Eliel/Jesse 9/30

Manager Communication:  Slow night with the dinner round Venom and Titane putting up decent numbers.  Titane had a good cocktail crowd. Tammy Faye's dinner round was okay.  Michelada's are moving pretty well.   Customer Comments: Moved a couple of seats around, and helped a few people find their tickets and show them the .con mistake.  Some of our patio regulars came back and marveled as I walked them through our new menu. BAR Staff Observations:  Julian's last day.  Cut Chelsea after the venom rush. Got Ian to batch in the meantime.  FOH Staff Observations:  Kaya had some trouble sending a ticket from the theater 1 Ipad for a theater 2 order which was held.  I asked her to send the order again. Gil addressed the printer issues.  Darius was overwhelmed during the 8:30 Dear Evan Hansen. Armando, Jeremy & I lent a hand. Special Events: The folks for the theater 5 bachelor party arrived early. Manager Communication: Slow night in the theaters tonight but we had some patio business and few people in the upstairs bar before the white mare event. We did get a few orders from the old cocktail menu from regulars out on the patio. I made a couple Aperol Spritz's no problem, but we aren't able to make the Singapore Sling anymore. I pointed out the new menu options though and they were very happy, I just don't think they looked.  BAR Staff Observations: Eliel took the day off. He will be working tomorrow with Jesse instead to finish his floor training. I will make some time next Wednesday for him to make up for the one on one time we lost today.  Ryan Wuestwald trained with Ian in the lobby. He did great, it is nice to have him back.  FOH Staff Observations: Nathaniel was doing a great job on his training shift downstairs, and was asking me a lot of great beverage questions while I was behind the bar. Manager Communication: Slow day overall, early and dinner rounds had decent sales mostly concentrated to Shang Chi. Evan Hansen seemed like a dud ticket wise all weekend. Bar crowds also pretty light, not a ton of drinking before and after. Patio business steady due to good weather.  Customer Comments:  Eliel told a customer not to smoke a cigarette directly on the patio. He said he shouldn't have to get up because he's already outside and Eliel explained it's the law so he stood up and moved. BAR Staff Observations:  Dylan's return is a success, very fast catch up to new policies and old ways. Bartenders that missed the meeting (Zoe and Isi) were working today and were walked through the new cocktails and practices and also avoiding tap to pay. Easy day. Spoke to Dylan about some unnecessary condiment ringing/messy MobileBytes ringing. FOH Staff Observations:  Someone rang three Madonna IPAs on a check that wasn't theirs in Th1. They had to be spilled. Not sure who...

Manager Communication: Steady opening and dinner rounds, slow final round. Very typical Sunday flow. Shang Chi was close to sold out, Green Knight also sold out due to the fact that we are apparently the only theater showing it. Other than that, pretty slow and steady. Got lots of cleaning done and then made cuts around 7:00 pm before the last round, easily handled by one at each bar. Customer Comments:  Eliel found a guests phone in the theater, they were very appreciative. Manager Communication:Very Easy Day.Theater ! was busy but nothing major. Some of the smaller  theaters filled  up most for the dinner round.We made cuts early for the Bar. BAR Staff Observations:My Bartenders did a good job today.Appreciate their work. Manager Communication:Slow night.busy in the second round. BAR Staff Observations:Good job from both Bars.Very slow but.Julian got Cut and Gabrielle as well. Manager Communication:Busy opening and a good round after 6 pm.Shang shi was the busiest show.late round slowed down.The holiday helped a lttle today. Customer Comments: Guest ordered food to go from lobby bar, when it came out Alex looked for him and did not see him, so left it behind the bar. Turns out he was seated by the bathroom. After an hour he came to check on the food and it had been waiting behind the bar. Rushed food out for him. He was upset, saying that no one came to look for him, Alex and Jess explained that someone did but it's easy to miss guests in that area. We rushed out hot food, he was ok by the time he left BAR Staff Observations:Ian did batching and syrups for drinks staying on the menu.Isi did a good job by herself.she needs a busy shift upstairs.Chelsea did a good opening and did a good job as wel 86ed / counts on items:Tecate,still water season. Jesse 9/14

