Manager Communication: A slow day of service. The fire alarm went off around 5:50 pm towards the end of the first round. All theaters shut down, we had to manually get the projectors back online, issued passes to all guests that then went and finished their movies. Customer Comments: Guests that had their films interrupted were mostly just concerned with whether they could finish them, they were otherwise fine and no one made a scene or seemed upset. Manager Communication: The Open Liquor from tonight was for Amaretto on the rocks.  Both at the bar and when they went into the theater.  Nick, we need a button for the Amaretto and for Kahlua The glass was still tacky when I came in, so I re heated it and let it cook longer, should be good tomorrow. Slow all night, ran with but we got a small bar meetup of some film people in the mezz.  they had 2 rounds.  Good tippers. Ash made the white peppercorn syrup. Manager Communication: A very slow day, with a marginally busier push for the 7s but very few tickets for the 10s sold. Bar developed a nice crowd after the 7s let out for a single round of drinks and then it tapered off and we were empty for the rest of the night. Re-routed printers for the 10s to the upstairs bar and went down to one bartender and no drink runner for the final round. Manager Communication: Downstairs Frozens were left off, product tasted good.  Paolo closed and said he was pretty sure they were still spinning when he left.  Upstairs lead, William, should have also done a walkthrough since Ben was not closing. Upstairs bubblers were not cleaned, got them cleaned. Ben noticed that the alfredo garcia looked wrong, and had made another before I got in.  It was clearer this time that it was missing dilution and prickly pear, and when we added it, the level was exactly the same as his batch and it tasted the same.  I checked the recipe in the book just to make sure and it was fine.  Not sure why this keeps happening. Ash said she added everything, so not sure... Super slow night, organized walkin and Ben mopped.  We have far too many chilis. Manager Communication: Steady Sunday, typical flow of business with a bit more volume on the late shows than prior weeks to the bar. Theatres were pretty slow for the late rounds, but we got nice pre and post show traffic to HiRes and had a few folks both at brunch and dinner come by just to eat and drink. Cut to 2 up after the 7s, 1 down after the 10s, ran with two closers and one bar runner for the final round, cut at 10:30 pm. No issues, pretty tight cuts and staffing. Customer Comments: One guest recommended we post our showtimes on the sides of the marquee to line them up for people walking down Prospect Park W. BAR Staff Observations: No issues today, bar team did a really nice job. FOH Staff Observations: Max is getting increasingly strong as a bar runner, proactive with glassware bussing and running from stations, helping servers when he has down time and cleaning/generally not wasting his hours on the clock. Manager Communication: everything smooth.  The drink runner at 11 worked well.  We got everything condensed in the walkin.  Had to throw out 4 gallons of OJ that were beginning to end. Our staffing was on.  Lots of walkins for the 1's and 4's. I think for the 4's keep a kid's movie in the big theater.  Lot's of disappointed walkins for Mary Poppins, and Glass did not sell many. I will work on a bar map tomorrow as we seem to have things in their places. Customer Comments: Another customer was disappointed of no Gender Neutral bathroom. BAR Staff Observations: Killed it.  Good open, good communication.  Special shout to Michael who cleaned the windows downstairs unprompted. Manager Communication: Daytime shows were steady, never overwhelming but the 4s and 7s hit hard, both selling out in theatres or nearly so. Well handled at the bar with great ticket times, we ran 2 bartenders for the 4s and 3 for the 7s (upstairs, downstairs we ran 2 max all day) and it's nice to see the staff stretched a bit but handling themselves. Cut to closers (2 up, 1 down) after the 10s. Got a stellar push to the bar for the late shows, both from strong late night ticket sales and a 3-deep bar crowd with ticket stub discounts. Our best bar crowd for a post-theatre drink push. Customer Comments: One couple kept coming out for manhattans and complimenting us for being able to make them, they had come during our first few weeks and were super happy we could cocktail for them. Manager Communication: Bar business was great through the tens.  We had a full bar most of the night.  