Manager Communication: Pretty mellow brunch this morning, with steady service once we hit noon.  Nope continues to bring in a decent crowd to Trees before showtime, and Trees filled up as the day progressed. JH

Customer Comments:   

BAR Staff Observations: Eliel opened Trees and, once Lee arrived, was able to get some batching done, and got out of here once Darius arrived to close Lobby.  Lee was really great behind Lobby, with relatively few calls for MOD assistance.

Natasha opened Trees, and really set the bar up for success with her initial stock.  Miguel arrived a little late due to train issues, but communicated with me well ahead of time and I was able to swing Lee up to Trees to help Natasha until Miguel arrived.  Natasha was able to get out of here once Ashley had arrived.  JH

Miguel continues to get faster behind the trees bar. Today we had him take service with Ashley right behind him to pull drafts. It got a little squirrely there for a second, but he was able to pull it back together after I slowed him down a bit to coach him on not having to do everything himself. 

He's getting better on doing meaningful rounds and not wasting steps in between motions. Afterwards he was able to call back to Ashley to get anything from the low boy and draft lines that didn't fit with his round. 

Darius was incredibly helpful today to help pull Trees out of the weeds and did it happily. It's refreshing to see a team support each other they way these guys do. -EA

Special Events?

Staff Meeting Agenda notes: Family meal ran out before everyone got a chance to eat.  There was  confusion about how to deal with the situation and, ultimately, it was decided that those who missed family meal would all get a small plate, sent to kitchen across several different tickets.  While taking small plate orders from servers who missed family meal, some servers declined the offer, with one server placing an order and paying for it on their own as they were confused as to how the situation would be handled.  

The confusion surrounding communication about, and execution of, feeding staff who were unable to get any family meal would probably be lessened if we reiterated, or updated, the policy of what management's response to the situation is, and then passed that on to all staff.  As family meal is generally timed right as our dinner rush hits, the process of collecting orders and sending them to kitchen can be hectic and cause delays on guest tickets, too.  It has gotten to a point where weekend family meal tends to run out before everyone is fed, which not only impacts staff morale during our busiest moments of service, but also diverts the attention of kitchen and management during that same time. JH

Ashley mentioned several times today that other bartenders came up to her today to ask how to do the tree specific cocktails. Miguel being fresh, is understandable that he blanked when Trees was super busy, but others that have been here a bit longer also came up to get the recipe. Perhaps we need to have a refresher quiz for staff to make sure they know the recipes? EA

Prep List:

Going to going over house syrups tomorrow and bringing carrot ginger juice for the shrub. Also going to make demerera, popcorn syrup and anything else we might need to be caught up on. EA


Ordering/Receiving/Shipping: Baldor and US Foods should be arriving tomorrow. JH

Maintenance: The handle on the Fire Walk With Me frozen machine at Trees snapped off shortly before the third round began seating.  Ashley found a replacement stopper and handle in the bar tools bus bin in the liquor room, but let us know that it was the last one. 

Ice Machine is struggling again. It didn't produce much ice for the last round and the ice cube light started blinking red again. EA
