Manager Communication: I got a bottle brush for Trees lounge and put a hook up for it, it is now gone. It is useful at cleaning stubborn dishes if anyone has the whereabouts.-LB
We are out of the cinnamon toaster business. Gonna ask Jenn to go over STB with me.
Patrick and I are making cocktail bitters for the upcoming menu. So I ordered mason jars from Amazon, in the interim so we can get started I will bring my own tomorrow.-LB
Yet another busy evening at Trees Lounge. Bar team and management team was firing on all cylinders. Great work all around - IP
BAR Staff Observations:
Gab and Lydia held down the lobby and Jeshua, Patrick and Tevon were awesome upstairs. After Lydia left, the first floor was still super sold, so when the crowd at Trees was settled down, I swung Tevon down to help Gab with the service pushes. The team is all really in sync and they're all super flexible and ready to jump in wherever they're needed - it's a pleasure to work with them. - IP
FOH Staff Observations: I know I am super anti-cellphone use for staff, however I do think it is a bad look for Nick to be center of lobby bar, leaning against the bar looking at his cellphone. I did not say anything because I think my feedback will be ignored.-LB
Staff Meeting Agenda notes: bar meeting agenda to update the weekly task sheet. Got sidelined on Tuesday when Jenn was out but we need to make an accurate and new one to be printed, laminated, and put at the bar. Also emailed to staff. I cannot find this on the drive. I printed a Lobby bar sheet to add edits for updated printing. -LB (I looped Lauren in on where to find it on the Drive, so we can discuss further on Tuesday.) JH

As we slide into some slower days, let's make sure we are batching judiciously. We can definitely go back to having just two batches of Fire Walk With Me and Lemonade in the walk in (so long as bars are good for service). I'll be sure to include this note on this week's email, too, because bartenders don't need to stock either bar the way they had to during the holidays. This will also help us keep a better eye on how much product is actually in NPP. JH

I made an Old Fashioned keg, bloody mary, and a Dead Man's Chest because the bars were quite low. I also made a Princes of Maine but left out the citrus and syrups - it is labeled as such and the lid is taped down with a note.
Tomorrow should be good to start with the Brutalist and Bob Dylan specials with the product they have behind the bar, but they will definitely need to be made at some point tomorrow. The machines are full of Cherry Limeade, but there is no backup in the walkin so maybe make some more of that if the kids movies look busy. IP
R&D comp checks:
This is not an R&D comp check, however Jenn, Lauren and I discovered the Bounty Law that we had in the machines and the little bit of backup in the walkin had gone off - the date was far too old for circulation, so we dumped the product that was in use and batched anew. The total amount of dumped product was just shy of 16 quarts - I attempted to find the costing sheet for the Bounty Law to be able to make an Open Liquor spill tab for the checkout tonight, but I was unable to find the info for it in the drive - so tomorrow, if someone could show me where to find that, I can account for the dumped product approriately. This also relates to Jenn's note above re: batching levels. We'll make sure to keep a keener eye on anything delicate with product that degrades over time. - IP

Maintenance: The dishes from last night were a bit lackluster this morning. I checked the dishwasher for seeds. If it can be routine during busy nights to keep an eye on it. A glass had a full rim of tajin still. I reached out to Damian, the dish maintenance person to check in. He said that everything was smooth sailing for us when he was he January 13th. I will reach back out if the issue continues if the blades are clear.-LB
I was trying to drop a package off to projection office and my key would not work, so I think that lock needs to be checked out when the lock person is in for the MOD office.-LB
Glasswasher at Trees was running fine this evening, definitely kept our eyes on it. Spoke to Stewart and he has someone coming by to fix something on the kitchen's glasswasher, so he will make sure he takes a look at the Trees one, too. JH
