Manager Communication: Capping off the holiday weekend with a very busy morning, across all three floors. JH

Dinner round was just as busy with all theaters including TH1/2 sold out for the majority of the night leading up to a somewhat slower (but still pretty busy) late round. EA

Customer Comments: Had a guest in the first round Th3 Strange World screening who was a first time guest with her child, and she had nothing but the highest of praises for the dine in set up and the servers in Th3. JH

BAR Staff Observations: Ashley and Tevon were able to set up both bars without issue this morning, with Ashley noting that Trees was closed 'expertly' last night by Ian and Matthew.  They both handled the first round rushes without issue, before Miguel and Sean arrived for their mid shifts.  I had Tevon swing up to Trees around 4:00, as Lobby was pretty mellow, and Trees was navigating tight turnaround times on sold out service pushes.

With regards to Sean, we definitely had some issues with him sliding into service today.  While Ashley took the lead on service, Sean had some difficulty keeping up with guests, even when the bar was not busy.  Ashley pulled me aside to let me know that she felt that a lot of the questions he was asking (e.g. where are back ups of Trees cocktails, how are drinks garnished, etc.) were things he should know the answer to, and that he was sending out drinks incorrectly (two bar guests, served at different times, returned Bloody Marys because he had used Michelada as the mixer, and he served Kumusha instead of the The Menu special).  

He definitely is trying to be involved in service, and was happy to be service back up and bus the floor when needed, so I think he may just need some support and guidance in ensuring consistent service of house cocktails and how to anticipate service needs.  JH

Following up on Sean's service tonight, he reminds me a lot of when Miguel first transitioned to the bar team when first started. He's trying to have his hands in everything at once resulting in nothing getting done. If we assign him a station, it may help focus him for the night regardless if it's front facing, service or lobby. 

Adding to what Ashley mentioned, I think it is a great time to administer another quiz to the whole bar staff to make sure everyone is on the same page, because a lot of questions asked beverage-wise was passed out to all staff during both the menu flip and when independently requested. 

All that being said, Miguel and Sean ran the mids, but I had to pull Miguel upstairs to help back Sean and Lee up through the busy dinner rushes. After swinging him back down stairs to help Jenna with a last stock up, I was able to get him out. 

Jenna and Lee closed us out tonight running the service for the last calls and to clean the frozen machines. EA

FOH Staff Observations: Glassware bussing continues to be an issue, which is just compounded by sold out shows and tight flip times.  Th1 was great during service, but Th2 definitely lagged in comparison.

Still having servers come up and ask bartenders questions about tickets during very busy service pushes, which pauses service entirely and holds up tickets.  One example from today was Kat coming to Ashley as Th1 opened and asked for her drinks from Th2, which had just done last call.  As there were about two dozen tickets at the pass, and more printing, it was not a question Ashley could easily answer, and she had to go digging through the tickets.  I advised Kat in the future to use the Rush function if tickets need prioritizing.

Additionally, some servers are still reaching over the bar to grab the soda gun and serve themselves.  One server ended up knocking four pint glasses into the ice well right as we opened a sold out Th1. JH

Maintenance: The cylindrical part of the glasswasher at Trees that holds the plunger was completely gunked up again by around 1:00pm.  I spoke to Edgar about it, as he had cleaned it thoroughly on Thursday, and we both do not know what is causing the sudden build up, as the machine appears to be running normally. JH
