Manager Communication: Doing that fake DOH walk through, oh yeah.
I am opening tomorrow without Ian, he made me aware of this, so I can give my first shot at cleaning and reassembling the bubblers alone. Nervous about this, but hope I remember. If Tevon is allowed to come in early to help me reassemble that would be much appreciated. -LB
We had a bar meeting today and discussed this past weekend. Touched on staffing protocol and troubleshooting/contingency plans in potential future catastrophic events. - IP
BAR Staff Observations:
Today was a mercifully steady evening and the team definitely needed it to be. Everyone is definitely run ragged after this past joyride of a Memorial Day. Lydia and Darius were great during the party. Very personable - however, their preparedness and proactivity left a little to be desired. Just want to reiterate to all openers that regardless of business levels, the entire Trees lounge bar must be fully set up every day. I jumped in to help with a crowd at the bar and I had to run to several different places (Trees, Lobby AND Bar Prep) just to get what I needed to make a Sazerac. We JUST had this conversation - so I was very frustrated. Also, there was a noticeable lack of hustle when it came to replenishing glassware. They would get down to nothing on the dri-decks, and then ask me to start unloading glassware. We were nowhere near busy enough that they could not have been unpacking glassware as they went and never had an issue. These are some of the notes I touched on in the bar meeting that I would love to talk about with the full staff when we have a full meeting. - IP

It was the usual suspects for me tonight - Rebecca and Erika just make it look easy. Raekwon was also an absolute gem tonight - helped me bring all the food trays and platters down to the kitchen from Trees. - IP

Jess organized a little mixer for some folks with the Producers Guild. They were very nice and easy guests. Given the laid back nature of this event, it was fine - but in future, it would be great to have a little more communication and planning going into any given event. The bar staff did a great job bussing the floor and tables, and everyone in the party seemed to have a great time. - IP
Prep List:
Marg keg, Sad mix (half batch), to infinity and beyond. Ian will do OF keg. but that can wait til I have a lead tomorrow? I feel like the burden of batching is left to Ian and I all too often as we don't have leads or enough hands when we are working. I stayed almost an hour late today to do this. -LB
I concur with Lauren. I find very frequently that I will make a note in this blog about things that will need to be done the following day and it feels like a lot of the time, right when we start to get into the crunch of the dinner rounds, all of a sudden we're low on something that I noted needed to get batched. Then I often find myself running to the back to throw something together that didn't get made between open and the dinner round, or one of the leads is pulled away from a busy Trees or Lobby bar to batch what could have been made earlier in the day before busy service really gets underway. I think going forward, we can be better about prioritizing readiness of product before business picks up in the PM. - IP

Gus and I got the lobby bar ice machine to get itself in gear and start pumping out ice again. Just keep an eye on it that it doesn't think that the "bin is full" when it isn't. - IP
