Manager Communication:
We went to the glassware we discussed for N/A Bevs. At downstairs bar and upstairs bar I am just keeping the plastic cups on the pass, since it is mainly for theater service. Garnish guides have been updated to reflect the change. THE Read Between the Lines with gin will be in a pilsner now. It actually makes a better balance. I was informed that a few pints of barry lyndon went out as lemonade because someone read "Lyndon" and thought it was a store and pour of Lemonade...
I will make a sheet about labeling product for everyone. One problem has been inconsistency in labels.
Too much fruit came today. Let's keep an eye on that, as we can order that later in the week as well.
I noticed someone attached a new old fashioned instead of the old one.
Coke came today, fixed the gun, but still no tonic. I had Grace buy more tonic.
Lamar prepped some Iced Tea with double the bags. I am leaving it in walkin overnight and will update the barbinders tomorrow with the new procedure.
Today was slow all day, so I had them prep minimally. There was already a decent amount of pink peppercorn gin, and we strained the new stuff. Let's make it daily practice to organize the walkin so we know exactly what we have. I pulled all the use first forward.
The shelves behind the bar were fixed and I had them put back the booze.
In times are in for bar runners and bartenders for next week.
We got a couple of neighborhood bartenders, including Steven the owner of Owl Farm. We stayed open til 1 AM!!!! cause people were spending some money.
Customer Comments:
Overheard customers saying the upstairs bar was really nice! Let's make it better.
Steven from Owl Farm said he lives around the corner, and is excited to have a cocktail bar with decent hours in the neighborhood.
One customer mentioned it was too bright tonight.
BAR Staff Observations:
Slow day, I cut the openers when the closers came in. I cut the mid in the lobby after the sevens.
Got the walkin organized. We should go over keg change practices with all the bartenders. I showed Malka how we need to rotate it, but let's start getting on that.
Malka was a tiny bit behind just cause she has been out of town, but she set up the bar quickly and will get everything else down quickly.
Bubblers and speed pourers were cleaned tonight during the sevens.
Kegs were stacked up during the tens.
Rebecca did the tens herself and closed downstairs herself
I cut Grace after the tens and the bar was mostly closed, cause Lamar said he was fine with closing the last bit alone.

86ed / counts on items:
We are 86'd Saratoga Still Water
No Backup of Cellar Door
Low on the backup of Merman IPA
Prep List:
Taste and strain Iced T.
1 Keg Negroni
Be careful on not overprepping. We still have plenty of the old stirred cocktails. I will walk through the walkin when the prepshift lead gets in.

Maintenance:
Need gun tonic.
The shelves were fixed, and a temporary fix (a little silicone is what it looks like) was put in the cracked bar.
Not sure about the electrical on the downstairs bar. I added it to the maintenance list.
Mobilebytes Issues:
If an item has a count on it and it is voided (not comped) it does not go back into the system. We have 1 bottle of saratoga still water left in house, and I updated the count.