Ryan and her mom came by and enjoyed the space. The turn from the sevens to the tens was especially busy at the bar, and we had lots of people eating and just drinking at the bar with no shows to see. I cut Liv before the tens and ran with just Susan running for the tens. I talked to Susan just to let her know that I put the incident in her folder, and she fully understood and seemed to take it to heart. Customer Comments: BAR Staff Observations: They were great.  Both floors handled all rushes with minimal need for me to handle rushes.  Jumped behind the bar for moments when the bar was three deep and had to assist with some bussing/cleaning of the space. Manager Communication:  We had another coke gun issue tonight. Coke has a emergency service request in, so they should be out tomorrow morning, but there is no soda downstairs until they fix it. Jeremy and I were discussing employee food running. There was an order tonight that was ordered to the theater 6 service station. Also the runners tend to chase people around the building, or just leave food in the bar service well. We think that employees on the clock should get their own food from the kitchen so runners don't have to hunt them down. The temp in the bar areas is much better. It was actually way to hot in high res tonight so I adjusted the schedule. I think I did it right, but let's keep an eye on it. Also our cute little space heaters came in. Manager Communication: The couple that was at the bar, the man had a cane, and he fell while he was downstairs.  We called EMT's and they took him to the hospital.  I talked to Susan after, she served him 7 1.5 oz pours of Jameson over 2.5 hours.  She said she was trying to pace him a bit and slow down service, and did not think there were signs that she should cut him off.   I talked to her about overserving, but Susan and Eliel both said he seemed fine and were worried about her.  She had only 2 drinks over the course of that time, but they stopped serving her when she started slurring and seeming drowsy.   We filled out an incident report and the EMTs took them to Methodist to check out his legs and make sure everything was ok. Manager Communication: Slow service today, we had lots of opportunities to clean and get extra sidework done today, so we cleaned all shelves, all areas under glass mats, low boy gaskets, dry decks and frozen machines. Cut to 3 bartenders at the 7s when we were low volume (2 up, 1 down) and then went down to one on each floor when the 10s yielded low ticket sales. No issues. Manager Communication: The opening round was the busiest, and our lowest staffed.  It was actually a surprise, and I helped Hugo get the round out and run the bar while Ben floated and stocked.  It was an almost sold out round and went smoothly, but the stock was low from the night before, with no rollups left. Busy 4's and 7's, dead 10's NuCO2 didn't come, their driver called out today.  They promise they will be here first thing tomorrow.  We might need some more gf juice, as we have the cocktail with it now. Staff came together well, but the downstairs was down to 42 degrees by the sevens.  We shut down the bar after the drink rush and ran from 8 PM on from upstairs.  It was too cold for bartenders to be down there.  The managers took turns at the FilmBots station, and Ash and Grace worked the close upstairs.  Upstairs was down to 53 degrees.  Everyone handled it well, and I tried to make people take warming breaks, but these temper...

Manager Communication: Strong 4s and 7s today with a tapering off for the 10s, but given the Holiday tomorrow we definitely saw higher ticket sales and more drinking in general on a Sunday. Having two dedicated bartenders in HiRes on a holiday Monday worked well outside of the drink push after the 7s when we got hit with the 10s at service bar, but some manager coverage navigated it easily. Please make sure we are on the leads and all bartenders when it comes to owning their cleaning when batching; lots of items left washed on the dish machine or dirty in the bar sink in the prep area. Manager Communication: Strong, busy service tonight with sold out 4s, 7s and 40% capacity on the 10s. Kept staffing tight to business flow, went to closers after the 10s push, went to one bar runner at 10:00 pm and cut entirely at 11:30. One bartender down, two up from 10:30 on. Really great bar business (full bar, 2-3 deep, full mezz) after the 7s let out. Stub discount brought the party again but we kept a big group on the mezz until late. Great night. Customer Comments: BAR Staff Observations: Ben does an amazing job on service calling tickets and working through them efficiently. All bartenders today did a really excellent job, only needed manager Expo help on one occasion when we had all 4 theatres for the second floor service bar in pre-show cross over at the same time. Manager Communication: We have gotten a few comments on the Wavvy, and it is tasting lighter.  