Manager Communication: Slow & Steady opening round which built into a swell.
While brunch still seems to be gaining steam slow and steady, dinner was another matter altogether. We hit the ground running with nearly to fully sold out shows from midday through dinner into the late round. Bar crowds generated heavily before and after the dinner round and before the late round show due to a long flip and lots of guest volume. Drink rushes were well handled by the team, only needing manager support for a few periods of heavy guest facing bar balanced with the persistent drink rushes that the long Bond movie gives us. Make sure to stay on stocking happening throughout; it's tempting to recouperate a lot once things slow down, and absolutely give the team time to catch their breath, but without stocking happening in between each rush there will be things that you run out of. No issues with that tonight, though! A thrillingly busy shift.
BAR Staff Observations: Strong open from Ivan & Chelsea. They got brunch down.
Another really solid day for the bar team. Tevon and Gabrielle are a little less synced up at Trees lounge and need more guidance than Ian and Gabrielle, for example, did yesterday when it came to expo-ing tickets. Ian was a godsend today, working a very long swing shift to keep support on for Ryan downstairs with the high level of ticketing. Already spoke to Nick, but we will be adjusting the swing in time and adding a bartender to bridge the gap and give us three up and two down for the dinner round.
FOH Staff Observations: Proactive management needed to keep the team focused on glassware rotation, but overall the FOH staff seems to be adjusting to the volume. Drink rushes were solidly mapped out and I never saw trays dying in service stations or at the bar. Really liking the new amount of servers on support shifts, it keeps the flow consistent.
Hiring/Training: Zoe gave her two weeks, looking for a new bartender with a couple of interview this week
Staff Meeting Agenda notes: Instructions to servers for dead drinks. New stocking pars to expect. Staying ahead of glassware.
86ed / counts on items: 86'd Lambrusco
Prep List: There are kegs of Pimm's and Paloma that need to be charged and we will need to prep Paloma and Ginger Syrup Monday. Plenty of cocktail stock for tomorrow.
Ordering/Receiving/Shipping: We need Coffee Carafes and trays. Big Webstaurant order is in the works for Monday, talking to FOH about their needs to get it all in one go.
