Manager Communication: Slower than usual for brunch and the early rounds today. Very easily handled by the staff on hand, and I was able to pull Dylan for liquor room organization and to show Natasha how to batch some drinks. Had some cleaning and organization done on the lowboys and then cut openers after we pulled brunch and had a nice gap in seatings - JM

Dinner round wasn’t too wild, bar had plenty of time between seatings to keep drinks coming out consistently. We did have two Secret Service agents accompany a guest in Theater 7 during the third round, but Floor Managers took the lead on that. As the show wasn’t very sold, I printed the agents two passes so they could be seated throughout the film. JH

BAR Staff Observations: Very nice to have Dylan in house today, he did a very nice job training Natasha and handling the batching and tasks. Ivan was reliable as always, and Natasha Perez is really coming along; rarely needs help multi tasking, a skill that seems to be helping her a ton from her service experience JM

Ryan and Ian held it down at Lobby Bar all night, and Ivan and Isi handled both guest-facing and service bar fairly well. There did seem to be a lack of communication with regards to stocking at Trees before the dinner rush, as several tickets in Isi had to head to the prep area to grab more Hibiscus Lime. Additionally, there was some confusion over where certain items were in the liquor room and walk in. However, nothing that impacted service. 

Ian was also very helpful with coming upstairs to help Isi during the rush for The Ring screening while Ivan restocked and cleaned the frozen machine. JH

Hiring/Training: Natasha Kundrat finished training today with a Trees Brunch. She did an excellent job, handling nearly every drink on service today which was not quite as busy as we are used to, but tested her multi tasking and speed a few times and she didn't miss a beat. Looking to be a strong hire JM

Staff Meeting Agenda notes: Hibiscus Lime mixing, not just pulling syrup. Had a Hibi at Trees with no lime JM

Taking the trash out of the walk in or liquor room if you’re doing a restock and you take the last of something. I had some time at the end of the night to do some organizing and restocking in the walk in, and there were four empty boxes left on various shelves. 

Additionally, I had mentioned some communication issues tonight during service, namely bar staff not knowing where to look for an item and then mistakenly thinking we are 86’d or have a count on an item when they don’t see it. I had time enough to go back and double check the liquor room and walk in to find the items, but maybe a refresher on how the walk in and liquor room are organized would be helpful for bar staff. JH

Prep List: Very healthy stocking and batches, may need a Pimm's keg tomorrow but not much else JM

Hibiscus Syrup needs to be made first thing, as we have been flying through it all weekend. Grapefruit Syrup and Demerara Syrup both need to be made. But we have back up of every drink batched in the walk in. JH
