Sunday 12/4 Eliel and Edgar



Manager Communication: Busy first round out the gate and the team was ready to go. Pretty good afternoon throughout, people had a good time watching World Cup. EL

Dinner and late round slowed to a crawl. I was able to cut generously without impeding service. EA

BAR Staff Observations:  Everyone did a great job and rocked the shift. Ashley was a great lead. EL

Openers were cut before I got there, but Ashley and Darius held it down as the mids. After getting some batching done and rotating staff to make sure they go family meal. Ashley was able to do a stock and leave a little early. Same went for Darius in the lobby. He made sure to get Matthew through the rushes and was able to do another stock to leave him in a good place before I cut him. Lee overlapped through the dinner rush and the beginning of the late round to help Sean at Trees and after breaking down one of the frozen hoppers to find the source of the leak, I was able to cut him too. 

Matthew and Sean stayed behind to close and to clean the frozen machines. EA

FOH Staff Observations: great team work at Trees for all theaters. EL

Staff Meeting Agenda notes: Sean asked me tonight why we couldn't run the frozen hopper through the dish machine. As far as I'm aware, the plastic can't take the heat and may warp. Can someone confirm this for me as this is why I told him we handwashed them. EA

Prep List: Negroni Keg. Eliel, we should be receiving the rice milk tomorrow for the Horchata. Be on the lookout for a UPS delivery. I'm not sure at what time it would be coming in tomorrow. If it doesn't get in by the time your prep shift is over, I can take a look when I get in. 

For the prep shift: Check the juices both at lobby and Trees and taste for quality. I think they're ready to dump after the weekend and we can get both bars started with some fresh stuff. Check the garnishes as well for any brown limes and replace. Thanks! If there's any spare time, go through the walk in and round up any old syrups that we may not be using anymore so we can clear out the walk in and prep it for the menu flip. EA

Ordering/Receiving/Shipping: Rice Milk should be arriving tomorrow via UPS. 

Maintenance: One of the frozen hoppers had a crack on the back side. I cleaned it and put it at the bar prep in case we want to try to salvage it. I replaced it with one of the spare hoppers to use. EA

Is it possible to lift the back legs of the dri decks at lobby bar? Because of how it's sloped down there, water tends to pool in the lower compartment of the dri deck. If we can get it leveled out or even lean a little forward, we can make sure that it's drying out properly when putting glassware there to dry. EA
