Nick Friday 10/29
Manager Communication: A very busy Friday. Service went very well
Customer Comments: We had an older woman faint today while getting up from the dinner round of French Dispatch in 2. EMS was called. She stayed in the theater until EMS was able to check all her vitals and take her out. We were able to keep the crowd for the next show in the bar, and finally seated the theater about 50 minutes late. It was the last round in there so we were able to push it back without affecting any other shows. I only had to do 2 refunds and 2 ecredits. Everyone else was very understanding and seemed very happy when they were finally able to go in. The woman seemed OK when she left with EMS.
BAR Staff Observations: I cut Jenn after the dinner round since Naaj was training and there were two other bartenders. They got through the rushes fine but you could really feel the difference not having a lead running service tickets. It was Tevon, Gabrielle and Naaj for the rest of the night. I think it is good to get some of the other bartenders running that service through the busy times even if it slows service down a little. They all need to be comfortable doing that going into the holidays, as there won't always be a lead back there. Let's try and rotate that out, so it is not just Eliel, Jenn and Ian taking point every really busy rush. Especially on the weekdays.
FOH Staff Observations: Drink running was much better tonight than last week. Solid crew tonight. Shout out to Miguel, he is a really strong lead, I always see him supporting the rest of the team with whatever they need.
Hiring/Training:
Hiring/Training:
We had 2 trainees tonight, which was good because bar business was heavy, so the extra bodies were very welcome.
Natasha was on her second shift downstairs. She received a thorough POS training from Jesse and trailed Henry in the theater for a greeting period.
Naajee was on his third training shift upstairs. He seemed a little overwhelmed by the level of business. He did a good job, but I am worried he feels a little apprehensive of the amount that is expected of bartenders here on a busy night. His training is over and he says he is up for the challenge, but let's continue to work with him for the next couple weeks, and see how he develops.
86ed / counts on items: Michelada and the Mulatschak. The Mulatschak is held up at customs and should be dropping any day, so hopefully we can get some this week.
Prep List: 3 of the 4 cocktail kegs kicked towards the end of the night tonight, and we tapped the backups. We will need some new backups made tomorrow. Also all of the movie specials are selling like hotcakes. We batched a bunch tonight but keep your eyes on their levels.
Pay Outs: I did a payout for Juan downstairs for lightbulbs and such. Jess did a large payout for the haiti fund.
