Manager Communication:
Fairly mellow morning, with theaters definitely filling up throughout the day. Having an extra pair of hands at Trees (Fran) really helped the first round go very smoothly. JH
Hand-off was smooth between daytime crew and closing crew. Today was steady all around, but never got too crazy. Had a good crowd in Trees stick around for the Knicks game (until it was totally out of reach, anyway), and aside from some printer shenanigans, the night ran very smoothly too! - IP
BAR Staff Observations:
A new line up of brunch openers with Greg and Matthew, and our trainee (Fran) on day two of training, slid right into an easygoing first round. Tevon was able to catch us up on the cocktail kegs that kicked last night, and Gabrielle was in shortly after. Greg got cut first, and Matthew got out of here once all closers were in. JH
Greg and Matthew were on their way out as I came in and the closers came in shortly after me. Family meal crossover was smooth - everything was well set up for the evening's service. Gab, Patrick and Lydia were upstairs and Tevon and Jeshua were in lobby. Lobby was solid all night - Trees was good - service bar was running with no delays, but I think in particular Patrick and Lydia can work on being a little more aware of the bar around them - for not the first time, I had to tell them to stop chit chatting and greet the guests at the bar who were clearly ready to order - this goes with the general note for the whole team to avoid congregating near the pass. Once I pointed it out, they were better about it. - IP
FOH Staff Observations:
FOH Staff Observations:
Caleb was a beast tonight. 4/6 was busy and he was up and down those stairs constantly. Good work. - IP
Hiring/Training:
Hiring/Training:
Fran, Day 2: Opened Trees with Matthew, completed Orientation with Rebecca, and trailed Julianna for his server trail. Seems to be comfortable behind the bar and with our menu, just needs time to practice through repetition. Matthew filled out the binder, and echoed a lot of these notes. JH
Staff Meeting Agenda notes:
Ran the spill tab for the Thermo Reactive Core spill from last night. JH
Prep List:
OF Keg kicked today - will need another made tomorrow. Keep eyes on both N/A specials - batched more of each today, but both are selling well. The bars are well stocked with FWWM, but there is only one backup 12qt cambro in the walk-in. Will need to be made before the afternoon rushes get underway. - IP
Ordering/Receiving/Shipping:
Ordering/Receiving/Shipping:
Two sponge mops and another packet of dragonfruit powder arrived. Powder is on the Bar Prep lowboy, and the sponge mops are on the riser to the right of the Liquor Room door. JH
Frizzante arrived mid-service, and we were able to use some Cremant bottles from the walk-in to cover the hour or so we were out of it. JH
Maintenance:
Maintenance:
The ice machine at Trees was jealous the internet was getting all the attention and is being dramatic again. The coolant tank is getting extraordinarily hot and the machine has been having trouble consistently making ice. The freezing cycle will start when you turn the machine back on, but it only kicks out a few sheets of ice before the tank gets superheated. I've left the machine off tonight to avoid anything catastrophic. Openers will have to fill their ice wells from the lobby machine tomorrow - let's be judicious about which wells we need the most in case the ice situation is wonky throughout the day. - IP
Mobilebytes Issues:
Mobilebytes Issues:
The connection between server stations and the printers at the bars and in the kitchen went offline for some time around 4:00pm or so. Floor managers took lead on reconnecting the building, and I stuck around Trees and Ian took Lobby, so that we could keep an eye out for test tickets. I'm sure the FOH Blog can go into more detail, but the outage lasted for a minimal amount of time and service was not overly disrupted at either bar. JH
The outage happened once more during the dinner rush, but Carly and Jared made quick work of it. As far as we could tell it was just a faulty connection in the kitchen socket server - we reconnected it, rebooted it, and were off to the races. - IP