Manager Communication: Theaters were slow for the opening round, steady for the dinner round and then slow again for the late round. Bars easily handled the drink pushes to the theaters, with the height being at 6:45 for the Music Driven screening.   BAR Staff Observations: Zoe handled a busy front facing bar after the documentary let out, with most of the 70 or so guests coming to the bar. Needed some support from management but otherwise very nice job. Ian balanced the patio and slow day downstairs no problem. Special Events? Beyond documentary was nice to have back, love the Music Driven events for the crowds they bring in. Manager Communication:Very slow night.one bartender at each bar all night.Nick had the time to give us (alex harry and eliel) a tour of the facilities.We should fix the sheet about the frozen machines being cleaned on Mondays. Hiring/Training:Dylan had his first shift back today.he came in to cover Zoe.He did a good job.glad to have him back. Sick Leave/ Call outs:Zoe called out,She had a fever so Nick told her to get a test and her rapid test is negative.she had a pcr test and we will get the result tomorrow.her next shift is on wednesday  but we will know before that. 86ed / counts on items:Tecate,and low on highlife.and Manhattan is out of stock. Manager Communication:Steady night,few incidents in the beginning.A guest was stinged by a wasp.MOD took care of it but we should check and see if there is no nest hidden. Jenna got written up for an allergy mistake.A guy passed by kelly just for the bathrooms and run out before we caught him. BAR Staff Observations:Gabrielle did a good job closing last night.like always. Manager Communication:steady sale for dinner.light Bar Business before and after dinner.Patio had 3 tables consistably .no issues with drinks rushes,service was very smooth. Customer Comments:2 guests at the door mentioned that they did not know the vaccin mandate.Jesse explained to them it started on the 17 of august.they claimed that they spoke to someone on the phone.He gave them a refund instead of credits. BAR Staff Observations:No issues. FOH Staff Observations:drinks were picked up on time. Hiring/Training:Ivan trailed behind hi res for a couple of hours.he did a good job.he is going to be on the schedule for training . Nick Friday September 10 Bar Blog

Manager Communication:   Pretty steady on the patio, and Eliel was solo downstairs, so he needed a lot of manager support, but service went well. The upstairs bar never got really busy, so Gabrielle and Julian managed the theater rushes just fine with just the two of them.  I have noticed lately that there is sometimes sugar on the floor around the sugar tote in the liquor room. We need to make sure we are always cleaning up after ourselves, as that would be a feast for roaches.  BAR Staff Observations: We were pretty short staffed tonight, but we were also pretty slow so it was fine. Everyone did a really good job.  Prep List: We will need some arbol tequila and mai tai at some point tomorrow.  Ordering/Receiving/Shipping: We are low on straws, and nu-foamacide Mobilebytes Issues: The ticket printers in Tree's lounge both jammed several times today. Gil is going to look into it.

Manager Communication: Busy day today, but mostly concentrated to the theaters. Drinking by theater crowds and guests trafficking the bar definitely down from previous days; Monday holiday functioning very much like a Sunday. BAR Staff Observations: Close was better last night, not perfect but better. Areas of opportunity; bubbler left off at HiRes (not sure why) and frozens not cleaned. Done tonight. Sick Leave/ Call outs: Alex called out. Staff Meeting Agenda notes: Drink machine procedures will be emailed out tomorrow 86ed / counts on items: Makers was not 86, had bottles above HiRes.  Prep List: Will need Negroni keg tomorrow Ordering/Receiving/Shipping: Baldor, Manhattan, Southern tomorrow. Union, Empire, Remarkable Wednesday. Maintenance: Left the right side of the walk in clear for porters to clean tomorrow. Also added to maintenance doc that we need the sheet metal re-attached to the floor in the walk in.

Manager Communication: Our busiest day since Black Widow opening weekend. Steady business to both bars before and after the daytime and dinner rounds, less so with the late rounds. Definitely a weekend level of drinking today with crowds going in for multiple rounds and sustaining our busiest drink rushes in a looooong time.  BAR Staff Observations: Both teams of bartenders were strong today and the flow of business and balance of handling service tickets and bar facing guests was good. Eliel did a lot of mid shift batching and I covered the bar during a rush so that he could keep us up on product.  Hiring/Training: Isi second training shift tomorrow, ad was posted today. Schedule looks good for the remainder of the month but looking to hire 1-2 more over the next few weeks.  Special Events? Manager Communication: Great, steady Thursday today with Shang Chi opening and selling out and Candyman bringing in decent numbers. Bar business for Shang Chi was great, especially with guests lingering in theaters for post-credits and then coming to the bar before and after. Patio also had a steady drive of business, all concentrated to the dinner round. Customer Comments: Several compliments about Eliel from some patio guests today BAR Staff Observations: Chelsea is definitely getting used to service bar, great work between her and Alex tonight. Eliel did an excellent job training Isi. Strong day all around. Hiring/Training: Isi had her first training shift today in lobby, plenty of slow time early to go over ticketing with Eliel and then some decent service bar to get her to see all of the drinks. Manager Communication: Mulholland Drive drove most of the business tonight, but we had some decent bar front business especially when the storm hit and folks didn't want to venture out. Outside of the leaks, which everyone is well aware of, no issues.  BAR Staff Observations: Gabrielle continues to improve, her opening today was really strong and she proactively set up a lot for the rest of the day. Hiring/Training: Isi begins training tomorrow, Courtney is interviewing for a bar position as well Special Events? First rep screening! Great turnout
