Manager Communication: Pretty spaced out first round, with each bar trading off busy services. Trees definitely had a small crowd by one, and then was really busy right before the seatings of the third round. JH

What a night. Well paced and consistently busy shows for the dinner and late rounds on all floors. Steady service tickets well timed and handled by a very organized bar team. The real story bar wise tonight was Trees Lounge. We had a full bar and tables through the dinner and up to the seating of the late round, with strong crowds and high energy for nearly 3 hours of service. It was excellent. Three bartenders deftly handled the continued service tickets, cocktail well and coming out from behind the bar. I only had to hop back or bus tables a few times when volume was at its highest. Humbled by how well versed in the drinks Ryan, Ashley and Tevon were and how well they balanced service tonight. Great, great night. Looking forward to this same volume plus sold out big theater next weekend for Batman. 

As managers, my biggest note is pay more attention than usual to the frequency of stocking and product behind the bar. With so much focus handling service, bartenders did need reminders on keeping frozen levels up and garnishes stocked. 

Had the closing team, once it slowed, pre-prep garnishes and some juice for tomorrow. We are absolutely going to have to regiment this stuff so it gets done. I'm thinking leaving late cut garnishes overnight for the openers on Fri-Sun routinely, have juicing done by the mids before leaving (they will have some peeled fruit for it from service) and just maintain a proactive level like we haven't had to do in a while. JM

BAR Staff Observations: Really strong opens from Chelsea and Jo. Chelsea really kept an eye on what should be prepped at Trees for cocktail service. We spoke a lot about what prep should look like going into the weekend for the new Trees menu, and I’ll pass those notes on in a separate email. 

Jo was great about communicating MubiGo needs, and held down what was a very busy morning for Lobby Bar. Tevon was able to help Jo with a surprise Spider-Man push in Th7 after he batched some drinks. JH

I already heaped some praise above, but great work from everyone tonight. Keep an eye on your mid and where you need them, Tevon was great at supporting where needed, hitting both bars with service support at peak rushes and then I had him stock both bars and do some prep late to keep the bartenders focused on service. JM

FOH Staff Observations: Servers were very prompt on drink rushes tonight, only needed to call for support once for Th2 at peak with some long ticket times. Ran a few trays and checked on them and drinks were going out from service stations promptly, they were just a bit short on hands to get them there. JM

Staff Meeting Agenda notes: Let's discuss a prep schedule this week for the upcoming busy services with regards to things like garnishes, juice and stocking the bars and new par levels. JM

Prep ListTevon made Nut Punch, Fire Walk With Me, and a Paloma keg. I made Lemonade, Simple Syrup, and Demerara Syrup. JH

Made a Brooklyn keg, Firewalk and some cheaters. We will need Lemonade, Daiquiri and an Old Fashioned keg tomorrow that kicked late. Also should make a Grapefruit Syrup tomorrow. JM

Ordering/Receiving/Shipping: Baldor Monday (Ango bitters, sugar, juices, some peel fruit and Michelada ingredients). 

Maintenance: The hose at the Trees dish machine is sticking and won't stop pouring water. JM
