Saturday 7.01 Edgar/Jenn



Manager Communication: Solid open with some walk ins for Nashville. There was some breathing room before Jaws, so the bars were able to set up and get going with ease. That being said, business was steady at both bars in regards to both service tickets and guests. I was able to supplement service wherever we needed. EA

Steadily busy throughout the evening, with pretty decent crowds at Trees throughout the night.  Had a few BRIC people come through, but not many. JH

BAR Staff Observations: Solid work from the openers today with the consistent flow of people at both bars. Jenna pretty much ran the lobby and started garnish prep for the building while Andrea tackled the Jaws rush and Trees crowd. Once Lydia was in she focused on juicing to keep us going for the weekend while Maya jumped straight into the action at Trees. It felt synergetic and everyone had hands in to get the work done. EA

Was able to get both openers out just after six.  Lydia and Matthew took turns floating up to Trees when needed, and were great about communicating when they needed assistance at lobby.  Ashley and Maya crushed it at Trees, both of them really doing a great job alternating between theater and guest service.  Being down a bartender from our normal Saturday staffing was definitely felt, but it never impeded service.  

Having Ashley behind the bar was a huge benefit, as she is really great about directing service and restocks in a holistic manner.  Additionally, Maya was great at Trees tonight, and took the majority of the fourth round's initial service pushes at the pass solo while I expo'd.  Matthew stuck around after closing lobby to give Ashley a head start on closing, which was very helpful as we neared the end of the night. Overall great service at both bars tonight. JH

FOH Staff Observations: Servers were jamming today and kept the service bars moving all morning. EA

The service pass at Trees got pretty backed up during the first hour or so of fourth round seatings.  It was primarily due to the fact that both Th1 and Th2 grew in sales during the third round, and we no longer had the hands for support.  Overall, service was not negatively impacted, just something to note for scheduling.  The servers in Th4/6 were great about getting down to Trees during some very busy screenings.

Pre-bussing was also an issue again when it came to flipping the larger theaters between the third and fourth rounds. JH

Hiring/Training: Jeshua replied almost immediately after I reached out to him. Sounds like he's ready to start training. I feel like maybe we should wait until after the 4th to start him though since that's gonna be a long day and possibly chaotic. EA

Staff Meeting Agenda notes: One of the cold brew kegs has been pouring a majority of foam so we took it out of service and hooked up a different keg.  The new keg poured without issue, so there may be something faulty with the initial one we had on the line.  I will reach out to Stumptown on Monday to see if we can get either a credit or replacement. JH

Prep List: Fire Walk, Lemonade, Simple Syrup, and an Old Fashioned keg will need to be made at some point tomorrow.  Both bars are stocked and there is still some of each in the walk in, but it will definitely need to be replenished before evening service. 

We used the last of the Ballantine 12 to batch Hotel today.  JH
