Sunday 6/25 Eliel/ Edgar
Manager Communication: Easy open with the later time today. Smooth not too busy first two rounds. EL
Dinner round was a bit chaotic. Got a call from Nathaniel as soon as I was in regarding flat soda coming from the guns on the ground floor. After inspecting both the NuCO2 tank in the soda closet, I narrowed down the problem to the compressor in the lobby bar.
That being said, I was able to coordinate with Wyatt, Carly, and Nathaniel on a game plan for the rest of the sold out afternoon and dinner rounds. We decided that it wouldn't be cost nor time effective to buy outside soda since the compressor for Trees was working fine. I elected to use CH2 on the walkies since no one uses it and coordinate with Carly and Jenna to radio up on the fly soda needs. It worked out and we got through a busy dinner round.
This, in conjunction with a struggling ice machine made for a hectic, but workable Sunday. Thank you to all the FOH managers for helping us get through that mess. Other than that, the late round ended smoothly with lower numbers to give us a reprieve.
I was able to finish refreshing the bar signage and put them up with some command tape. I overshot the amount of frames we needed and now have an extra smaller one just in case any of the departments need it. EA
BAR Staff Observations: Maya opened Lobby and Andrea opened Trees, besides the Ice, open was smooth. EL
Great communication across both floors regarding assisting each other. Tevon really took the lead for the team since I was away dealing with little fires everywhere. Darius was great about working the floor and glassware as well as routinely checking in on Jenna in the lobby. Couldn't ask for a better crew to roll with the punches. EA
FOH Staff Observations: All the staff held it down and got drinks out. Props to the servers in the lobby for rolling with the punches regarding the Soda issues. Kaya turned it into an opportunity to upsell her theater during the dinner round with lemonades and strawberry lemonades instead. EA
86ed / counts on items: 86-Neversink Gin and Ruby Hibiscus. Count- Hard Kombucha (3), Low- Sauvignon Blanc (No more in walk in or Liquor storage),
Prep List: Lemonade, Strawberry Lemonade, Arbol Tequila, Jungle Bird, City Of God, and Cantina Machine. EA
Over/Short on Banks: Trees was over $21. Wyatt put it in the over/under envelope. No one could make any sense as to where it came from. EA
Pay Outs: $13.25 Limes & Lemons EL
Ordering/Receiving/Shipping: Received the rest of the bottle cappers from the Amazon order. All four are in the parts bin in the Liquor storage and ready to be split between both locations. EA
Maintenance: Trees Ice Machine still not working, still displaying error code 7 temp sensor failure. I reached out to Dio and they said they had to order a new sensor. As of now I’m waiting for a response to when they can come. EL
Adding to this, I spoke to Dio and he has to order a sensor for the ice machine. Earliest he could have gotten here is Tuesday. I alerted him that Tuesday doesn't work since there will be no one in the building due to the anniversary party so we have a tentative date of Wednesday, the 28th. I'll follow up on Tuesday to confirm as I'll be the opening bar MOD on Wednesday and also let him know that we wanted to schedule a cleaning for both machines for menu flip anyways to get it out of they way.
That being said, the machine finally started producing SOME ice this evening, but I feel like this sensor has given us trouble in the past and it is probably time to replace it as we get into full summer mode to prevent another stressful, ice strapped weekend.
Now for the soda gun issue. As mentioned above, I sussed out that it was the compressor (the one in the lobby over the soda bags) itself that was give us trouble, and not the delivery of gas. The entire ground floor had flat soda and according to Darius, no one really sent soda back up until the point Nathaniel called about guest issues with flat soda.
I was able to set up a service ticket with Coca Cola regarding the compressor and they were actually able to call back today to set up a service call. They needed a card up front to set up the call so I used the Amex, but haven't received an invoice in my email yet (The regular customer service line was closed today due to being outside of office hours. I'll reach out to them during the week to try and get an invoice for Bogi.). In any case, they were able to escalate the service ticket to top priority and will have someone in to maintenance the compressor in the next 24-48 hrs.
Jenn, I gave them your contact info incase they don't come tomorrow and come Tuesday instead. I also let them know to come after 4:30 pm so we would have a bar manager on duty. If they don't come by then, let me know so I can follow up Wednesday morning. Here's hoping we can have everything squared away by the long weekend. EA