Everything on the line looks right, but may want to take a look. Busyish 7s and decent tens, 3 deep at the bar at points on the transitions. We had drinking adults today!  Felt much more like Nitehawk.  Also, people were loving the vibe and drinking on the pews (pew pew pew). Glass cocktail did pretty well tonight. Manager Communication: Pretty smooth night tonight. Nothing much to report. The Video game machines don't really take quarters (they do, but they rarely work). Manager Communication: Coke came, NuCO2 did not.  I called them and never heard back from them. All new sodas are attached. Manager Communication: Slow night of service, we got some bar push after the 7s, with seats taken up and a few mezz tables. Cut to one down and 2 up after the 7s, late push was very slight. Got cleaning projects done today, reorganizing the walk in, consolidating, cleaning the low boys and sweeping under the bar equipment. Customer Comments: BAR Staff Observations: Sasha did a nice job tonight, she really stepped up after our conversations with her. When she wasn;t busy bar running, she was in service stations helping and running glassware and then at the end of her shift when we died off for the 10s, she helped the kitchen close. Manager Communication: COKE NEVER SHOWED.  I called and argued several times. I updated the bar books, including a more direct recipe and steps for the Howard Hughes.  Slowest day yet.  I closed the downstairs bar for the tens and routed everything upstairs. I cut Hugo slightly into the sevens, and just had ash run the tens and I stayed downstairs to finish ticket sales. Cut grace as soon as downstairs was done. Everything was cleaned well.  We are ahead on all prep.  Let's go leaner on prep, especially the juice cocktails. I dumped 12 quarts of kiss the kids. Manager Communication: Solid Sunday with strong 4s and 7s and a slow late show. Ticket stubs did us a huge service again tonight, keeping a full bar through 10:30 pm and adding a nice push before and after shows. We discovered the reason for the dark Howard Hughes G&T; we are using Dark Brown Sugar, Williamsburg is using light brown. The result is a slightly more molasses-y drink and a much darker color. We have two kegs of light brown sugar syrup based HH G&T, moving forward we will switch to light. Customer Comments: Two guests at the bar live around the corner and love everything so far, but asked when we will start doing repertory programming since they don't always have first run films they are dying to see. Manager Communication: We had a dead beginning.  I think we should open with just Michael and Ash as our openers.  They can each open a bar alone, and have the brunch mids come in a bit later.  Ash mentioned this. The second round was really solid, and the 4's were sold out. Tomorrow, I will reset for the week and get everything reorganized.  The sevens are sold out again. Customer Comments: Had a 90 year old love how much we cared and took care of her,  Thanks Alexis, Michael, Mascha! Had another senior ask us if we could make sure our show times were printed in the paper for the senior center. Manager Communication: Strong service all around today, both in the theatres and at the bars themselves. We had sold out 4s and 7s and the better half of our 10s sold as well, with a few sold out theatres. The ticket promotion worked wonders for us again, filling the bar two deep and the mezz after showtimes and giving us really strong bar energy. Cut to closers after the 10s, down to two up and one down. Customer Comments: BAR Staff Observations: Josh misread his schedule and missed his shift today. Jeremy swung up and down between bars when the heavy pushes came in to give support, huge props to him. Ash and Eliel did a nice amount of batching to get us up to pars. FOH Staff Observations: Really nice to see servers communicating when they were getting backed up; sent bar runners to run all the way to seats on several occasions to support. Manager Communication:  Solid Tens, bar business til late.  full bar through most of the tens, the drink discount is great! We even got business after each of the tens. We activated the printer for 4 and 6 (ip 194 for the tens).  It is so nice!!!! One note on the downstairs vs upstairs last calls, the last last call was pretty late, and downstairs.  I routed it to HiRes so that we could close downstairs, and HiRes stays open anyways.  Ryan closed downstairs after I rerouted. Manager Communication: Max fixed the second printer for tickets.  I forgot to test it for the sevens.  Have a FOH MOD route 4 and 6 to that printer for the start of day, and send a test ticket to make sure it works. Austin Ciders Rep came by and introduced himself.  