Manager Communication:  The unplanned Black Panther party from the th1 show, came in and took Trees by storm. It was a very busy night on all sides. 

One of the ice buckets fell and cracked. Can we order a new one? EL

BAR Staff Observations: Ian came in for his prep shift today, which was a little truncated, due to the earlier than usual door opening time.  Overall, it was really helpful to shore up Trees cocktail backups, as well as batching those items that we fly through during a busy service.  One thing to focus on going forward, which myself and Ian already discussed, is that these prep shifts should definitely be used to juice lemons and limes for service.

Chelsea and Ian did a great job stocking and prepping both bars for service, and Sean slid right into service when he arrived just as the second Black Panther screenings was seating.  Sean definitely needs to study our garnish/glassware guide more, but seemed relatively comfortable behind the bar during the busier pushes.  Just something to keep an eye on over his next few shifts. JH

Lee Ashley and Sean worked the bulk of Wakanda with a lot of help from Chelsea who batched, stocked and jumped in the busiest moments. They all worked really hard and rocked the night out. 

FOH Staff Observations: Throughout the entirety of the first round, Th1 and Th2, only ran down one rack of dirty glasses each before the flip.  Myself and Ian touched base with servers from both theaters throughout service, but they responded that there simply were not any glasses to bus in the theater, even though drink tickets were steady throughout service.  

While service was not overly disrupted, it did cause glassrack backups when the theaters reopened, as the flips are about ten minutes long.  Ideally, bartenders would be able to restock glassware from the theaters before the theater opens for the next showing.  I know this has been reiterated to servers at meetings, but they really need to be more proactive about bussing glassware in theaters during service. JH

Theaters 1,2,4 and 6 all worked really well supporting each other. Brendan was really great at running to other theaters if he was waiting for his tray.  Great Team Work. EL

Staff Meeting Agenda notes: Just a note for the bar email: bartenders at Trees need to be more cognizant of refilling and pouring Fire Walks from the correct hopper.  Allowing one to be used until near empty and then transitioning to the other one is the most effective way for us to keep the bar stocked with appropriately-frozen Fire Walks, as well as keeping us from having to blend differently-dated batches. 

Also, have we ordered a new juicer yet?  I know it was discussed on Tuesday, but do not remember who said they would take the lead on that. JH

Prep List: We have 7qts of Heart Shaped Herb. I batched a bit at the end of the night. Pars are strong. We'll need some syrups and horchata but we're pretty stocked. EL


Maintenance: Matthew noticed that the tray underneath the glycol machine to catch condensation was full of a tinted liquid, and was concerned that it may be glycol leaking out.  I cleaned out the tray and will check on it tomorrow to see if anything other than condensation is in it. JH

Ice Machine at Trees is having trouble again. It was empty at the end of the shift. I restarted it again before I left. EL
