Manager Communication: Slow first round, that led into a fairly busy dinner round on both floors, and then a gradual slowdown. House of Gucci continues to be the most-sold showing in all rounds.
Had some technical issues (addressed in Maintenance) and two back-to-back guest issues during the last round (which Harry will elaborate on in his blog post).
BAR Staff Observations: Everyone was great tonight. Both floors had a bit of a dinner round crunch, and were able to get drinks out efficiently and did a lot of effective prestocking and restocking. Was able to break openers when closers came in, and kept all of them on through the second round.
Staff Meeting Agenda notes: Had two items mistakenly 86’d/in stock on Mobilebytes this evening. I happened to see that Saratoga Sparkling was still 86’d on Mobilebytes, even though it was back in stock as of yesterday.
Prep List: I was able to prep Dress the Part, Negroni, and an Old Fashioned keg before the dinner round.

A few general notes: we need to make sure bartenders are pulling product and restocking it abiding by the rules of first in, first out, particularly with juices and batched cocktails. Lobby had a bunch of excess juice stocked at open, with a very expired grapefruit juice all the way in the back.
Similarly, making sure bartenders are only using the large gallon containers for frozens and lemonade, as batched cocktails don’t fare as well in them for long periods of time.
And finally, making sure all of the frozen machines and bubblers are labeled and dated just like all of the other batched cocktails and syrups.
FOH Staff Observations: Servers and runners were really great about getting drinks into theaters at Trees during the dinner rush this evening.

I did field a lot of questions about where dirty glass racks go, where to find trays, etc., and think a general overview of how service bar runs during rushes would be helpful for non-bar FOH staff. Also a review of how to operate the glasswasher, as we had to rewash several racks throughout the night when the faucet was accidentally pushed to cold water instead of hot.

Along the same vein, while Lambrusco by the glass has been 86’d in Mobilebytes, Lambrusco by the bottle had not been which caused some momentary confusion on a ticket in the last round. I was able to change both of them, but something to look out for in the future.
86ed / counts on items: 86 Finback & Lambrusco.
Prep List: I was able to prep Dress the Part, Negroni, and an Old Fashioned keg before the dinner round.
Ginger Lime Slushie and Eyes of Ibad will need to be batched tomorrow. Both bars are stocked for open, though.
Lost & Found?: A guest who watched the first round showing of House of Gucci realized she may have left her pink, fuzzy scarf somewhere in the building, either before or after the screening. We were unable to locate it, and I advised her to reach out this weekend to see if it had turned up.
Maintenance: There has been an issue with hot water at both bars the last few days. The water at the sinks comes out at a trickle, even when turned all the way on, and takes a very long time to run warm, if at all.

The glasswasher at Trees has been slightly affected in that water temps have varied during wash cycles, but this issue can be tempered by refilling the washer with fresh water every several cycles.
The faucets in the prep area have had no similar issues with water temperature.
Additionally, the card reader at Trees was acting up during service and would not allow cards to be read via chip or swipe. Nick walked me through how to reset the reader, and the issue seemed to have been solved for the time being.
However, about thirty minutes later the card reader ceased to accept any card payments, and would cause the Mobilebytes app to freeze up if you tried to process a card payment. I connected the extra card reader at the other end of Trees, but it had the exact same problem. Checks at Trees were closed out on the pos in Theaters 1/2.
We had one couple who ended up having to wait five to seven minutes to close out their tab, and they were pretty grumbly at Dylan when he tried to explain the delay, but that was the only fallout.
