Manager Communication: Busy day as expected, but ran smooth with the bar team.
There was a spillage of about 3qt of Chai Espresso Martini, that equaled to roughly one bottle (34oz) of absolute 1L. I did an open ring for the cost of the bottle + 6oz of Mr. Black Coffee. ($41.87). It just needs to be adjusted on the back end. Ticket C4
The spill was an accident as the threads on the cap and bottle were worn out and burst open while Gabrielle was shaking to mix product. The 4qt and lid have both been discarded. EA
Additionally, it was a pretty full house all afternoon and for the late round too. As expected, it felt nonstop. EA
There was what turned out to be a non issue at Trees regarding the drawer. We need a little more communication regarding payouts and cash handling. None of the closers at the bar knew why were over $100, until Wyatt came around. Can we at the very least leave a note in the register? EA

BAR Staff Observations: Chelsea and Natasha showed up ready for a very busy open, and were sure to stock both bars very well for service. All of the batching from last night really set us up for success today, so we were able to run with a relatively lean morning crew until mids came in at 1:30pm. Chelsea and Natasha were great about communicating about garnish and stocking needs, so prep was pretty tight. Once mids came in, I was able to have Trees focus on service and Lobby focus on restocking both bars. JH
Dinner service went off without a hitch, there was great communication from Ian to the rest of the team and he had them focused and constantly. Ian held down service with the help of Matthew as his shadow and Lee with Gabrielle took care of front facing.
Jenna and Miguel were great in the lobby and assisted each other as needed. Everyone was great about starting on going batch lists to help restock in between rushes. EA
FOH Staff Observations: Dirty glasses were run much more efficiently during service this morning, particularly from Th4/6 and Th1. It really helped keep the bar ahead of the game with regards to glass restocking.
Hiring/Training: Matthew Day 4 - He took a lot of initiative at Trees today and was thrown into the fire. He was outstanding at verbal calls from the expo line and got into the groove of restocking, and cleaning as he went. We went over a few classics again and the trees cocktails too. He's good to go live on the slower shifts to learn to work more independently and the only thing I'd recommend is going over the glassware guide to the theater drinks. EA
Staff Meeting Agenda notes: Due to the tight seating time for tomorrow's opening rounds in Th1/2, Ashley will be coming in for her Trees mid shift at 11:30am tomorrow. Schedulefly has been updated. JH

Prep List: We depleted a lot during service, but I was able to knock out a couple of Firewalks at the end of the night to supplement the stocking behind the bar.

Ordering/Receiving/Shipping: Martin from Winebow brought over three boxes of Bayab Gin around 3:45pm. All 18 bottles have been infused, and will probably last us through the rest of the weekend. JH
Maintenance: The ice machine at Trees did not make any ice overnight, but was back to normal service by noon after several restarts. As of dinner round, the ice machine continued to run without issue. JH

Jonathan, Erika, and Jules were a fantastic opening group for Th4/6, and were particularly proactive about bringing down glassracks. Barry was pulled from Th3 to be drink support for Th1/2 and was really helpful, appearing to be a lot more comfortable with tray running and when to tray up completed drink tickets. JH
Dinner got a little tricky with glassware because of how close the rushes felt between TH1/2, but we were able to eek through and the servers ran glassware down and through the machine when they could. EA

Things to to prep: Arbol Tequila, Firewalk, Lemonade, Strawberry Lemonade, Michelada, Horchata, and a keg of old fashioned. We have enough to start, but things like the lemonades and michelada should be started sooner, rather than later. EA

Follow up on this. The ice machine was working all throughout the rest of dinner. However, it's inconsistency this week is worrisome.
The boiler had to be restarted today in the middle of the dinner rush. There was an unspecified amount of time that we went without hot water until Gabrielle pointed it out. I then restarted it and it seemed to work fine thereafter. I took a video of the panel and the boiler as I did it. I'll be sending it out shortly. EA
