidance when assigning tasks will go a long way.

As mentioned above, it was very busy throughout the day, but I was able to give both Sean and Eliel breaks at 4:00 and 4:30. JH

Miguel took over Trees and I was able to get him through the rush for M3GAN at 7:45 and the waves that would come to the bar afterwards. Other than that, he handled the rest of tickets and guests at the bar with ease. 

Lee was a champ of running things in the lobby and calling for help when needed. He had no issues running the show downstairs at all. EA

FOH Staff Observations: I ended up spending the majority of the second round up at Trees, and all servers were great at the pass.  Those negative flip times continue to cause a crunch, both with resetting the theater, but also catching up on glassware at Trees.  But Th4/6 and Th1/2 were fairly proactive about running dirty glasses down to Trees. JH

Staff Meeting Agenda notes: As we do have a fair few Monday holidays in the upcoming year, and we often do not know how busy those days will be until doors are already opened, maybe the bar could benefit from having a 'standby' shift on those days.  The shift would be a floating mid, and would help both bars keep up with service without needing a bar manager to step off the floor and into service.  I know that servers had started something similar in their scheduling, so we could probably adhere to the same parameters.  I don't foresee this becoming a common thing, but it would be really helpful on those days were business levels can kind of be a toss up. JH

86ed / counts on items: Ruby Hibiscus is 86'd. Powers is 86'd. We are low on Tecate. 

Prep List: By the popular demand of the Bar Gods: Old Fashioned, Coffee and Cigarettes, and a keg of Negroni all kicked within an hour of each other during the dinner service. 

Arbol Tequila, Firewalk, Lemonade need to be made tomorrow. I'll try to get most of the essentials done ASAP tomorrow before open. EA 

Ordering/Receiving/Shipping: Harney arrived today, and I am bringing two Chai Concentrates over to Williamsburg tonight.  Baldor and Stumptown arriving tomorrow. JH
