Manager Communication: A mellow open with our two special holiday screenings, that quickly ramped up once Spider-Man hit the larger theaters. Great work all around today, and a decent bar crowd from 4-10.
BAR Staff Observations: Busy day behind the bar, and everyone did a pretty good job. Openers, Dylan and Natasha N., did a great job setting both bars up for success this morning.
Natasha K. ran just about thirty minutes late, I believe she was confused on her in time. But, once she and Ian arrived, it was a smooth transition into busier rounds, and I was able to cut both openers shortly after closers arrived.
I had Jo and Jenna lead the service rush for the last two seatings of Spider-Man. Jo is really fantastic at keeping busy and transitioning from service bar, to guest service, and keeping a running stock list. Jenna had some issues remembering new menu items, but was able to gain her footing as the evening went on.
I reviewed the Toddy urn breakdown with closers, and Gabrielle, Jenna, and Jo were all set for closing when I was headed out.
86ed / counts on items: Hudson Cider, French 75 (details in Maintenance), and Lemonade are all 86’d.
Prep List: Finished Bloody Mary Concentrate and batched Bloody Mary this morning. Lemonade and Demerara Syrup need to be batched tomorrow.
Pay Outs: I brought down a case of Four Roses to Kitchen, but neither myself nor John knew how to ring it in for tracking. So that will need to be done sometime tomorrow.
Ordering/Receiving/Shipping: Received two boxes of Grapefruit Juice.
Maintenance: Came in to the ice machine at Trees blinking red under ‘Status,’ and it had stopped making ice. Nick said that means it is descaling, and should resume function. There was enough ice to open Trees, and for the rest of service bartenders just grabbed ice form Lobby Bar. As I was headed out, the light was still flashing and no new ice had been made.
FOH Staff Observations: Henry, Eduardo, Miguel, Sarah B., Jovani, and Erech have all been standout stars when Service Bar at Trees gets busy these past two days.
Staff Meeting Agenda notes: We need to add a ‘Ginger Beer’ button to Mixers for liquor. Additionally, adding a Tito’s upcharge button to the Moscow Mule would be great.

When running the glasswasher at Trees for the first time this morning, it began spitting a jet of water out of where it drains. Dylan realized that the spinning bar that shoots water up was missing a cap on one end, causing the deluge. We grabbed a cork and placed it in as a temporary replacement, and it seemed to do the job. Until the stopper is replaced, just check that the cork is still stuck in and not inhibiting the bar from spinning during the wash cycle.
Had a fair amount of issues with several different draught lines today.
The chargers for cocktail kegs do not appear to be working. They make some sounds and vibrate for a few moments when first inserted, but do not actually charge the kegs. Because of this, we had to 86 French 75, as the backup keg was uncharged.
The Old Fashioned draught line just would not pour today, and I could not find any reason why. We have been using speedpours for service for the time being.
The Hudson Cider draught line was unable to maintain pressure throughout service, and I had to go to the walk in every time a pint was poured and run product through the top cap until the bobbin floated. This worked until the last seating of Spider-Man, at which point it would only pour foam, so we 86’d it.
