Saturday 07.15 Jenn/Edgar



Manager Communication: Pretty mellow first round, with Muppets leading the charge for the first round.  Sales grew throughout the day, and most theaters had filled out by the time we got to the dinner round. JH

The afternoon and dinner rounds were pretty sold out. These were followed by a pretty sold late round as well. Lobby was pretty nonstop yet swampy all day. Trees finally got some life after the A/C kicked on to cool down the room so we had a decent crowd for some of the evening. 

I got one of the big fans going in the lobby to combat the heat while the A/C is down. EA

BAR Staff Observations: Despite the heat, all staff was in relatively high spirits and rolled with the heatwave. Natasha, Lydia, and Matthew definitely felt the brunt of the heat in the lobby but worked their way through it. Great second day of training it sounds like for Jeshua, more on that below. 

Maya, Ashley, Gabrielle, and Ian were in Trees today and rolling with the service tickets and the guests at the bar. 

One thing I'll mention is that Ashley felt like there may have not been enough prep done in the morning as there were not enough lemons and limes cut. It might have been due to business levels or may have fell between the cracks, but let's make sure the openers are cutting garnish to prep the day and continue to do so when the mid gets in to make sure we have enough for the later rounds. 

Some openers are better at taking initiative than others, but let's make sure both floors are communicating and splitting the work. EA

FOH Staff Observations: Very difficult time prebussing today. The bar is already tight with glassware due to a lot of breakage recently, but it was pretty evident during flips that glassware could have been bussed better as well. 

I was able to speak with the MODs on duty, but let's continue to remind staff that it's imperative that glassware on the top floors gets bussed back to Trees as soon as possible to keep the rotation going. Otherwise we grind to a halt. 

Also, there were a lot of tickets for pints of ice. Just putting it out there again that this makes it really hard to keep up with service when half of our reserve goes to water. Perhaps we can revisit the idea of buying larger plastic cups?

Hiring/Training: Jeshua had Day 2 with Natasha opening Lobby, and was able to complete his server trail with Julianna and Monica during the second round Elemental screening.  Really strong behind the bar, and the notes from his last two training shifts have mostly been about just getting more practice with Nitehawk service and ticketing. JH

Special Events?

Staff Meeting Agenda notes: Edgar and I met with Gabrielle for her Annual Review today which went really well.  She's happy to be a part of the team, and is content with how we have been able to implement and streamline bar service and changes. JH

Prep List: Coco Lime, Firewalk, and Paloma from what I saw. Definitely get the openers on garnish duty after open as well. Perhaps we need to up the pars more again for the weekend? EA

Ordering/Receiving/Shipping: Umbrellas and coffee stirrers arrived from Amazon, labeled and stored in the liquor room. JH

Maintenance: Palco was here this morning to install the compressor, but left without talking to anyone so we are unsure what was completed and what is in service.  Gil has reached out to Matthew, who will hopefully get us some more information. JH

The A/C at Trees and half off lobby (on the men's room side) seems to be kicking again. Trees was at a cool 68. EA
