Also, Ian and I noting that the prep shift on Friday could use the time to do some of the more intensive syrups, like the grapefruit cordial which we have none of and do need if we have to batch a Rebel keg. Also emptying partial emptied liquor boxes in the liquor room. I picked up the box of coconut rum to put away and the other five bottles still in the box nearly fell through the bottom onto the floor. Happy to make a flow chart/checklist to facilitate the prep shift.-LB
On days when I am the mid and the afternoon is slow, I may opt to come in a little later so I can support the later rounds as needed, if that is alright. I hung around til almost 10 to make sure everything was smooth for the last big seating. -LB
BAR Staff Observations: We will miss Bryan. Played some cheesy goodbye songs for him tonight.-LB
They are adapting to the new work flow assignments at Trees. I had the idea of making sure we are set for the next morning when we cut any leads on Saturday night. Just make sure we have enough bloody mix, FWWM and lemonade primarily.-LB
So to be blunt, Patrick did not really care for the assignment today. I gave him swing, he reluctantly bussed, but got into it later on. I was doing expo and trying to catch his eye, but he was doing more front facing service. Which is fine, both him and Greg banged it out tonight and it was busy all around. Gab owned the service well, however I jumped in as hands for a bit, so did Ian. Glassware was in short supply. So everyone pitched in to make sure we were on point. All in all, I would say it was pretty good, however the flow of each position might be rigid for some. I deliberately put Patrick in swing as he often likes to have more cemented feet. Sinners was real busy from a beverage stand point and I think they did a great job doing all of the service as a team. -LB
I concur with Lauren's assessment. I had to directly remind Patrick to get out to the floor to buss, and while he did seem slightly perturbed, he did get over it and do the job as required. There was definitely a tendency to congregate near the service pass, so the more we can keep on them to be front facing the better. Also, I too am going to miss Bryan. What a nice, friendly guy. Wish him the best. - IP
Hiring/Training:
Jazmin had her fourth day of training with Natasha, and they opened Trees together. The big theaters were both under 100 for the first round, so Natasha had Jazmin take lead on the service pass so that she could get some more ticket experience. Overall, another good day of training, with the main notes being that Jazmin needs to work on Trees cocktails and MB stuff more, but both of those come with repetition. JH

Lauren had a great idea about adding a frozen cocktail to the Trees menu for summer menu reprint. We have the frozen space and guests go gaga over frozen drinks. JH

I took the last bottle of Bourbon Cream from the bus tub for ST&B and I entered a count on the POS. Gus we will need to order more of this creepy liquid. -LB

Matthew was able to knock out a fair amount of batching shortly after he got in, especially since the larger theaters mellowed out for the second round. I also made a big batch of Simple (we have made a batch each day for the last four days, so be sure to keep an eye on walk-in levels). JH
I made Chai Syrup. Had Natasha batch some cheater back ups. Matthew made a cobra chai. Will top off the syrup needs tomorrow.-LB
Had Gab throw together two lemonades at the end of the night when she restocked the bar before she left (great call, Lauren!). The Junglebird chambers are full and there is some backup behind bars, but we will likely have to make more tomorrow. Also will need to make a backup OF Keg tomorrow. - IP
