Saturday 07.22 Jenn/Edgar
Manager Communication: Nonstop Boppenheimer. The Truman Show actually gave Trees a fair amount of time to preset and prepare for service, while first floor had the first Barbie screening of the day. The spacing between load ins in Th1/2 was really appreciated, and service never got backed up at either bar, despite simultaneous back-to-back sold out screenings on all three floors. JH
Just to echo above. Openers and the first mid will have some time to prep tomorrow before we enter sold out service again tomorrow. Garnishes were depleted by the end of the day and there's a couple quarts on each floor.
That being said, from the afternoon until the last seating, it was nonstop at both bars. Lobby was pretty self sufficient today and supported each other with stocking and switching off between box office and service tickets.
The 8th body today was immensely appreciated and made the difference between chaos and a smooth shift.
Monday is looking like it's building up and we might need a 5th person for the day, but I'll see what tomorrow looks like and start to reach out out then. We might even just need someone for 5-6 hours instead of a full shift to get us through the dinner and start of the late round. EA
Customer Comments:
BAR Staff Observations: Excellent job behind both bars today, with everyone arriving ready to jump right in and being very amenable to being moved around the building. Miguel and Natasha had swapped bars, and both set each bar up for success, which gave me a chance to prep some infusions and syrups before the sold out Th1/2s began seating. They had communicated beforehand about prepping citrus, so we never had any hiccups during service. Shoutout to Miguel who handled Lobby solo for long stretches of time today like a champ, with minimal support.
Pay Outs:$150.00 (Eliel DJ) JH
Lost & Found?: Chef John found a set of keys in the mens bathroom at Trees. JH
Ordering/Receiving/Shipping: Once the Amazon orders arrive tomorrow, we should have enough Barbie product to get us through the week, JH
Mobilebytes Issues: MobileBytes crashed during the checkout process tonight, so we weren't able to get a printed copy, but all money was accounted for. EA

Gabrielle arrived as the first sold out Barbie in Th3 was still seating, so she helped Miguel with that and then floated upstairs to Trees in time for their first Th2 Barbie. Once Lydia arrived, I was able to pull Natasha to start some batching, and she floated back and forth between service and batching until our more popular items were well backed up. Having Jeshua in addition to Matthew arrive at four was excellent, and needed. By the time Ashley came in, Trees had a sizable bar crowd and several sold out theaters at service bar, and she slid right into service without issue. Both openers were able to get out of here just around six, and bar was rolling happily along. JH
Adding to above. It was full throttle all night with 4 bartenders needed upstairs for a fair amount of the afternoon and dinner rounds. It wasn't until Gabrielle reached her 10 hour stretch that I had to send Lydia downstairs to help Maya out with the last rounds and restocking. It was still rocking upstairs though and Ashley really took charge behind the bar and everytime she left the bar to restock, everyone had their positions and tasks. It streamline service pushes and helped everyone stay focused.
Jeshua is an incredible asset to the team and everyone had nothing but great things to say about his hustle and the initiative he takes when on shift
FOH Staff Observations: Afternoon round went smoothly with runners running trays and the flips being seamless, however after the dinner round we hit some sort of wall in TH1 were during the flip where Jeremy brought down about 11 to 12 racks during the flip and casually mentioned how servers were sitting in the station.

In any case, pre bussing was not happening in there which put stress on the bar to quickly turn around the glassware during a pretty busy sold out time as well. Though service didn't suffer, getting the glassware washed while simultaneously pivoting into a well sold Th1 and then quickly to a sold out TH2 Barbie was a little chaotic and set us back quite a bit to scramble and get glassware again.
Let's make sure that everyone is on top of pre bussing please! EA
Staff Meeting Agenda notes:
86ed / counts on items: Very low on Siete Misterios. I did bring a bottle over from WB, but the Y tu Mama Tambien cocktails are starting to pick up steam it looks like, so we might need to bring another over.
Prep List: Watermelon Gin & Tonic keg pars should be upped from two to three, as we are flying through product. We should also be making more Simple Syrup than usual, as we are primarily making quadruple batches of the Barbie special, which uses up a bunch of Simple. JH

Made a third Watermelon G&T. Just needs to charge.
Was able to batch everything except Paloma (No Ancho) and Days of being wild. I made a double Manhattan Project since it's selling well and it'll carry us into the week. We can also make due with more Simple as Jenn mentioned above. We have one full one and might as well start making another at our earliest convenience. EA