Said he would love to sponsor an event. (he also reps Half Acre) Liv inquired if we could have Josh on a few drink runner shifts.  They expressed concern about Sasha, saying she disappears for times talking in the service stations, and doesn't do the work that needs to be done during down time... let's keep an eye on that. Bar had some busy pre shows, and we had some people hanging out upstairs til 11 pm. Manager Communication: Slowest day yet, I had them clean lots of things, all glassware was moved and cleaned beneath.  Lowboys were cleaned thoroughly.  Back lowboy was cleaned.  Bottles and shelves were cleaned upstairs.  Walkin near the kegs still needs to be cleaned.  I updated the weekly cleaning schedule.  Let me know if you see anything left off. I talked to Ben about not overdoing prep.  He made a batch of coffee cinzano, which has (albeit it long) a shelf life and we have plenty.  In general, I want to go over with the leads how to look at that, and how our pars are more about having enough prepared ingredients for the bartenders to batch during down time. The batch of saved cider from last night was thick and wonky.  Let's keep an eye during opening that everyone is dating it, and on close that everyone is throwing away 2 day old product. Manager Communication: Strong 4s and 7s today followed by a slow late movie run. Bar service was pretty seamless, no issues with long times or disorganization. Kept a nice bar crowd through the 7s, had a few lingering parties until the 10s and then cleared out for late night. Got lots of cleaning done both in the back (Chris did a great job upping batches and consolidating). We are going to need to set aside time for a deep clean of the walk in as the diamond plate under the kegs is already looking rough. Manager Communication: Great busy day all around, sold out the 4s and 7s and had our strongest late night ticket sales of any day so far. Bar team crushed it. Ended up a bit over-staffed with 2 mids behind HiRes and 1 behind Lobby on top of 4 closers up and 3 down. Cut the mids before the 7s to get down to 4 and 3, respectively. Great bar crowd today compared to recent days, we had 1-2 deep up until 10:00 pm. Slow late night bar business. Customer Comments: One guest returned the Sour Monkey in the theatre twice because she thought it tasted like dish soap. We realized that she did not know it was a Sour beer and got her a Gun Hill. Manager Communication: Busiest Friday yet, full house sold out during the sevens.  We need Printer Paper that has the red warning track as it gets low!  Printer ran out during the sevens without much warning. Everything else was rather smooth.  I got a comment from a runner that drinks are hitting some tables after food.   Customer Comments: 1 Bar customer commented that we need a gender neutral bathroom (maybe one of the ones with stalls) I was stuck downstairs doing exchanges during the sevens, it was good Jesse was here to do a bit of expo.  Hopefully we can have some more support on filmbots during the rushes so we can make sure the bars are running smoothly. Manager Communication: We went to the glassware we discussed for N/A Bevs.  At downstairs bar and upstairs bar I am just keeping the plastic cups on the pass, since it is mainly for theater service.  Garnish guides have been updated to reflect the change.  THE Read Between the Lines with gin will be in a pilsner now.  It actually makes a better balance.  I was informed that a few pints of barry lyndon went out as lemonade because someone read "Lyndon" and thought it was a store and pour of Lemonade... I will make a sheet about labeling product for everyone.  One problem has been inconsistency in labels. Too much fruit came today.  Let's keep an eye on that, as we can order that later in the week as well. I noticed someone attached a new old fashioned instead of the old one. Manager Communication: Coca Cola will be out in the morning to fix the guns at Lobby Bar. Ran soda in bottles to Lobby bar from HiRes tonight and that mitigated the issue. Busy 4s and 7s today, very slow late night. Got a great bar crowd prior to the 7s and even a bit after, then really dropped off. Cut to closers after the 7s got through pre-shows. Had lots of late night time for cleaning project; detailed lowboys and bar tops and removed excess product from the low boys. Also consolidated Store n' Pours and Cambros in walk ins. Customer Comments: BAR Staff Observations: Adriana was spoken to about batching carefully and intelligently, with low cost ingredients first. Jenn made a few initial Barry Lyndons incorrectly but recognized her mistake with management. Jay did a great job consolidating the walk in and organizing/updating the par sheets.
