Saturday 12.03 Jenn/Edgar

Manager Communication: Busy busy morning.  Elf and STB both sold incredibly well and kept Trees busy all the way through the morning.  Had a fair amount of people pop in to watch the World Cup while waiting for theaters to open, and then even more came through for Brunch Club. JH

Dinner was just as busy with all theaters selling well including some sell outs. Black Panther continues to hold out and fill the theaters and Violent Night following pace during dinner. The first floor remained pretty sold during dinner and late rounds as well keeping the building moving at all times. 

Is the kitchen still using our peeled oranges for the jerk tacos? We have a bunch in the walk in and to my knowledge we aren't using fresh squeezed for mimosas. If anyone has any insight on this, please let me know. EA

BAR Staff Observations: Absolutely phenomenal job behind both bars today.  Both Ashley and Natasha set both bars up for success with full restocks before doors, and slid into service without issue.  Chelsea arrived right as STB was starting, so popped up to Trees to assist with service.  Once Gabrielle came in, both bars got restocked, Ashley and Chelsea got some batching done, and Chelsea swung back downstairs to help Natasha with a service push.  Really great teamwork and communication today. JH

Following up on Chelsea, she was the glue today that held both bars down with her ability to keep moving between rushes to help and rotate breaks for the dinner bar staff before she was gone for the night. All bar staff was great about keeping the service flowing and keeping a rolling stock list that allowed us to stay ready the entire night. Gabrielle kept up pace at Trees with the guests while Ian took point and had Miguel as his back up. Sean was great about taking on the Lobby when I had to pull Chelsea up at times and was able to close out service strong. EA

FOH Staff Observations: Really great work running drinks to theaters during the opening round rushes at Trees.  Nothing lingered at the pass, and servers have been really great about pausing before asking questions to bartenders and bar managers, which really helped service go all the more smoothly. JH

Special Events? STB sold very well.  We will definitely need to prep some more of the infusions and batches for STB before the next one, as the two this week got us through a bunch of our stock. JH

Staff Meeting Agenda notes: Bar mats were not brought to either bar until about twenty minutes after doors had opened.  Pre-doors we were very busy so no one caught it until we were already in service.  I know that we have had issues with porter tasks getting completed before brunch opens, so just something to continue to keep an eye on.

Also, this was mentioned in the FOH AM blog, but Natasha toppled a stack of glass racks this morning right before doors by Th3.  The front wheels caught on the rugs we had out for the rain.  Since we'll have those mats out a lot more often in the winter months, maybe a quick note on the next weekly bar email to keep an eye out for them when transporting glassware. Sam, Jeremy, and Matthew were quick to step in to help with clean up, which made things a lot easier. JH 

Prep List: We'll need some Firewalk made for sure. Potentially we'll need Dylar, but going through mobilebytes and seeing how much we had at each bar, we might be ok. Everything else was superstocked and might get us through to Monday. Eliel, please recheck whenever you get a moment to make sure I didn't miss anything. EA

Maintenance: Jeremy mentioned that the door between Bar Prep and the area outside of the MOD's office will sometimes not close completely, when otherwise unimpeded.  I don't know if it is a magnetization issue, but added it to the Maintenance Log. JH
