Manager Communication: HAPPY NEW YEAR! David D, the security guard on today (little David) showed up to work a little extra.  We all think drunk.  Too intense with customers, too loud, and then, after Caleb clocked out, while he was waiting for an uber, the security guard showed Caleb videos on his phone with naked people.  I talked to the other MOD's and then had David leave.  I told him we were fine to handle the rest of the night and to have a good holiday.  He was excited.  I did not discuss why, just told him we were good for the night.  This should be brought to the company's attention.  And I would appreciate if we never have him here again. NO COKE!  Still only bottled tonic!  1 bottle upstairs, low downstairs.  Buy tonic in the morning.    I had an insight for a solution to the downstairs bar gate, but it requires us to talk to closing managers or leads.  We can leave it all the way down while guests...

Dec 30 2018 PM

Manager Communication: Lots of batching and organization done prior to cutting staff tonight due to steady but not overwhelming business. Cut the openers at 4:45 pm when PM crew came on, cut the mid shifts after the 4s, cut the non-closers after the 7s. Had four on HiRes and three on Lobby for the busiest portion of the night. No issues. Customer Comments: Had a guest return the Brooklyn Raw, not expecting the sour notes. Opted for Austin East instead. BAR Staff Observations: Chris is a very organized batcher, did a great job and did not over-batch. Good instincts, worked clean. FOH Staff Observations: Hiring/Training: Sick Leave/ Call outs: Special Events? Staff Meeting Agenda notes: 86ed / counts on items: Prep List: Batching healthy going into the week. Low on Perry's Tot; we have plenty of Barry but not enough to make more than a half batch of infusion, so we held off for now. Manager Communication: Can we be very clear with staff and management about age policy?  I have seen many strollers, and am still unclear about what we are doing about that policy. Manager Communication: Coca Cola came out this morning and was supposed to hook up the Tonic syrup for the gun. They instead checked the already functioning  ginger ale, confirmed that it was working and left. They will be back Monday to hook up Tonic. We had yet another Coca Cola issue later in the day when one of the soda guns (middle well HiRes) erupted and started firing syrup and CO2 into the well. One of the turn off switches inside of the gun mechanism broke off. We cut off the gas to the upstairs bar but had to serve soda only from downstairs. Worked fine, we filled large bottles and put them in the wells. Coke still not out to fix but will be here, they promise, by EON. Customer Comments: One guest said that they were disappointed that the slaw on the chicken sandwich was just raw vegetables and not dressed. Manager Communication:  Theater 2 turn time is short for the turn from the sevens to the 10s so we need hands there.  Ben was leading it, and I jumped in as soon as I could, but we need hands on this one especially when there isn't a strong lead helping the theater Somehow the 3rd barbinder turned up.  On sunday I will go through all 3 and make sure they are all up to date Bar binders and Runner sidework are up to date except Ginger Syrup RAIN.  Had Bartenders handwashing glassware. Glasses at end of night were not cleaned.  all stuff at dish needs to be run, icewells were not burned.  still no drainage by end of night  No late night at all.  No one stopped at the bar on the way out.  Last call 1 am.  Customer Comments: Pretty positive today. BAR Staff Observations: Make sure all cider urns are getting dated. Bubblers too.  Dating needs to be kept a closer eye on. A few times bartenders were storing white, spar...
