Manager Communication: Slow first round today, plenty of time for openers to clean low boy bases and stock up. Not much else to report from early service. JM
Second round was pretty busy for a weeknight, helped along by West Side Story and the Found Footage Festival Screening. Last round had some decently-sold showings as well. JH
BAR Staff Observations: Chelsea got stuck in traffic and ran 15 minutes late for her open. A well stocked bar from the close in lobby made it easy to roll into service. Great team on today with Gab, Chelsea, Eliel and Ian. JM
Special Events? The Found Footage Festival screening in Theater 1 was a treat. It sold fairly well, and there was a small crowd afterwards at the bar checking out their merch table and getting one last round at Trees. JH
Staff Meeting Agenda notes: At next week’s menu meeting, when we get to the bar portion, I would suggest including a quick review of how to navigate the glasswasher at Trees. There is still some confusion about where things go and how they should be sent through the machine (e.g. double stacking glass racks in the machine, not placing a cover over water glasses, leaving dirty racks in the wrong location). JH
86ed / counts on items: 86’d Barrier White, Evil Twin Sour, Finback Pilsner, Lambrusco, and Mulatschak.
Prep List: Waiting on some more items to arrive to batch the new drink specials for tomorrow. JH
Ordering/Receiving/Shipping: Lots came in today. With the elevator down we had to get creative, big thanks to every for help from the bar team to Jeremy and Jeanette, it seemed like everyone lent some help. Baldor en route tomorrow, all other orders came in as placed. JM
Maintenance: The frozen machine with Ginger Lime at the far end of Trees kept seizing during service, so Ian defrosted it and emptied it. He cleaned it at the end of service and realized that the black spiral portion of it had not been reattached properly, so it had not been rotating causing the product to seize.
Just something for bartenders to keep an eye on when cleaning the machines on Sunday. JH
